CRANBERRY BISCUITS
I like the texture and nutrition of potato rolls and the taste of orange-cranberry bread, so I combined them in these yummy breakfast biscuits. Dotted with dried cranberries and drizzled with a sweet glaze, these tender treats are a family favorite. -Debra Fulenwider, Colfax, California

Steps:
- Adjust oven rack to middle position and preheat oven to 400°F. Line two baking sheets with parchment paper. In a small bowl, rub together orange zest and sugar until fragrant; set aside.
- In a large bowl, whisk together flour, baking powder, and salt until combined. Stir in sugar and cranberries.
- Add heavy cream and vanilla extract and stir until combined (I find this to be easiest using my hands.)
- On a lightly floured surface, pat dough down into 3/4-inch thick circle. Use a 1-inch biscuit cutter to cut out circles. Place circles on baking sheets. Brush each biscuit with melted butter. Bake until golden on top and just cooked through, about 12 minutes. Let cool 5 minutes then transfer to a wire rack to finish cooling.

- Pre-heat the oven to 425°F and arrange a shelf slightly below the center of the oven. Line a buttered 8-inch square cake pan with parchment paper or a silicone liner.
- Combine the self-rising flour and sugar in a large mixing bowl. Grate the butter into the flour and stir it in to coat evenly. Stir in the chopped cranberries, zest of 1 orange and pecans. Gently stir in the buttermilk. The dough should be quite wet.
- Spread the all-purpose (not self-rising) flour out on a small cookie sheet. With a spoon, scoop evenly sized balls of dough into the flour, making sure they don’t touch each other. With floured hands, coat each dough ball with flour and toss them gently from hand to hand to shake off any excess flour. Place each floured dough ball into the prepared pan, right up next to the other. This will help the biscuits rise up, rather than spreading out. You might need to do the above in batches.
