Real quick and easy to make! I got this recipe from an acquaintance at a boardgame night. The original recipe called for walnuts, but I think pecans are a more complementary flavor. These cranberry bars are delicious, with a delightful balance of sweet and tart. Don't count on leftovers - these moist squares get gobbled right up!

1 1/2 cups flour
1 1/2 cups sugar
1 cup butter, Softened
2 eggs, Beaten
2 cups raw cranberries, left whole
1 cup pecans, Chopped

Steps:

  • Preheat oven to 325 degrees.
  • Grease a 9" x 13" Pan.
  • Mix the butter with the sugar, and add the eggs and flour.
  • Stir in the cranberries and pecans.
  • Pour batter into greased pan, spreading out evenly.
  • Bake at 325 degrees for 45 - 50 minutes.
  • Cool. Cut into squares. At Christmas-time, you can add chopped green candied cherries. These also freeze well.

2 1/4 cups flour, divided
1/2 cup powdered sugar
1 tablespoon lime zest, plus
1 teaspoon lime zest, divided
1/4 teaspoon salt
1 cup butter
2 cups granulated sugar
1 teaspoon baking powder
4 eggs
1/4 cup lime juice
1 cup dried cranberries
additional powdered sugar

Steps:

  • Preheat oven to 350 degrees.
  • Spray 13x9 inch baking pan with cooking spray.
  • Combine 2 c flour, 1/2 c powdered sugar, 1 T lime peel and salt in large bowl.
  • Cut in butter with pastry blender until mix forms coarse crumbs.
  • Press mixture evenly into baking pan.
  • Bake about 20 minutes or until golden brown.
  • Meanwhile combine remaining 1/4 c flour, granulated sugar, and baking powder in bowl and mix well.
  • Combine eggs and lime juice in separate bowl.
  • Add flour mixture to egg mixture and beat with electric mixer at medium speed until mix is well blended.
  • Stir in 1 t lime peel and the cranberries.
  • Pour over warm crust.
  • Bake about 20 minutes or until golden brown.
  • Cool completely in pan on wire rack.
  • Sprinkle with powdered sugar and chill 2 hours.
  • Cut into squares and serve chilled.

  • Add the cranberries to the bowl of a food processor. Pulse several times, until cranberries are chopped into small pieces. Add the flour, sugar, and salt, and pulse several times to combine. Add the butter and continue to pulse in short, one second bursts, until the mixture resembles coarse sand. (Alternatively: chop cranberries with a knife, whisk together following ingredients, and cut butter into the dough with two knives.)
  • Spread the shortbread crust into the prepared pan, pressing the crumbly dough down with a heavy glass, until dough forms an even layer across the pan. Bake for 12 minutes, then remove from the oven.
  • In a large bowl, whisk together the eggs, lime juice, flour, sugar, lime zest, baking powder, and lime zest. Add food coloring if desired. If there are little lumps of flour in the filling, the mixture can be pushed through a fine mesh strainer to remove any lumps. Pour the filling over the crust.
