⅓ cup Sugar In The Raw®
2 tablespoons Stevia In The Raw®
2 tablespoons cornstarch
1 orange, zested
½ cup all-purpose flour
⅓ cup rolled oats
2 tablespoons Sugar In The Raw®
2 tablespoons Stevia In The Raw®
½ teaspoon sea salt
¼ teaspoon ground nutmeg
6 tablespoons cold unsalted butter, cut into cubes
⅓ cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F. Butter an 8-inch square pan or 9-inch pie dish.
  • In prepared baking dish, toss together cranberries, 1/3 cup Sugar In The Raw, 2 tablespoons Stevia In The Raw®, cornstarch, and zest.
  • In a medium bowl, combine flour, oats, 2 tablespoons Sugar In The Raw® 2 tablespoons Stevia In The Raw, salt, and nutmeg.
  • Add butter and use your fingers to work it into flour until mixture is crumbly. Stir in pecans. Sprinkle crumble mixture over cranberries.
  • Bake until fruit is bubbling and crumble is browned, 45 to 50 minutes.

1 pouch Betty Crocker™ sugar cookie mix
1 tablespoon Gold Medal™ all-purpose flour
1/3 cup butter or margarine, softened
1/2 teaspoon almond extract
1 egg
1/2 cup finely chopped toasted almonds*
1/2 cup chopped sweetened dried cranberries
1 tablespoon sugar

Steps:

  • Heat oven to 350°F. In large bowl, stir together cookie mix, flour, butter, almond extract and egg until soft dough forms. Stir in almonds and cranberries.
  • On lightly floured surface, roll dough to 1/4-inch thickness. Cut dough with 2-inch round cookie cutter. Place 1 inch apart on ungreased cookies sheets.
  • Bake 9 to 11 minutes or until edges are light golden brown. Sprinkle with sugar. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completey, about 15 minutes. Store loosely covered at room temperature.

5 cups Rice Krispies
1/4 cup margarine
40 large marshmallows
1 -2 cup dried cranberries (I use Craisins)

Steps:

  • In a bowl measure out Rice Krispies and craisins. Set aside.
  • Melt margarine in a separate bowl.
  • Add marshmallows to margarine and melt.
  • Add rice Krispies and Craisins to marshmallow mixture.
  • Press into a greased 9x13-inch pan.
  • Refrigerate and cut into squares.

What a great and easy dish to prepare for the holiday season. It's simple enough for every day but impressive enough for guests. Don't limit yourself to just major holidays though. This can be made year round! **ADDING** If I were to make this again, I would definately go a little easier on the sugar, maybe to 3/4 cup. I may also use 2 cans of cranberries just for height/presentation out of the oven. Really good though!

Steps:

  • Preheat oven to 350 degrees. Grease an 8x8 inch baking dish.

  • Pour cranberry sauce into prepared dish and cover with the flour mixture. Bake 30-40 minutes.

1 pound cranberries (thawed if frozen)
1 cup dried cranberries
1 1/2 cups sugar
2 teaspoons vanilla extract
3 firm pears (such as Bosc), peeled and cut into 1/2-inch pieces
1/2 teaspoon ground cinnamon
Pinch of ground allspice
1 cup plus 2 tablespoons all-purpose flour
1 cup pecans, chopped
1/4 cup old-fashioned rolled oats
1/4 teaspoon salt
1 stick unsalted butter, melted

Steps:

  • Preheat the oven to 375 degrees F. Combine the fresh and dried cranberries in a large bowl. Add 1 cup sugar, 3 tablespoons water and the vanilla and toss to coat. Lightly smash with a potato masher or fork to burst some of the cranberries. Add the pears, cinnamon, allspice and 2 tablespoons flour and toss to coat. Transfer to a 3-quart baking dish.
  • Make the topping: Mix the remaining 1 cup flour, the pecans, oats, the remaining 1/2 cup sugar and the salt in a medium bowl, then stir in the melted butter. Use your fingers to pinch the topping into small clumps and sprinkle it over the fruit.
  • Bake until the fruit is bubbling and the topping is golden brown, about 40 minutes. Serve warm or at room temperature.
