I came up with this recipe one year when looking for a cookie that had a little red and green in it. The combination of cranberries and pistachios is delicious.

1/2 cup butter, softened
1/2 cup canola oil
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup crisp rice cereal
1/2 cup old-fashioned oats
1/2 cup dried cranberries
1/2 cup chopped pistachios

Steps:

  • In a large bowl, cream the butter, oil and sugars until light and fluffy. Beat in egg and vanilla. Combine the flour, salt, baking powder and baking soda; gradually add to the creamed mixture and mix well. Stir in the cereal, oats, cranberries and pistachios., Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until lightly browned. Remove to wire racks to cool.

175g butter , softened
85g golden caster sugar
½ tsp vanilla extract
225g plain flour
75g pistachios
75g dried cranberries

Steps:

  • Mix the butter, sugar and vanilla extract with a wooden spoon. stir in the flour, then tip in the pistachios and cranberries - you might need to get your hands in at this stage to bring the mix together as a dough. Halve the dough and shape each half into a log about 5cm across. Wrap in cling film, then chill for 1 hr or freeze for up to 3 months.
  • Heat oven to 180C/160C fan/gas 4. slice the logs into 1cm-thick rounds, place on a baking tray lined with baking parchment and bake for 12-15 mins. Cool completely on the tray.

1/4 cup sugar
1/4 cup packed brown sugar
1 large egg yolk
1 teaspoon grated orange zest
1 cup all-purpose flour
1-1/4 cups dried cranberries, divided
3/4 cup plus 2 tablespoons finely chopped pistachios, divided
1/4 cup heavy whipping cream
2/3 cup white baking chips

Steps:

  • Preheat oven to 350°. Cream butter and sugars until light and fluffy. Beat in egg yolk and orange zest. Gradually beat in flour. Stir in 1 cup cranberries and 3/4 cup pistachios., Shape dough into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Press a deep indentation in center of each with the end of a wooden spoon handle. Bake until edges are light brown, 9-11 minutes. Remove from pans to wire racks to cool completely., Meanwhile, in a small saucepan, bring cream just to a boil. Pour over baking chips; stir with a whisk until smooth. Cool to room temperature, stirring occasionally. Refrigerate, covered, until thickened., Spoon cream mixture onto cookies; sprinkle with remaining pistachios and cranberries. Refrigerate leftovers., Freeze option: Freeze undecorated cookies in freezer containers. To use, thaw cookies in covered containers; decorate as directed.

My mom used to make these and fill them with grape or strawberry jelly. Now, I make them for the Christmas cookie trays with a red or green maraschino cherry or a Hershey's kiss pressed into the thumbprint.

3/4 cup sugar
1 teaspoon salt
3/4 cup margarine, softened
2 egg yolks
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2 cups flour
2 egg whites
1 -2 cup chopped walnuts
any flavor jam
maraschino cherry
Hershey chocolate kiss

Steps:

  • Cream together margarine and sugar.
  • Add salt, lightly beaten egg yolks, vanilla, and almond extract, and mix thoroughly.
  • Gradually add flour and stir until well blended.
  • Roll dough into one inch balls.
  • Beat egg whites until frothy.
  • Dip dough balls into egg whites and roll in chopped nuts.
  • Place on cookie sheet about two inches apart and press a deep thrumbprint into each center.
  • Bake at 350 degrees 10-12 minutes.
  • While cookies are still warm, fill thumbprints with jelly or press a maraschino cherry or Hershey's kiss into the thumbprint.

1/2 cup icing sugar
1 egg, separated
1 teaspoon vanilla extract
1 cup all-purpose flour
1 pinch salt
3/4 cup shelled pistachios, finely chopped
1/3 cup seedless raspberry jam (or other jam)

Steps:

  • In a medium bowl, beat butter, sugar, egg yolk and vanilla until pale and fluffy.
  • Add flour and salt and mix until combined.
  • Form into ball, wrap in plastic wrap and chill in fridge 30 minutes.
  • Preheat oven to 350 degrees.
  • Divide dough into 24 pieces and roll between palms to make small, round balls.
  • Whisk egg white lightly until foamy.
  • Dip balls in egg white, roll in pistachios and place on baking sheet.
  • Make indentation in centre of each cookie with your thumb.
  • Bake 5 minutes.
  • Remove from oven and re-indent centre.
  • Return to oven and bake another 8 minutes until just slightly browned.
  • Remove from oven and while still warm, add 1/2 teaspoon jam to centre of each cookie.
  • Cool on wire rack.
  • Note: 1 1/2 cup in-shell pistachios equals 3/4 cup shelled.

