KETO CRANBERRY STREUSEL BARS

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Spray an 8x8-inch baking pan with cooking spray and set aside.
- Pour almond flour, sweetener, melted butter, and almond extract for crust in a medium bowl and mix well. Set aside 1/3 of the mixture to be used later for the streusel topping. Press remaining 2/3 of the mixture into the prepared baking pan.
- Bake in the preheated oven until partially golden, about 5 minutes. Remove and set aside.
- Combine cranberries, sweetener, orange juice, orange zest, and arrowroot powder in a small saucepan. Bring to a boil over medium heat; reduce heat to medium-low and let simmer until all of the cranberries have popped, about 10 minutes. Remove from heat and let cool for about 5 minutes. Spread cranberry filling over the crust.
- Stir pecans and cinnamon into the remaining crust mixture, mixing until incorporated. Sprinkle streusel topping evenly over the cranberry mixture.
- Bake in the preheated oven until set, about 30 minutes. Remove from the oven and cool completely before cutting into bars, 30 minutes to 1 hour.

- Preheat the oven to 300°F. Line the bottom and sides of an 8-inch baking pan with parchment paper, leaving enough overhang on all sides. Set aside.For the crust:Combine the melted butter, sugar, vanilla, and salt together in a medium bowl. Add the flour and stir until everything is combined. Press the mixture evenly into the prepared baking pan. Bake for 15 minutes.For the filling: Combine the cranberries, flour, granulated sugar, cinnamon, and nutmeg together in a large bowl until all of the cranberries are evenly coated. For the streusel: Combine the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the chilled butter with a pastry blender until the mixture resembles coarse crumbs. Remove the crust from the oven, increase heat to 350°F. Pour the cranberry mixture on top of the warm crust. Sprinkle the cranberry layer with streusel and bake for 30-35 minutes or until the streusel is golden brown.
CRANBERRY CREAM CHEESE STREUSEL BARS
Steps:
- Preheat oven to 350 degrees.
- In a large bowl of an electric mixer, beat together the butter and flour until crumbly and combined thoroughly. Transfer the mixture to an ungreased 13x9 inch baking dish and pat the crust firmly and evenly into the dish using your hands. Bake for 15 minutes, remove and allow to cool completely.
- In the bowl of an electric mixer, beat together the cream cheese and sugar until smooth on medium speed. Add the egg and vanilla and continue beating until combined. Set aside.
- In a medium bowl, using a pastry blender, combine the flour, confectioners' sugar, butter and salt until the mixture comes together and forms coarse crumbs. Using your hands or a fork, toss until the ingredients are combined and set aside.
- Once the crust has cooled, spread the cream cheese mixture evenly over the top of the crust leaving a 1/4 inch edge all the way around. Spread a thin layer of cranberry sauce over the cream cheese and then sprinkle the streusel topping over the entire top. Bake for 40 minutes, remove and cool completely. Cover tightly with plastic wrap and let it set overnight before cutting into squares.
- Store in an airtight container.

- In large bowl, stir Cake Base ingredients until well blended. Press evenly in pan.
- In another large bowl, beat cream cheese and 3 1/2 cups powdered sugar with electric mixer on medium speed until blended. Beat in 1/2 cup melted butter and the eggs, one at a time, scraping bowl occasionally. Stir in cranberries. Pour and evenly spread batter into pan over cake base.

- Preheat oven to 350 degrees. Spray a 13×9-inch baking dish with non-stick cooking spray.
- In the bowl of a stand mixer, stir together the flour, oatmeal, and brown sugar. Add the softened butter to the mixing bowl and mix on medium speed until the mixture resembles coarse crumbs. Measure out 1 ½ cups of the crumb mixture and set aside in a separate bowl.
- Pour the remaining crumbs into the prepared baking dish and press evenly into the bottom of the dish. Bake for 15 minutes.
- While the crust is baking, in the same bowl of the stand mixer, cream the softened cream cheese and sugar together on medium speed until light and fluffy. Add eggs, lemon juice and vanilla extract and mix well.
- Also while the crust is baking, in a small bowl, combine the cranberry sauce and cornstarch and mix thoroughly.
- When the crust is done baking, remove from the oven and pour the cream cheese mixture evenly over the crust. Then spoon the cranberry mixture evenly over the cream cheese mixture, spreading gently with the back of a spoon so that it is evenly coated. Then sprinkle the reserved oatmeal crumbs over the top of the cranberry mixture.
- Bake for 40 minutes or until completely set and very lightly golden brown.
- Remove from the oven and allow to cool completely on a wire rack. Cover and refrigerate the baking dish for at least 3 hours so that the bars can firm up.
- Once chilled, cut into bars and serve.

- Preheat the oven to 350º Fahrenheit. Spray an 8x8 baking pan with cooking spray.
- Cream together the butter and the brown sugar. Mix in the flour and the walnuts.
- Reserve one cup of this mixture for the topping (set it aside for later). Press the remaining mixture into the bottom of the prepared pan. Bake or 12 minutes.
- In a small bowl, mix together the cream cheese, sugar, egg, milk, lemon juice and vanilla until well blended. Pour this over the baked crust.
- Spoon teaspoonfuls of the jellied cranberry sauce over the top of the cream cheese mixture. Then take a knife and gently swirl the cranberry sauce into the cream cheese.
