CRANBERRY PINEAPPLE GELATIN MOLD
This is one of my mother's favorites, and sure to be a hit on anyone's table where they love cranberries and pineapple!

Steps:
- 1. lightly oil a 4 cup gelatin mold or a 9 inch square pan with vegetable oil or cooking spray.
- 2. In a medium glass mixing bowl, combine the raspberry gelatin and unflavored gelatin. Add 1 cup boiling water and stir with a metal spoon continuously for 2 minutes, until gelatin is completely dissolved.
- 3. Stir in 1/2 cup cold water. Add the pineapple and the juice, cranberry sauce and walnuts. Stir with metal spoon until all ingredients are completely incorporated. Pour the mixture into the prepared mold, cover with plastic wrap and refrigerate until firm.
- 4. About 1 hour before serving, invert the mold onto a serving platter with a bed of curly leaf lettuce and allow to sit at room temperature. The salad in the mold will release itself and come clean from the mold.
- 5. Topping: Combine cream cheese, powdered sugar, whipped cream and walnuts in a bowl. Spoon the mixture into the center of the mold and serve!
CRANBERRY JELLO SALAD RECIPE
This Cranberry Jello Salad is delicious and festive looking! Raspberry jello, cranberry sauce, apples and pineapple make for a delicious and easy side dish to your Thanksgiving or Christmas dinner!

Steps:
- Open can of pineapple and drain pineapple, reserving juice. Pour juice into a 4 cup liquid measuring dish.
- Remove 1 Tablespoon of the crushed pineapple and set aside for garnish {if desired}
- Add enough cold water to pineapple juice until it measure 3 cups; pour int a large saucepan.
- Bring juice to a boil then remove from heat immediately.
- Add gelatin. Whisk mixture at least 2 minutes until completely dissolved.
- Add cranberry sauce and stir. {Gelatin mixture should be thick}.
- Pour mixture into a large bowl. Refrigerate 15 - 30 minutes or until slightly thickened.
- Remove from fridge and stir in pineapple, apples and walnuts; stir gently.
- Pour into a medium serving bowl. & refrigerate for 4 hours or until completely firm.
- Top with reserved crushed pineapple just before serving.
- Store leftover gelatin in refrigerator.

CRANBERRY GELATIN MOLD

- Prepare cranberry gelatin according to directions. Pour into a 9x13 inch dish. Stir in cranberries. Refrigerate for at least 4 hours or until set.
- Prepare lime gelatin according to directions. Allow to cool slightly, and then blend in cream cheese. Mix in pineapple. Slowly layer over cranberry gelatin. Allow to set for at least 4 hours.
- Just before serving, spread on whipped topping and sprinkle with chopped walnuts.

Steps:
- Drain and reserve syrup from pineapple, add water to equal 1 cup.
- In a saucepan over medium heat, bring the pineapple juice to a boil, add gelatin and stir until dissolved. Remove from heat, add cranberry sauce, orange peel, orange juice and lemon juice. Blend together and cool until slightly thickened.
- Stir in pineapple and celery, turn into mold or 8 inch square pan. Chill until firm.

- Heat water and sugar to boiling in 2-quart saucepan, stirring occasionally; boil 1 minute. Stir in cranberries. Heat to boiling; boil 5 minutes, stirring occasionally. Stir in gelatin until dissolved. Stir in pineapple, celery and walnuts.

- Pour jello packages into 9X11 casserole dish (or large bundt pan) and add boiling water. Stir until jello is dissolved. (You can pinch the liquid and if you feel any grains between your fingers keep stirring.)

- Spray a 6-cup gelatin mold or a 9-inch square pan with cooking spray. This recipe makes approximately 5 cups of gelatin, so you could also use a 4 cup mold and have some leftover to put in a separate container.
