This is a different type of spread recipe if you're a fan of goat cheese. The flavor of the cheese is mellowed out a little by all the other flavors. The tangy vinaigrette is a perfect complement to the goat cheese and cream cheese. Tart cranberries and nutty pine nuts in each bite are little bits of yumminess. At room...

Number Of Ingredients 7

1/4 c pine nuts
4 oz chevre (soft goat cheese, usually sold in a log shape)
3 Tbsp plain cream cheese (about 1.5 oz)
1/4 c dried cranberries
3 Tbsp balsamic vinaigrette salad dressing (store-bought or homemade)
1/8 tsp salt
freshly ground black pepper to taste

Steps:

  • 1. Toast the pine nuts. Place on a sheet of aluminum foil and roast in a toaster oven or regular oven at 300 F for about 2 minutes, just until nicely golden brown. Remove.
  • 2. Place toasted pine nuts and all other ingredients into a food processor. Process until mostly smooth.
  • 3. Place in a pretty serving dish. Serve immediately or refrigerate (which will thicken spread somewhat).
  • 4. Serve with crackers, Triscuits, slices of cocktail bread, Melba toast, or cut up veggies of your choice.

  • Whip together the goat cheese and the cream cheese until smooth and combined. Add in the cream, garlic powder, salt, and thyme. Mix together and spoon into a serving bowl.
  • Take the cranberries you cut off the log and mix with the honey, cream, and milk until well-blended. The cranberries should break up and mix into the cream and the remaining goat cheese that was cut off the log with the cranberries.
  • Spoon the cranberry layer on top of the savory layer, drizzle with honey, and serve with slice baguettes or pita bread.

  • Place the cranberries, pom juice, sugar and lemon zest in a saucepan and heat over medium heat. Cook until the cranberries are simmering and breaking down. You want them to be completely broken down and sort of thick and saucy, about 10 or so minutes. Transfer it to a bowl. Let the mixture cool completely.
  • In the bowl of your food processor, pulse the goat cheese until it starts to come together. Turn the processor on and let it blend and whip the goat cheese until smooth. Add a pinch of salt and pepper and pulse. Scrape in about 1/4 cup of the cranberry sauce mixture to start and pulse a few more times so everything gets combined. You can blend it completely so it's smooth or you can leave it a little chunky. You can also add more cranberries if you want, but I like to serve it on the side separately too!
  • Transfer the spread to a jar or bowl. At this point, you could cover/seal it and keep it in the fridge overnight before serving. Otherwise, serve it garnished with pomegranate arils, fresh rosemary and with crackers and bread for spreading. Delicious!
