CRANBERRY WALNUT FETA CHEESE SALAD



Cranberry Walnut Feta Cheese Salad image

This salad is good on it's own or with a balsamic vinaigrette dressing. Toasting the walnuts adds some extra flavor and crunchy texture.

Number Of Ingredients 5

8 -10 cups romaine lettuce
1/2 cup dried cranberries
1/2 cup chopped toasted walnuts
1/2 cup red onion, thinly sliced
4 ounces feta cheese, crumbled

Steps:

  • Toast walnut pieces for 5-10 minutes at 350. Allow walnuts to cool before adding to salad.
  • Chop romaine lettuce into bite sized pieces.
  • Slice the onion into thin pieces.
  • Combine all ingredients in a large bowl.

1 (10 ounce) package mixed salad greens
1 cup dried sweetened cranberries
1 (4 ounce) package crumbled feta cheese
1/2 cup coarsely chopped toasted walnuts
2 tablespoons balsamic vinegar
1 tablespoon honey
1 teaspoon Dijon mustard
1/4 teaspoon ground black pepper
1/4 cup extra virgin olive oil

Steps:

  • Layer salad greens, cranberries, cheese and walnuts in shallow salad bowl or on large serving platter. Whisk vinegar, honey, mustard and pepper in small bowl. Slowly add oil, whisking constantly until well blended. Pour over salad. Toss gently to coat. Serve immediately.

1 head romaine lettuce
1 bunch spinach
1/4 cup pine nuts, lightly toasted and cooled
1/4 cup dried cranberries
1/2 cup feta cheese, crumbled
1/3 cup olive oil
1 tablespoon red wine vinegar
2 tablespoons pure maple syrup
1 teaspoon Dijon mustard
1/2 teaspoon oregano
salt and pepper, to taste

Steps:

  • Prepare salad ingredients.
  • Whisk salad dressing ingredients together and pour over salad. Toss to coat.