¾ cup granulated sugar
2½ cups all-purpose flour
1 cup unsalted butter
¾ cup dried cranberries
½ tsp salt
1½ tsp almond extract
1½ tsp vanilla extract
1 zest of orange
1½ tbsp freshly squeezed orange juice
1½ cups white chocolate chips
6 tsp heavy cream (half and half or whole milk)
1 cup powdered sugar
1 tbsp water

Steps:

  • Chop or pulse dried cranberries to break into smaller pieces.
  • Whisk flour and sugar.
  • Cut butter into small pieces. Use a pastry cutter/fork/food processor to blend into small crumbs with flour mixture.
  • Stir in dried cranberries, salt, vanilla extract, almond extract, orange zest, and orange juice.
  • Mix until a large dough ball forms. I used a food processor but a stand mixer with a paddle attachment works, too or simply form the dough with your hands.
  • Wrap in plastic wrap and chill at least 2 hours or overnight.
  • Preheat oven to 325°F. Line a baking sheet with parchment paper.
  • Scoop ¾ cookie dough and roll into a smooth ball. Place dough 1½ inches apart.
  • Press thumb into center of dough ball.
  • Bake in oven for 14-16 minutes.
  • Press thumbprint or ½ tsp into center of baked dough again.
  • Melt chocolate in a double boiler on low heat with cream or in a microwave on power level 4 until melted. TIP: Avoid using a spatula to stir mixture as the moisture from it can seize it. Use a metal spoon to stir.
  • Fill the center of each cookie with white chocolate.
  • Drizzle the tops of the cookies with white chocolate using 2 spoons dipped in the chocolate or simply whisk together powdered sugar and water until smooth then drizzle over the top of each cookie.

3/4 cup (170g) unsalted butter, softened to room temperature
3/4 cup (150g) packed light or dark brown sugar
1/4 cup (50g) granulated sugar
1 large egg, at room temperature*
2 teaspoons pure vanilla extract
2 cups (250g) all-purpose flour (spoon & leveled)
2 teaspoons cornstarch (aka cornflour)
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup (135g) white chocolate morsels or chopped white chocolate
3/4 cup (75g) dried cranberries
1/2 cup (62g) salted pistachios, shells removed

Steps:

  • In a large bowl using a hand-held mixer or stand mixer fitted with a paddle attachment, beat the butter for 1 minute on medium speed in a large bowl until completely smooth and creamy. Add the brown sugar and granulated sugar and mix on medium high speed until fluffy and light in color. Beat in egg and vanilla on high speed. Scrape down the sides and bottom of the bowl as needed.
  • In a separate bowl, whisk the flour, cornstarch, baking soda and salt together until combined. On low speed, slowly mix into the wet ingredients until combined. The cookie dough will be quite thick. Add the white chocolate chips, dried cranberries, and pistachios, mix on low for about 5-10 seconds until evenly disbursed. Cover dough tightly with aluminum foil or plastic wrap and chill in the refrigerator for at least 2 hours and up to 2 days. Chilling is mandatory for this cookie dough.
  • Remove cookie dough from the refrigerator and allow to sit at room temperature for 10 minutes- if the cookie dough chilled longer than 2 hours, let it sit at room temperature for about 30 minutes. This makes the cookie dough easier to scoop and roll. Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats. Set aside.
  • Once chilled, the dough will be slightly crumbly, but will come together if you work the dough with your hands as you roll into individual balls. Scoop and roll balls of dough, about 1 Tablespoon of dough each, into balls. Bake for 8-10 minutes, until barely golden brown around the edges. They will look extremely soft when you remove them from the oven. Allow to cool for 5 minutes on the cookie sheet. If the cookies are too puffy, try gently pressing down on them with the back of a spoon. They will slightly deflate as you let them cool. Transfer to cooling rack to cool completely.
