ORANGE MAPLE CRANBERRY SAUCE

Sweetened with pure maple syrup instead of refined sugar, this easy homemade cranberry sauce recipe is a healthier spin on the favorite Thanksgiving condiment. We love the subtle seasonal flavors that the orange and cinnamon impart.

3 cups fresh or frozen cranberries
1/3 cup pure maple syrup + more if needed
1 tablespoon orange zest
1/2 cup fresh orange juice
1/2 cup water
Cinnamon stick

Steps:

  • Rinse the cranberries. Discard any mushy or underripe berries and stems.
  • Place a medium-sized saucepan over medium heat and add the cranberries, 1/3 cup pure maple syrup, orange zest, orange juice, water, and cinnamon stick. Cook, stirring occasionally, until the mixture comes to a boil. Continue boiling over medium heat until the berries burst and break down, forming a sauce, 15-20 minutes.
  • Taste for sweetness. If it's too tart, add more syrup - a tablespoon at a time - until the sauce tastes sweet enough for you.
  • Remove from the heat and let cool. Spoon into your serving container to serve or store in an airtight container, refrigerated, for 3-4 days. You can also freeze your cranberry sauce for up to 2 months - I do this every Thanksgiving! Just place the sauce in an airtight container or zipper freezer bag and transfer to the freezer. Move to the fridge to thaw about 24-48 hours before the big meal.

1 cup pure maple syrup (grade B or grade A dark amber)
2/3 cup heavy whipping cream
3/4 teaspoon finely grated orange peel
Pinch plus 1/2 teaspoon salt
2/3 cup all purpose flour
1/3 cup yellow cornmeal (preferably stone-ground)
1 1/2 teaspoons baking powder
1 large egg
3 tablespoons sugar
1/2 cup whole milk
1/2 cup (1 stick) unsalted butter, melted
1 teaspoon vanilla extract
Crème Fraîche, softly whipped cream, or vanilla ice cream

Steps:

  • Position rack in center of oven and preheat to 400°F. Combine first 4 ingredients and pinch of salt in medium saucepan. Bring to boil, stirring occasionally. Reduce heat and simmer 1 minute. Remove from heat.
  • Whisk flour, cornmeal, baking powder, and 1/2 teaspoon salt in medium bowl. Whisk egg and sugar in another medium bowl. Whisk milk, melted butter, and vanilla into egg mixture. Add flour mixture to egg mixture; whisk to blend. Pour warm cranberry mixture into 11x7x2-inch or 8x8x2-inch glass or ceramic baking dish. Pour batter over.
  • Bake cake until golden and cranberry mixture bubbles at edges, about 28 minutes. Cool 15 minutes. Serve cake warm topped with crème fraîche, whipped cream, or vanilla ice cream.

1/3 cup maple syrup, or more to taste
1/3 cup water
juice and zest of one fresh orange (about 1/4 cup juice)

Steps:

  • Combine all ingredients in a medium saucepan and stir to combine.
  • Heat over medium-high heat until the mixture reaches a simmer. Reduce heat and simmer for 8-10 minutes, or until the sauce has thickened and reached your desired consistency. (Keep in mind that it will also thicken a bit more as it cools.)
  • Taste and add extra maple syrup, if needed.

A lovely holiday fruit sauce to serve with the traditional bird, with a couple of twists. Instead of straight-up sugar, a cup of pure maple syrup balances the tartness of the fruit. A cup of cranberry juice ensures the essential flavor remains the focus of the dish, and a bit of orange brightens the whole shebang. The Grand Marnier is optional. This is to say nothing of the texture, which to paraphrase the great Roseanne Conner, is "so far beyond canned sauce, that the light from canned sauce would take one billion years to reach the Earth." 4 boneless skinless chicken breast halves (5-6 ounces each)
1/2 teaspoon coarse salt
pepper to taste
2 tablespoons olive oil
1/2 yellow onion, diced very small
1 cup dry red wine
1/2 cup pure maple syrup (not artificial!)
1/2 cup dried cranberries
4 teaspoons cornstarch
4 teaspoons water

Steps:

  • Season chicken with salt and pepper and cook as desired (I baked mine in a preheated 350°F oven for about 30 minutes). You can bake them, pan fry them, grill, or poach. Whatever you prefer.
  • While the chicken cooks, prepare the sauce. In a small sauce pan, heat oil over medium heat. Saute onions until translucent, about 5 minutes, stirring frequently.
  • Add wine, syrup, and cranberries. Bring to a boil over high heat and then reduce heat slightly (medium-high heat). Cook for five minutes, stirring.
  • Combine cornstarch and water in a small bowl with a whisk or a fork. While stirring sauce, stir in cornstarch/water mixture, reduce heat to medium and continue to cook for about a minute or until thickened. Serve sauce over cooked chicken.

  • Bake fruit 20 minutes. Remove from oven. Crumble topping over. Bake until apples are tender, juices bubble thickly around sides and topping is golden brown, about 35 minutes longer. Let stand at least 10 minutes and up to 1 hour. Serve with whipped cream.
