1 1/2 C Flour
1 1/4 tsp Baking Powder
1/2 tsp Salt
1 C Oats
1/2 C Butter (softened)
3/4 C Sugar
2 Eggs
1 1/2 tsp Vanilla
3/4 C Milk
1 C Dried Cranberries

Steps:

  • Preheat oven to 350 degrees.
  • In a small bowl, add the dried cranberries to the milk and set aside. In a mixing bowl, beat together the butter and sugar until light and fluffy, around 2 minutes. Beat in the eggs and vanilla until fully incorporated, then add the milk and cranberries and mix thoroughly.
  • Whisk the dry ingredients together in a medium bowl, then add to the wet ingredients and beat a few times until incorporated.
  • Pour into three mini loaf pans sprayed with cooking spray and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

3/4 cup honey
1/3 cup vegetable oil
2 eggs
1/2 cup low-fat milk
2 1/2 cups all-purpose flour
1 cup quick-cooking oats
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 cups fresh cranberries or 2 cups frozen cranberries
1 cup chopped nuts

Steps:

  • Combine honey, oil, eggs and milk in large bowl; mix well.
  • Combine flour, oats, baking soda, baking powder, salt and cinnamon in med bowl; mix well.
  • Stir into honey mixture.
  • Fold in cranberries and nuts.
  • Spoon into two 8 1/2 X 4 1/2 X 2 1/2 inch greased and floured loaf pans.
  • Bake in preheated 350 degree oven 40 to 45 minutes or until wooden toothpick inserted near center comes out clean.
  • Cool in pans on wire racks 15 minutes.
  • Remove from pans; cool completely on wire racks.
  • Makes 2 loaves.

1 cup oatmeal
1 1/4 cups hot water
3/4 cup butter, softened
1/2 cup fat free sour cream
1 1/4 cups brown sugar
2 tablespoons grated orange peel
1 egg
2 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1 1/4 cups chopped cranberries
1/2 cup chopped walnuts
1/4 cup sugar
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees farenheit. Grease and flour two 8x4" loaf pans and set aside.
  • In medium bowl, combine oats and hot water. Stir, and let stand for 5 minutes.
  • In large bowl, beat butter and brown sugar until fluffy.
  • Add oat mixture, sour cream, orange peel, and egg. Blend well.
  • Add flour, baking powder, baking soda, salt, and 1-1/2 teaspoons cinnamon. Mix gently.
  • Fold in cranberries and walnuts. Spoon batter into prepared pans and smooth to level.
  • In small bowl combine 1/4 cup sugar and 1/2 teaspoon cinnamon. Sprinkle over batter.
  • Bake at 350 degrees farenheit for 55 to 65 minutes until bread is golden brown and pulls away from the sides of the pan.
  • Cool 5 minutes, then carefully run a knife around the edges of the bread and remove to wire rack to cool.
  • Wrap in plastic wrap to store.

Open the oven door and the aroma of this fresh baked breakfast bread will have the entire house clamoring into the kitchen. Moist and dense in texture, the bread includes healthy ingredients, such as oats and fresh banana, and is easy to prepare and very adaptable, accommodating your choice of chopped nuts or dried fruit in place of the cranberries. Some people say you don't even need the sugar when the bananas are so sweet. Adapted from Whole Foods.

1 1/4 cups all-purpose flour (recommend subbing 1/4 cup whole wheat flour for 1/4 cup of the white flour)
3/4 cup quick oats (I use old fashioned oats whizzed in the food processor a few times)
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 cups ripe mashed banana pulp (about 3 bananas)
2 large eggs
1/3 cup margarine, melted, cooled (Earth Balance recommended or vegetable oil)
1/4-1/2 cup granulated sugar (some people leave out entirely, say the banana provides enough sweetness)
1/2 cup dried cranberries
1/4 teaspoon fresh lemon juice

Steps:

  • Preheat oven to 350°F Lightly grease an 8 1/2-by-4 1/2-by-2 1/2-inch loaf pan with a small amount of margarine.
  • Whisk together flour, oats, baking powder and salt in a large bowl. Set aside. Whisk bananas, eggs and margarine together in a separate bowl. Add sugar, cranberries, and lemon juice; mix until blended. Gently stir the banana mixture into the flour mixture until just combined. Do not over mix the batter.
  • Pour the batter into the prepared loaf pan and bake until lightly browned, 45 to 50 minutes. Allow the bread to cool completely in the pan, about 1 hour. Turn the bread out onto a cutting board and, using a serrated bread knife, slice the bread into 3/4-inch thick pieces.
  • Arrange on a platter and serve. Enjoy!

BAKED " CRANBERRY NUT BREAD" OATMEAL

After seeing a baked oatmeal prepared on FoodNetwork, it inspired me to come up with a few baked oatmeal recipes inspired by some popular baked goods. This oatmeal has a much more firm texture. 1 cup quick oats or 1 1/8 cups old fashioned oats
1/3 cup brown sugar
1/2 teaspoon cinnamon
1 dash salt
1/3 cup dried cranberries
1/4 cup coarsely chopped pecans
1 1/2 cups milk
2 teaspoons vanilla
1/2-1 teaspoon freshly grated orange zest (optional)
1 egg
2 -4 tablespoons sugar (to create brulee topping) (optional) or 2 -4 tablespoons brown sugar (optional)
1/4-1/2 cup toasted pecans (optional)

Steps:

  • Preheat oven to 350°F.
  • In large bowl, combine oats, brown sugar, cinnamon and salt. Add dried cranberries and chopped pecans.
  • In small bowl, whisk together the milk, egg, vanilla and orange zest. Add the milk mixture to the oat mixture and stir until combined.
  • Pour into 4-6 small souffle or brulee dishes or one larger baking dish (such as an 8x8-inch dish). (You may want to lightly spray baking dish with cooking spray.).
  • Bake 20-30 minutes (small baking dishes) or 30-40 minutes (large baking dish), or until slightly firm to touch. (Baking time will vary depending on the diameter of your baking dishes.).
  • Sprinkle with sugar (optional: use torch to create a brulee topping). Garnish with toasted pecans.
