Cranberries are one of only three fruits native to North America, so what could be better to help celebrate an authentic Thanksgiving? The dough and jam can be made 3 days ahead and chilled separately. Great for Christmas, too.

1 (12 ounce) package fresh or frozen cranberries (not thawed if frozen)
⅔ cup white sugar
½ cup water
1 ½ cups all-purpose flour
1 cup rolled oats (not quick-cooking)
⅔ cup chopped pecans or walnuts
¾ cup packed light brown sugar
¾ teaspoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon nutmeg
½ cup unsalted butter at room temperature - cut into 1-tablespoon chunks

Steps:

  • Bring cranberries, sugar, and water to a boil in a saucepan over medium heat, stirring frequently. Reduce heat and simmer, stirring and mashing cranberries, until mixture is very thick, about 15 minutes. Cool completely, about 30 minutes.
  • Preheat oven to 350 degrees F. Line bottom and sides of an 8-inch square baking pan with foil and spray with cooking spray.
  • Pulse flour, rolled oats, pecans, brown sugar, baking powder, salt, cinnamon, and nutmeg in a food processor 3 times to mix. Add butter and pulse until mixture begins to clump. Firmly press half of dough evenly in bottom of prepared pan. Spread with jam, then sprinkle on remaining dough and gently press into an even layer.
  • Bake until golden brown, 45 to 50 minutes. Cool completely in pan on a rack. Lift foil to remove pastry from pan and cut into bars.

In these easy Cranberry Cinnamon Jam Bars the cinnamon streusel doubles as both the top and bottom crusts with a gooey, spiced cranberry filling in between.

2 cups butter (salted, room temperature)
2 cup sugar
2 egg yolks
1 tablespoons vanilla extract
4 cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon salt
2 cups cranberry jam (or Christmas jam)
Candied ginger (minced (optional))

Steps:

  • Preheat the oven to 325°. Butter a 9x13 baking dish or a quarter sheet pan.
  • In a large bowl combine butter and sugars, mix on medium speed until light and fluffy. Add the egg yolks one at a time and beat to combine after each addition.
  • Add the vanilla and beat until combined.
  • Add the flour to the butter mixture and mix low speed until a soft dough forms. Do not over mix.
  • Press approximately ½ of the dough into the prepared baking pan, and bake in preheated oven for 10 minutes. It won't look done, because it's not... Refrigerate the remaining 2/3 of the dough.
  • Pour the cranberry jam over the crust and spread it out evenly with an offset spatula. Crumble the remaining dough over top.
  • Bake until the filling is bubbly and the topping is lightly golden, about 20-30 minutes. Sprinkle candied ginger over the top.
  • Let cool before cutting into squares. (I know, I know...go ahead and cut a corner out for quality control...the things we must do as bakers...)

1 (12 ounce) package whole cranberries
1 cup white sugar
¾ cup water
1 (18.25 ounce) package yellow cake mix
¾ cup butter, melted
2 eggs
1 cup rolled oats
¾ cup packed light brown sugar
1 teaspoon ground ginger
1 teaspoon ground cinnamon

Steps:

  • In a saucepan over medium heat, combine the cranberries, white sugar, and water. Cook, stirring occasionally until all of the cranberries have popped, and the mixture is thick, about 15 minutes. Remove from heat, and set aside to cool.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together the cake mix, melted butter, and eggs. Stir in the oats, brown sugar, ginger and cinnamon. Set aside about 1 1/2 cups of the mixture, and spread the rest into the bottom of a 9x13 inch baking dish. Pack down to form a solid crust, getting it as even as possible. Spread the cooled cranberry mixture over the crust. Pinch off pieces of the remaining mixture and place evenly over the cranberry layer.
  • Bake for 35 to 40 minutes in the preheated oven, until the top is lightly browned. Cool in the pan for about 40 minutes before slicing into bars.

1 cup corn syrup

225 g cinnamon baking chips
1 cup dried cranberries

Steps:

  • CRUST:
  • COMBINE all ingredients, mixing until crumbly. Press firmly into greased 13"x9" cake pan.
  • BAKE at 350°F for 15-18 minutes, or until light golden.
  • TOPPING:
  • BEAT eggs, sugar, corn syrup and melted butter together until blended. Stir in cinnamon chips, cranberries and walnuts. Pour evenly over crust.

3 cups quick-cooking oats
1-1/2 cups Rice Krispies
1 cup dried cranberries
1/2 cup ground flaxseed
1-1/4 teaspoons ground cinnamon, divided
1/2 teaspoon ground nutmeg
1/2 cup packed brown sugar
1/2 cup light corn syrup
1/4 cup canola oil
1/4 cup honey
1 teaspoon vanilla extract
1/4 teaspoon salt
2 teaspoons sugar

Steps:

  • In a large bowl, combine oats, Rice Krispies, cranberries, flax, 1 teaspoon cinnamon and nutmeg., In a large saucepan, combine brown sugar, corn syrup, oil and honey; cook and stir over medium heat until sugar is dissolved. Remove from the heat; stir in vanilla and salt., Stir in oat mixture; toss to coat. Press firmly into a 9-in. square pan coated with cooking spray.   • Preheat oven to 350 degrees. Prepare a 9x13 by lining it with a sheet of aluminum foil and spray lightly with cooking spray. Set aside.
  • Using a food processor, coarsely grind the walnuts. Add the flour until combined. Add confectioner's sugar, cinnamon, and salt. Add melted butter and mix until butter is evenly distributed. Press the crust in the bottom of your 9x13 and bake for 20-25 minutes until edges are lightly brown.
  • While the crust is baking, start to prepare the cranberry curd by placing cranberries in water in a medium sized pot. Turn to medium high heat and stirring occasionally gently boil the cranberries for about 5 minutes until theu burst and become mushy.
  • Using a medium sized mixing bowl, pour the cranberries through a mesh strainer and using a spatula press the cranberries through the stainer. This will remove the skins for you and give you a cranberry puree. All to cool.
