FRESH CRANBERRY PUNCH

One of the best things about holiday cooking is the aromas that drift through the whole house! To me, it wouldn't be Christmas without the tang of oranges, cinnamon and cloves in the air-just what you'll smell as this fresh cranberry punch is simmering. To get the brightest red color in your punch, be sure to pick out the reddest of the fresh berries as you clean them.

Number Of Ingredients 7

4 cups fresh or frozen cranberries
3-1/2 quarts water
12 whole cloves
4 cinnamon sticks (3 inches)
3/4 cup orange juice
2/3 cup lemon juice
2 cups sugar

Steps:

  • In Dutch oven or large kettle, combine cranberries, water, cloves and cinnamon. Bring to boil; cover, reduce heat and simmer 12-15 minutes. Strain cooked juice through fine sieve or cheese cloth, squeezing gently. , To strained juice, add orange juice, lemon juice and sugar; stir until sugar is dissolved. Serve hot.

1/4 cup sugar
1 can (46 oz) pineapple juice, chilled
1 bottle (2 liter) cranberry flavored lemon-lime carbonated beverage, chilled
Ice cubes
1 cup fresh or frozen (thawed) cranberries
Cinnamon sticks, if desired

Steps:

  • In 1-quart saucepan, mix water, candies and sugar. Heat to boiling over medium-high heat, stirring constantly. Reduce heat to medium-low; simmer uncovered until candy is dissolved, stirring constantly. Cool completely, about 30 minutes. Refrigerate, if desired.
  • In punch bowl, mix syrup mixture and pineapple juice. Just before serving, stir in carbonated beverage. Serve over ice. Garnish with cranberries and cinnamon sticks.

This is the most delicious punch. My mom used to make it for holiday gatherings. My sisters and I could never get enough of this punch and looked forward to gatherings when my mom would make it. It has a unique flavor with the cinnamon syrup. Appears as though it takes a long time to make but it is the cinnamon syrup that requires advance preparation. My mom would make the syrup up days in advance of the punch and store it in the refrigerator.

2 cups water
1 1/2 cups sugar
4 cinnamon sticks
3 cups cranberry juice
2 1/2 cups orange juice
1 cup lemon juice
42 fluid ounces 7-Up soda
ice cube

Steps:

  • Chill fruit juices and 7-Up.
  • Simmer water, sugar and cinnamon sticks together for 10 minutes.
  • Set aside for several hours to allow the mixture to develop the cinnamon spiced flavor.
  • Prior to serving time, remove the cinnamon sticks from the sugar syrup.
  • In a large punch bowl, combine the sugar syrup, cranberry juice, orange juice, and lemon juice.
  • Slowly pour in the 7-Up.
  • Add ice-cubes and garnish with lime slices if desired.

  • For the mulled cranberry juice: Combine the cranberry juice, brown sugar, cloves, star anise and cinnamon in a medium saucepan. Bring to a simmer over medium heat, then reduce to medium-low and simmer for 30 minutes. Let cool to room temperature before placing in the refrigerator to cool completely. Strain just before using.
  • For the punch: Combine the vodka, triple sec and 4 1/2 cups of the mulled cranberry juice in a large punch bowl over ice or a juice ice mold (see Cook's Note). Stir to combine. Garnish with the orange twist if using.

12 ounces fresh or frozen cranberries
20 thyme sprigs
8 fresh bay leaves
2 cups granulated sugar
1 tablespoon whole allspice
1 tablespoon whole cloves
10 thyme sprigs
2 cinnamon sticks
4 cups unsweetened cranberry juice
1 1/2 cups orange vodka
Half a 750-milliliter bottle prosecco
6 ounces fresh or frozen cranberries

Steps:

  • For the Bundt ice ring: Pour 1 inch of water into the bottom of a 12-cup Bundt pan. Add a quarter of the cranberries, 5 thyme sprigs and 2 bay leaves and evenly spread the ingredients around the Bundt pan--this will be the top of the ice cube. Place in the freezer to set for at least 4 hours.
  • For the next layer, add enough water to fill halfway up the Bundt pan, then add the same quantity of ingredients as the first layer. Place in freezer for at least 4 more hours. Continue to make 2 more layers and freeze in the same manner, freezing each layer at least 4 hours before adding on the next. The final layer should freeze 8 hours or up to overnight before being used.
  • Turn the Bundt pan onto a baking sheet and hold under running hot water until the Bundt ice ring releases onto the baking sheet, 5 to 10 seconds. Add to a punch bowl when ready to serve.
  • For the spiced-thyme simple syrup: Combine the sugar with 2 cups water in a saucepan. Bring to a boil and cook until the sugar is dissolved. Remove from the heat and add the allspice, cloves, thyme and cinnamon sticks. Let steep while it comes to room temperature, 1 hour. Strain and refrigerate until ready to use.
  • For the punch: Stir together the cranberry juice, vodka and 2 cups spiced-thyme simple syrup (save the remainder for another use). Pour over the Bundt ice ring in the punch bowl and top with prosecco and cranberries for garnish. Serve immediately.

  • In a 3- or 4-qt. slow cooker, combine the cranberry juice, pineapple juice and sugar. Place cinnamon and cloves on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag. 2 cups sugar
2 cups water
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 liter ginger ale, chilled
4 cups cold water
2 cups unsweetened pineapple juice, chilled
1 cup lemon juice
Optional: Mint leaves and additional fresh or frozen cranberries

Steps:

  • In a large saucepan, combine the first 5 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, 4-6 minutes or until cranberries are softened. Remove from heat; cool slightly. Transfer to a blender; process until smooth. If desired, strain through a fine-mesh strainer. Pour into a 6-cup ring mold. Freeze until solid., Just before serving, wrap bottom of mold in a hot damp dishcloth; invert onto a baking sheet and lift off mold. Place ice ring in punch bowl. Gently stir in ginger ale, cold water, pineapple juice and lemon juice. If desired, serve with mint leaves and additional cranberries.
