VEGETARIAN CRANBERRY MEATBALLS
These are wonderful vegetarian meatballs with a sweet and sour sauce. They're simple to make and they disappear very quickly. Make these for Christmas holiday parties. If you don't have veggie burger patties, you may use TVP, textured vegetable protein, that's available at most health food stores.

- Preheat oven to 350 degrees F (175 degrees C). Spray two cookie sheets with non-stick cooking spray.
- In a medium-size mixing bowl, combine eggs, cornflake crumbs, chili sauce, soy sauce, parsley flakes, dehydrated onion, vegetable burger, buttery round crackers, cream cheese, and walnuts. Shape into 72 1-inch meatballs. Arrange on prepared cookie sheets.
- Bake the meatballs at 350 degrees F (175 degrees C) for 20 to 25 minutes, or until the meatballs are cooked through.
- In a large saucepan, combine cranberry sauce, Russian dressing, brown sugar, and lemon juice. Cook, stirring frequently until the cranberry sauce is melted. Add the meatballs and heat through. Serve with appetizer toothpicks, if desired.

CRANBERRY SAUCE MEATBALLS

- Whisk together cranberry sauce, pepper jelly, lemon juice, and garlic salt in a Dutch oven or large pot over medium, whisking until mixture melts and is well blended, about 4 minutes. Add meatballs, stirring to coat in sauce. Cover and continuing cooking over medium until meatballs are thawed and sauce is beginning to bubble, 6 to 8 minutes.
- Uncover and increase heat to medium-high. Cook, stirring often, until meatballs are heated through and sauce is thickened giving the meatballs a glazed coating, about 6 minutes. Spoon meatballs on a platter; spoon additional sauce from pot over meatballs, and sprinkle evenly with jalapeño and parsley. Serve hot.

- Mix all ingredients for the meatballs and set aside.
- In a large pot or dutch oven, bring ingredients for sauce #1 to a slow boil.
- With wet hands, form a golf ball size meatball and drop into simmering sauce. Once all your meatballs are in the pot, DO NOT STIR. In fact, step away from the pot for at least 10-15 minutes. This is the trick to ensure that your meatballs don't transform into a MEAT sauce.
- Give the pot a good shake once you see the meatballs look lightly cooked. Cover and simmer for one hour.
- For the second hour, add sauce #2 ingredients into the pot. Continue simmering for another 60 minutes covered. Can be made ahead and frozen or served hot.
CRANBERRY SWEET AND SOUR SAUCE
I made this sauce over meatballs at my daughter's wedding reception. It was a hit. Nice change from your regular sweet and sour. The cranberries give it just enough tartness. This recipe makes a lot so you may want to cut it down for smaller portions. It was enough for 280 1" meatballs.

- In a medium bowl beat the egg. Add the beef, onion, bread crumbs, salt and pepper and use your hands to combine thoroughly (or use a spoon; it will take longer, but if you are not a hands-in-the-ground-beef person you can do that). Form the mixture into 1-inch meatballs.
- Heat a large skillet over medium heat and place the meatballs in the pan, making sure not to crowd them; you may need to do this in batches. If your pan isn't large enough. Cook the meatballs for 1 to 2 minutes, until the bottoms are browned, then flip them and cook for another 1 to 2 minutes until the other side is brown. The meatballs should be browned on at least two sides, but not cooked through. Remove meatballs from the skillet and drain any excess oil from the skillet.
- In the same skillet, add the ketchup, cranberry sauce, tomato paste, vinegar, soy sauce, water and Worcestershire sauce. Heat the sauce over medium heat, stirring, until smooth, 1 to 2 minutes. Return the meatballs to the pan, then cover, and simmer for 10 to 12 minutes, adjusting the heat so that the sauce stays at a gentle simmer, until the meatballs are cooked through and the sauce has thickened. Serve hot, sprinkled with parsley if desired.

- Remove the crust from the bread and place it in large bowl and cover with the half cup of milk. Turn the bread several times so all of the milk gets absorbed. Let sit at room temperature while you prepare the sauce.
- In a medium Dutch oven (three quart size), place chili sauce, Pacific cranberry sauce, balsamic vinegar and brown sugar. In a small bowl mix pineapple juice and corn starch and add to mixture. Heat and stir until the ingredients have blended and the sauce is thick. Remove from heat, cover and set aside.
- Once the bread has soaked for the full 30 minutes, wring out the bread with your hands, squeezing out as much of the milk as possible. What remains should be a good full cup of wet bread. With your hands or a spoon, break up and mix the wet bread until it is really mashed. Add eggs and with a fork, mix well. Add Worcestershire sauce, chili sauce, five-spice powder, salt and pepper and mix thoroughly again until very well blended. This step can be done in a stand mixer however the meat must be mixed by hand.
- Add ground turkey, Italian sausage, onion, garlic and carrots and gently work the mixture with your hands until mixed. Try not to over mix.
