CRANBERRY PECAN SCONES



Cranberry Pecan Scones image

Based on the traditional Scottish biscuits, these scones are packed with cranberries and crunchy pecans. You may add food coloring to the glaze if desired.

¾ cup milk
1 teaspoon white vinegar
2 cups all-purpose flour
¼ cup white sugar
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon grated nutmeg
½ cup butter, chilled and cut into small pieces
1 cup dried cranberries
½ cup chopped pecans
1 egg white, beaten
1 ½ cups confectioners' sugar
2 tablespoons milk

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Combine 3/4 cup milk and vinegar in a bowl; let stand until milk is curdled, about 5 minutes.
  • Combine flour, sugar, baking powder, baking soda, salt, and nutmeg in a large bowl; cut in butter with a pastry blender. Smooth remaining butter clumps with hands; stir in milk mixture, cranberries, and pecans. Knead until dough comes together in a ball.
  • Place dough onto a floured work surface. Roll out with a rolling pin to 3/4-inch thickness. Cut into long, 2-inch wide strips with a sharp knife; cut strips into triangles. Transfer to the baking sheet. Brush tops with egg white.
  • Bake in the preheated oven until tops are golden brown, about 15 minutes.
  • Combine confectioners' sugar and 2 tablespoons milk in a small bowl; mix until combined. Drizzle over scones.

2 cups all-purpose flour
¼ cup packed brown sugar
1 tablespoon baking powder
¼ teaspoon ground nutmeg
¼ teaspoon salt
¼ cup butter, chilled and diced
1 cup fresh cranberries, roughly chopped
⅓ cup white sugar
1 grated zest of one orange
½ cup chopped walnuts
¾ cup half-and-half cream
1 egg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, stir together flour, brown sugar, baking powder, nutmeg and salt. Cut in butter until mixture resembles coarse crumbs.
  • In a separate bowl, toss cranberries with sugar; add to flour mixture along with orange peel and nuts. Mix lightly.
  • In another bowl, beat together cream and egg; slowly pour into dry ingredients, mixing with rubber scraper until dough forms. Knead dough 4 or 5 times, being careful not to over handle. Divide dough in half. Turn out onto lightly floured surface. Shape each half into a 6 inch circle. Cut each circle into 6 wedges. Place scones on lightly greased baking sheets.
  • Bake in preheated oven until golden brown, about 20 minutes.

2 1/2 cups unbleached all-purpose flour (625mls)
1/2 cup sugar (125 mls)
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup cold unsalted butter, cubes (125grams)
3/4 cup buttermilk (180mls)
1/2 cup dried cranberries
2 tablespoons buttermilk
1 tablespoon sugar

Steps:

  • Preheat oven to 400°F / 200°C . Oven rack in middle position.
  • Line a cookie sheet with parchment or baking paper.
  • Using a food processor- combine the flour, sugar, baking powder and salt. Add the butter and pulse until all of the butter pieces are pea sized. Add the buttermilk and pulse just long enough to moisten the flour.
  • Transfer the scone mixture to a bowl and fold in the cranberries. Do not overmix.
  • On a floured surface, flatten the dough with your hands or roll out to about 3/4 inch (2cm) thick. Using a 2 inch (5cm) cookie cutter, cut the dough into rounds.
  • Arrange the scones on the baking sheet, leaving space between each one.
  • Glaze- brush the scones with buttermilk and sprinkle with sugar.
  • Bake until golden brown, 15 - 20 minuts. Let cool on a rack until ready to serve.
  • You can freeze the scones.

1/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 cup dried cranberries
1 cup heavy whipping cream

Steps:

  • Preheat over to 425 degrees.
  • Mix dry ingredients together. Stir in cranberries.
  • Add whipping cream, stirring just until soft dough forms. If dough is too wet, add extra flour, one tablespoon at a time.
  • On a floured surface, gently knead dough five or six times.
  • Place on greased cookie sheet and pat into 8-inch circle. Score into eight wedges, gently separating. Sprinkle top with sugar.
  • Bake for 15-20 minutes, or until golden brown. Serve warm.

2 tsp (10 mL) baking powder

3/4 cup (180 mL) buttermilk
1/2 cup (125 mL) dried cranberries
Glaze
2 Tbsp (30 mL) bettermilk
1 Tbsp (15 mL) sugar

Steps:

  • 1. With the rack in the middle position, preheat the oven to 400F (200C). Line a cookie sheet with parchment paper. 2. SCONES: in a food processor, combine the flour, sugar, baking powder and salt. Add the butter and pulse until the butter pieces are pea-sized. Add the buttermilk and pulse just long enough to moisten the flour. Transfer to a bowl and fold in the cranberries. Do not overmix. 3. On a floured surface, flatten the dough with your hands or roll out to about 3/4 inch (2 cm) thick. Using a 2-inch (5 cm) round cookie cutter, cut the dough into rounds. 250g self raising flour
Half a teaspoon baking powder
Half a teaspoon cinnamon powder
55g butter
25g caster sugar
75g dried cranberries
The zest of 1 orange
150ml milk

Steps:

  • Put the oven on 180c. Rub the butter into the flour, baking powder and cinnamon until you have breadcrumb consistency.
  • Add the sugar, cranberries and orange zest and mix.
  • Add the milk, a little at a time, until you have a soft dough.
  • Roll out on a floured work surface to approximately 1" thick. Use a cookie cutter to cut out 12 scones. Glaze with a little milk and bake in the hot oven for 10 - 12 minutes.
