1 boneless pork loin roast (2 pounds)
1 can (14 ounces) whole-berry cranberry sauce
1/4 cup Dijon mustard
3 tablespoons brown sugar
3 tablespoons lemon juice
1 tablespoon cornstarch
1/4 cup cold water

Steps:

  • Place roast in a 3-qt. slow cooker. Combine the cranberry sauce, mustard, brown sugar and lemon juice; pour over roast. Cover and cook on low for 4-5 hours or until meat is tender. Remove roast and keep warm. , Strain cooking juices into a 2-cup measuring cup; add enough water to measure 2 cups. In a small saucepan, combine cornstarch and cold water until smooth; stir in cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with pork.,

1 cup cranberry juice
1/3 cup red currant jelly
1 tablespoon dijon mustard
1/4 cup dried cranberries
1 pork tenderloin (about 1 pound)
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground pepper

Steps:

  • Preheat the oven to 425 degrees F and line a rimmed baking sheet with foil. Combine the cranberry juice, jelly and mustard in a medium skillet over medium-high heat; cook, stirring occasionally, until thick enough to coat the back of a spoon, about 15 minutes. Remove 3 tablespoons of the glaze and set aside for brushing. Stir the cranberries into the remaining glaze; set aside for drizzling.
  • Meanwhile, rub the pork with the olive oil, 1/2 teaspoon salt and a few grinds of pepper. Place on the prepared baking sheet and roast, turning once, 15 minutes. Remove the pork from the oven and brush all over with the reserved 3 tablespoons glaze. Continue to roast until a thermometer inserted into the thickest part of the meat registers 145 degrees F, 5 to 10 more minutes. Let rest 5 minutes, then slice and drizzle with the cranberry glaze.

2 (16 ounce) cans jellied cranberry sauce
½ cup white sugar
½ cup cranberry juice
1 teaspoon mustard powder
¼ teaspoon ground cloves
4 pounds pork roast
2 tablespoons cornstarch
2 tablespoons cold water
salt to taste

Steps:

  • Mash cranberry sauce with a fork or a potato masher. Stir in sugar, cranberry juice, mustard, and cloves.
  • Place pork roast in a large, roasting pan. Pour cranberry sauce mixture over the roast.
  • Cook at 275 degree F (135 degrees C) for 6 to 8 hours, or until meat is tender. Remove roast, and keep warm.
  • With a metal spoon, skim the fat from the liquid in the roasting pan. Pour 2 cups of the remaining roasting liquid (add water to fill out the measure if necessary) into a small saucepan. Bring to a boil over medium-high heat. Blend cornstarch and cold water to make a paste; stir gradually into boiling liquid. Continue cooking, stirring constantly, until mixture thickens. Add salt to taste. Serve with the roast.

1 cup sliced celery
2 cloves garlic, minced
1/4 cup butter
2 cups cooked brown rice
1/4 cup dried cranberries
1/4 cup chopped dried apricot
1 teaspoon orange zest
1/2 teaspoon dried thyme
salt and pepper
1/4 cup apple juice
2 (12 ounce) pork tenderloin
2 tablespoons butter
1 clove garlic, minced
2 tablespoons all-purpose flour
1 tablespoon Dijon mustard
1 1/4 cups chicken broth
1/4 cup half-and-half
1/4 cup dried cranberries

Steps:

  • In a medium sauce pan, melt butter over medium heat.
  • Saute onion, celery, and garlic for 4 minutes or until tender; remove from heat.
  • Add in rice, cranberries, apricots, orange peel, thyme, salt, and pepper to taste; mix well.
  • Stir in apple juice to moisten; set stuffing aside.
  • Make a centered cut down the length of each pork tenderloin, cutting to but not through the other side of the meat.
  • Make one cut on each side of the centered cut, also going to but not through the other side of the meat.
  • Place each tenderloin between 2 pieces of plastic wrap (Saran).
  • Pound lightly with a meat mallet to make an appoximate 10x8 inch rectangle, pounding from the center to the corners.
  • Sprinkle each tenderloin with salt and pepper.
  • Spoon half of the stuffing mix over each tenderloin, coming to within 1 inch of the edges.
  • Roll each tenderloin jelly-roll style beginning with the short side.
  • Tie each meat roll with cotton string in about 4-5 equally spaced places (This is to secure the meat roll and keep it from unrolling).
  • Place roll seam side down on a rack in a shallow roasting pan.
  • Roast, uncovered at 375 degrees for 50-60 minutes or until done.
  • Loosely cover with foil and let stand for 5 minutes before slicing.
  • Prepare Mustard Cranberry Sauce: In a small saucepan, melt butter or medium heat.
  • Saute garlic for 1 minute.
  • Stir in flour and mustard; mix well.
  • Cook and stir until thickened and bubbly; cook and stir 1 minute more.
  • Stir in half and half and dried cranberries; cook until heated through.
  • Cut tenderloins into 1/2 inch thick slices; drizzle with Mustard Cranberry Sauce.

3 tablespoons fresh lemon juice
1/4 cup Dijon mustard
3 tablespoons light brown sugar, packed
2 lbs pork tenderloin

Steps:

  • In a small bowl, whisk together the cranberry sauce, lemon juice, mustard & brown sugar, then pour 1/3 of the mixture in the bottom of a 5-quart crock pot.
  • Place tenderloins on top of the sauce, then pour the remaining sauce over the meat.
  • Cover & cook on high for 1 hour, then turn the temperature to low & cook another 4 to 6 hours or until meat is tender.
  • Allow meat to stand 10 minutes before slicing & serving.

¼ teaspoon ground pepper, divided
⅛ teaspoon salt plus a pinch, divided

1 tablespoon chopped fresh sage plus 1 teaspoon, divided
2 teaspoons chopped fresh thyme
2 tablespoons canola oil, divided
1 cup cranberries, fresh or frozen
1 medium shallot, minced
½ cup low-sodium chicken broth
½ cup port wine (see Tip)
1 ½ teaspoons butter

Steps:

  • Preheat oven to 450°F.
  • Pat pork dry, then brush with 1 tablespoon mustard. Sprinkle with 1/8 teaspoon each pepper and salt. Combine 1 tablespoon each rosemary and sage, along with thyme, on a cutting board. Roll the pork in the herbs, pressing to adhere.
  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Add the pork and cook, turning occasionally and adjusting the heat as necessary, until browned on all sides, about 4 minutes total. Transfer to a rimmed baking sheet. Roast the pork in the oven until an instant-read thermometer inserted in the thickest part registers 145°F, 14 to 18 minutes.
  • Meanwhile, return the pan to medium heat and add the remaining 1 tablespoon oil and cranberries to the pork drippings. Cook until the cranberries start to soften, about 2 minutes. Stir in shallot and the remaining 1 tablespoon mustard and 1 teaspoon each rosemary and sage. Cook until fragrant, about 1 minute. Stir in broth and port and cook until reduced by half, 2 to 3 minutes. Stir in butter and the remaining 1/8 teaspoon pepper and pinch of salt.
  • Slice the pork and serve topped with the sauce.
