NANTUCKET CRANBERRY PIE

- *Adapted from a recipe by Laurie Colwin* Preheat oven to 350 degrees.
- Generously butter a cake pan or pie pan. Add cranberries to the bottom of the pan. Sprinkle on chopped pecans, then sprinkle on 2/3 cup sugar.
- In a mixing bowl, combine flour, 1 cup sugar, melted butter, eggs, almond extract, and salt. Stir gently to combine.
- Pour batter slowly over the top in large "ribbons" in order to evenly cover the surface. Spread gently if necessary.
- Bake for 45 to 50 minutes. 5 minutes before removing from oven, sprinkle surface with 1 tablespoon sugar for a little extra crunch.
- Cut into wedges and serve with ice cream or freshly whipped cream.
LEFTOVER CRANBERRY AND CHERRY COBBLER PIE

- Preheat the oven to 375 degrees F.
- Mix together the cherry pie filling and cranberry sauce in a bowl. Transfer to a 9-inch pie plate.
- Mix together the flour, granulated sugar, baking powder and salt in a bowl. Cut in the butter until it resembles tiny pebbles, about 1 1/2 minutes. Mix in the buttermilk until it just comes together (it will be lumpy).
- Dollop 6 to 8 mounds of roughly 2 1/2-inch dough balls around the outside of the pie plate. Sprinkle the coarse sugar over the top.
- Bake until the biscuits are golden, 30 to 35 minutes. Cool for 10 minutes before serving.

- Preheat oven to 375°. On a lightly floured surface, roll pastry dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim pastry to 1/2 in. beyond rim of plate; flute edge., Spread cranberries evenly into crust; sprinkle with brown sugar and walnuts. In a bowl, beat egg on high speed until thick and pale yellow, about 5 minutes. Gradually beat in sugar. Beat in flour and melted butter (mixture will be thick). Spoon over cranberries, spreading evenly., Bake on a lower oven rack until crust is golden brown, 40-45 minutes. Cover pie loosely with foil during the last 10-15 minutes if needed to prevent overbrowning. Remove foil. Cool on a wire rack. Serve warm with ice cream.

- Combine cranberries, walnuts and 1/2 c sugar. Spread evenly into a 10" pie plate or springform pan.
- Combine remaining sugar with remaining ingredients; beat until smooth. Pour over cranberries and walnuts in pie plate.
- Bake in preheated 350F oven for 40 minutes.

- Preheat the oven to 350F. Oil or lightly grease a 9-inch pie dish (not necessary if you use a nonstick pie dish).
- Chop the cranberries (pulsing them in a food processor makes this easy). Transfer the chopped cranberries, walnuts, and cane sugar to the pie dish.
- In a mixing bowl, whisk together the flour, baking powder, salt, and cane sugar. In a separate bowl, combine the milk and vinegar and allow them to sit for a couple minutes. Add the vegan butter and almond extract. Stir these wet ingredients together.
- Pour the wet ingredients into the dry ingredients. Mix with a spatula until you have a smooth batter (tiny lumps are OK, but no big lumps or streaks of flour).
