- In a bowl, cream butter and confectioners' sugar until light and fluffy. Beat in corn syrup. Gradually beat in flour and mix well. Fold in pecans and cranberries. Shape dough into two 6-in. logs; wrap each and chill until firm, at least 2 hours. , Unwrap and cut into 1/4-in. slices. Place 3 in. apart on ungreased foil-lined baking sheets. Bake at 350° until center and edges are browned and lacy, 11-12 minutes. Allow cookies to cool completely before carefully removing from foil.

- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone liner (such as Silpat®).
- Place almonds into the bowl of a food processor; alternate pulsing and running at full speed every few seconds until finely chopped and crumblike. Be careful not to go too far; you don't want them too fine and pasty.
- Combine butter, brown sugar, and honey in a saucepan over medium heat. Stir a few times and cook until melted and dissolved. Bring to a boil, then carefully remove from the heat.
- Add vanilla extract, salt, and flour, and whisk until smooth. Add chopped almonds and mix with a spatula until everything is combined.
- Drop eight uniformly sized, rounded spoonfuls of batter (each about 2 teaspoons, or 15 grams) onto the prepared sheet. Fine-tune the cookie shapes and make sure they are evenly spaced.
- Place in the center of the preheated oven and bake until golden brown and a bit darker around the outsides, 10 to 12 minutes, rotating the pan halfway through.
- Remove from the oven and slide the silicone liner off the baking sheet and directly onto the countertop. Allow to sit until cool and crisp, 3 to 5 minutes, then gently peel cookies off the liner. Repeat to bake remaining batches.
- Spread melted chocolate over the flat side of one cookie. Place a second cookie, flat-side down, on top to make a sandwich and press very gently to seal. Repeat to form remaining cookies. Let sit until chocolate has firmed up, about 30 minutes.

- Preheat oven to 350°F Whisk together in small bowl flour, salt & baking soda. Stir in oats.
- In medium bowl, cream butter in mixer until light & fluffy.
- Add sugars. Add egg. Beat in vanilla. Fold in the flour mixture from the small bowl. Mix in pecans and cranberries. Form mixture into 1-inch balls and place on parchment paper on cookie sheet about 2 1/2 inches apart.
- Bake until golden brown & lacy. * Keep an eye on them, oven temperature and heat distribution varies. Bake approx 8-10 minutes.

SUPER EASY 4 INGREDIENT LACE COOKIES
I have never had luck with lace cookies and after a lot of searching I found a recipe for lace cookies on a blog called Foodspriration that looked so simple I thought there was no way I could mess these up! I did make a couple changes to the recipe (like using corn syrup instead of honey - because I did not want the honey flavour and using a full 1 tsp of batter per cookie instead of 1/2 tsp) but it did not affect the end product. I hope you enjoy these as much as I did!

Steps:
- Put 2 Tbsp of brown sugar, 2 Tbsp of butter and 1 1/2 Tbsp of honey (OR corn syrup) into a sauce pan and melt it.
- Once melted, whisk in 2 Tbsp of flour until smooth.
- Then drop 1 tsp of the batter onto a parchment lined baking sheet ( about 3 inches apart) and bake for 6 min at 375F or until they are noticably golden brown all over.
- The batter spreads and bubbles into beautiful cookies.
- Once they have set enough to transfer, you can pick them up with your fingers and move them to a cooling rack to cool until crisp and make sandwiches out of them with buttercream.
- Or you can shape them into mini ice cream bowls or cones.

- Whisk Flour, salt, and Baking Soda. Then stir in Oats (all in a large bowl). In medium bowl beat butter and both sugars until fluffy. Add Egg and beat until mixed. Scrape down bowl and brat 30 more seconds, then beat in vanilla. Fold in Cranraisins and nuts. Line cookie sheet with parchment paper and drop by teaspoon fulls about 2 inches apart because they spread. Bake in 350 degree oven for 10-12 minuts or until they are golden brown. Let cool. Best kept in a sealed plastic bag, then in tupperware and they will last for at least 2 weeks or longer. I like to double the recipe and you can make them larger if you want by using a Tablespoon. Enjoy!
