Number Of Ingredients 14

2-3/4 cups all-purpose flour
2/3 cup sugar
2/3 cup packed brown sugar
3-1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 large egg, room temperature
1 cup 2% milk
1/2 cup orange juice
3 tablespoons canola oil
2 to 3 teaspoons grated orange zest
2 cups coarsely chopped fresh or frozen cranberries
1 large apple, peeled and chopped

Steps:

  • In a large bowl, combine the flour, sugars, baking powder, salt, cinnamon and nutmeg. Whisk the egg, milk, orange juice, oil and orange zest; stir into dry ingredients just until blended. Fold in the cranberries and apple., Pour into 2 greased 8x4-in. loaf pans. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Freeze option: Securely wrap cooled loaves in foil and freeze. To use, thaw at room temperature.

2 cups flour
¾ cup sugar
1 ½ teaspoons baking powder
¾ teaspoon salt
½ teaspoon baking soda
¼ cup butter, cut into small chunks
¾ cup orange juice
1 tablespoon grated orange zest
1 egg, beaten
1 cup chopped cranberries
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 8 1/2x4 1/2-inch loaf pan.
  • Combine flour, sugar, baking powder, salt, and baking soda in a bowl. Stir butter into flour mixture until combined. Add orange juice, orange zest, and egg; mix well. Fold in cranberries and walnuts. Spoon batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 75 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

This is a recipe my Mom gave me, that my Gram used to always make, when she was a kid...This was my first time making it. I loved that it wasn't real sweet, and is best served toasted with butter. I didn't add nuts to mine, only because I was fresh out. You can make a glaze, as I did with one loaf, This bread would be great...

Number Of Ingredients 12

2 c flour + 1/2 tbsp for cranberries, unless using dried
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 c sugar
1 egg ~ room temp
2 Tbsp melted, butter
1/2 c chopped nuts, ~ optional, i didn't use
1/2 c + 1 tablespoon - orange juice
1/3 - 1/4 c orange zest - to your liking
2 Tbsp warm water
1 c whole cranberries ( mine were froze ) i coated with flour ~ or can use dried

Steps:

  • 1. Preheat oven to 350 degree F. I used 3 mini loaf pans or can use a 9 x 5 loaf pan. Spray with non stick cooking spray.
  • 2. In a large bowl, mix the dry ingredients. Add all other ingredients and stir only until all dry ingredients are blended well. I added my cranberries now too, you can always wait and fold them and nuts in last.
  • 3. Spoon batter into prepared pan or pans, evenly. Batter will be thick. Bake in 9 x 13 for 50 - 55 minutes or mini pans for 30 - 35 minutes or until pick comes out clean.
  • 4. When done, place on cooling rack for a few minutes, then if you like remove from pan and finish cooling.

6 to 6-1/2 cups all-purpose flour
1 cup old-fashioned oats
1/2 cup whole wheat flour
1/3 cup packed brown sugar
2 teaspoons salt
1 package (1/4 ounce) active dry yeast
2-1/2 cups water
2 tablespoons butter
1-1/4 cups dried cranberries or cherries
3/4 cup chopped walnuts, toasted

Steps:

  • In a large bowl, combine 3 cups all-purpose flour, oats, whole wheat flour, brown sugar, salt and yeast. In a small saucepan, heat water and butter to 120°-130°. Add to dry ingredients; beat just until moistened. Stir in the cranberries, walnuts and enough remaining all-purpose flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down; divide in half. Shape into loaves; place in two greased 9x5-in. loaf pans. Cover and let rise until doubled, about 45 minutes. Bake at 350° for 45-50 minutes or until golden brown. Remove from pans to wire racks to cool. To serve, cut into thick slices and toast.
