2 tsp cornstarch
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup salted butter (, softened)
1 cup packed light-brown sugar
1/2 cup granulated sugar
2 tsp orange zest

1 tsp orange extract*
1 tsp vanilla extract
1 1/2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 375 degrees. In a mixing bowl, whisk together flour, cornstarch, baking powder, baking soda and salt. In the bowl of an electric stand mixer fitted with paddle attachment, whip together butter, light-brown sugar, granulated sugar and orange zest on medium-high speed until pale and fluffy about 4 minutes.
  • Mix in egg and egg yolk. Stir in orange extract and vanilla extract. With mixer set on low speed, slowly add in dry ingredients and mix just until combine. Mix in chocolate chips and cranberries (if you want them to look like those pictured, I set aside some of the chocolate chips and cranberries to gently press into the top of the cookie dough balls before baking).
  • Scoop dough out 2 Tbsp at a time and gently roll into balls, then place onto Silpat lined cookie sheets spacing them 2-inches apart. Bake in preheated oven about 10 - 11 minutes. Allow to cool on cookie sheet two minutes before transferring to a wire rack to cool. Store in an airtight container.

CRANBERRY ORANGE COOKIES

Cranberry Orange Cookies image

Cranberry Orange Cookies are soft, chewy and packed with orange flavor and fresh cranberries. The perfect cookie recipe for fall!

Provided by Jessica & Nellie

Categories     Cookies

Number Of Ingredients 14

1 cup sugar
½ cup butter (softened to room temperature)
1 small box (3.4 oz vanilla pudding mix)
1 egg
1 tsp vanilla
1 tsp orange extract
⅓ cup sour cream (or plain/vanilla Greek yogurt)
½ tsp salt
½ tsp baking soda
2 cups flour
1-2 tsp orange zest (I just use the zest from one large orange)
2 cups fresh cranberries (chopped)
¼ cup orange juice
2-4 Tbsp sugar

Steps:

  • Preheat oven to 375°.
  • Chop up the cranberries in small pieces and place in a bowl. If you don't want to sweeten them, you can add them to the batter just like that. If you want to sweeten them a bit, add the orange juice and 2-4 Tbsp sugar to the chopped cranberries and mix. Set them aside while preparing the cookie dough.
  • Cream together sugar and butter for 2-3 minutes. Add the pudding mix and beat the mixture for 1 more minute.
  • Add the egg, vanilla and orange extract and mix for 2 more minutes. Add the sour cream and mix just until combined.
  • In a separate bowl, add the salt and baking soda to the flour and mix to combine. Add the dry mixture to the butter mixture and mix until smooth.
  • Stir in the cranberries and orange zest with a wooden spoon.
  • Use a cookie scoop to scoop out tablespoonfuls of the dough and place them about 2 inches apart on a prepared cookie sheet. Bake for 10 minutes. Let the cookies cool on the pan for about 5 minutes before transferring to a wire rack to cool completely.

ORANGE CRANBERRY CHOCOLATE CHUNK COOKIES (GLUTEN-FREE)

Orange Cranberry Chocolate Chunk Cookies (Gluten-Free) image

These orange cranberry cookies have plenty of chocolate in every bite. They're a perfect gluten-free holiday cookie!

Provided by Sweets And Thank You

Categories     Cookies

Time 1h10m

Number Of Ingredients 13

1 cup sugar
2-3 tsp. fresh orange zest (from 1 orange)
1/2 cup brown sugar
1 cup (2 sticks, 8 oz.) softened butter
2 eggs, ideally room temperature
2 tsp. vanilla extract
2 1/2 cups (300 g.) gluten-free measure-for-measure flour, scooped and leveled or weighed (We recommend King Arthur brand)
1 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1 cup semi-sweet or dark chocolate chunks (or chocolate chips)
1/2 cup semi-sweet or dark chocolate chips (or chocolate chunks)
1 cup dried cranberries

Steps:

  • Add the sugar and orange zest to your mixer (or a large bowl). Rub the zest into the sugar with clean/dry fingers to infuse the sugar with the orange essential oils. The sugar should take on a peachy orange color and the orange should be very fragrant.
  • Next, add the brown sugar and softened butter to the orange zest & sugar. Beat the mixture about 2 minutes, until creamy and slightly lighter in color.
  • beating to incorporate between each addition.
  • and beat to combine.
  • Add baking soda, baking powder, and salt to the mixer. Add about half of the flour (adding it a bit at a time helps prevent spills). Mix about 20 seconds or so until it's mostly incorporated and add the rest of the flour. Mix until just almost combined.
  • Scrape down the edges of the bowl again as needed and add chocolate chunks, chocolate chips, and dried cranberries. Stir to combine. (The dough will be thick and sticky at this point)
  • Chill the dough at least 2 hours (up to 24 hours) before baking. This will allow the flour to hydrate properly
  • When you're ready to bake, preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper (You'll alternate between the two sheets to allow the baking sheet to cool down between batches)
  • using a medium cookie scoop (1.5″ balls) and place 6-8 cookie dough balls on one of the prepared baking sheets. (Refrigerate the rest of the dough between batches)
  • (mine needed 9.5 min) or until the edges are set and golden and the centers of the cookies look just slightly underdone. (They'll continue cooking as they cool on the baking sheet).
  • to continue cooling and setting.
  • , alternating between the two cookie sheets so you're not putting cold dough on hot baking sheets.

  • Sift together the all-purpose flour, baking soda, and baking powder in a separate mixing bowl. Next, add the sifted dry ingredients to the mixer with wet ingredients. Mix until a thick dough forms. The dough should be slightly sticky, but not wet. If the dough is a bit too dry add in 1 more Tbsp of oat milk.
  • Once the orange cookie dough has formed, gently mix in the dried cranberries and chocolate chunks with a spatula. Cover the bowl of dough and add to the fridge for 30 minutes- 1 hour.
  • Remove the dough from the fridge and preheat the oven to 350F. Use a 1.5-2 Tbsp cookie scooper to scoop the dough onto a sheet of parchment paper (about 45-50 grams of dough per cookie). The dough should form about 12-14 evenly sized cookies. Make sure to leave space between the dough as the cookies will spread while baking. If cookies do not fit on one tray, it's best to bake only one tray at a time.

  • What's up with the espresso powder?
