2 cups all-purpose flour
1 tablespoon baking soda
1 teaspoon salt
1 cup white sugar
3 tablespoons butter, melted
2 eggs, beaten
1 cup milk
3 cups fresh cranberries
1 cup white sugar
½ cup butter
½ cup heavy whipping cream
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine flour, baking soda, and salt in a bowl. Beat 1 cup sugar and 3 tablespoons melted butter with a whisk until well mixed. Add eggs and beat until smooth. Stir flour mixture and milk into egg mixture until batter is well blended. Fold cranberries into batter until just mixed and pour into prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes.
  • For sauce, heat 1 cup sugar, 1/2 cup butter, heavy cream, and vanilla extract in a saucepan over medium-low heat; cook and stir cream sauce until sugar is dissolved, about 10 minutes. Pour hot sauce over hot cake. Allow cake to cool in the baking dish for 10 minutes before removing to cool completely on a wire rack.

3 tablespoons butter, softened
1 cup sugar
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground nutmeg
1 cup milk
2 cups cranberries
2 tablespoons grated orange or lemon peel
CREAM SAUCE:
1-1/3 cups sugar
1 cup heavy whipping cream
2/3 cup butter

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine the flour, baking powder and nutmeg; add to the creamed mixture alternately with milk, beating well after each addition. Stir in cranberries and orange peel., Pour into a greased 11x7-in. baking dish. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. , Meanwhile, in a small saucepan, combine sauce ingredients. Cook and stir over medium heat until heated through. Cut warm cake into squares; serve with cream sauce.

Tart fresh cranberries and sweet buttery cake are perfectly combined in this popular Christmas dessert!

2 cups sugar
3/4 cup butter, softened
1 teaspoon vanilla
2 cups all-purpose flour * (see note below for gluten-free alternative)
12 oz fresh cranberries

Steps:

  • Preheat oven to 350 degrees. With a mixer, beat the eggs with the sugar until slightly thickened and light in color, about 5-7 minutes. The mixture should almost double in size. The eggs work as your leavening agent in this recipe, so do not skip this step. This mixture should form a ribbon when you lift the beaters out of the bowl.
  • Add the butter and vanilla; mix two more minutes. Stir in the flour until just combined. Add the cranberries and stir to mix throughout.
  • Spread in a buttered 9x13 pan. (This pan is my favorite!) Bake for 40-50 minutes, or until very lightly browned and a toothpick inserted near the center of the cake comes out clean. (I baked mine for 43 minutes.)
  • Let cool completely before cutting into small slices. I cut mine into fairly small pieces, about 1"x2", so that they could be easily eaten at a party. Enjoy!

I've never been able to find it anywhere on the internet the few times I've misplaced it so I want to make sure its out there the next time I look : ) This is a delicious, rich, dense cake. It is expensive but is worth every dime and a crowd pleaser at Christmas. I hope you enjoy it as much as my family, friends and I do.

5 cups frozen cranberries (soak dried in orange juice or water for 30-60 minutes) or 3 3/4 cups dried cranberries (soak dried in orange juice or water for 30-60 minutes)
4 cups coarsely chopped pecans
2 cups golden raisins
4 cups all-purpose flour, divided
1 1/2 cups margarine or 1 1/2 cups butter
2 1/2 cups sugar
7 eggs
1 teaspoon vanilla
1 tablespoon baking powder
2 teaspoons ground cinnamon
2 teaspoons ground ginger
2 teaspoons ground nutmeg
3/4 teaspoon salt
1/2 cup brandy
1 1/2 cups unsalted butter, softened
4 cups confectioners' sugar
2 tablespoons orange liqueur (Triple Sec) or 2 tablespoons orange juice
1 teaspoon vanilla

Steps:

  • Preheat oven to 275 degrees. Spray a 10" removable-bottom tube pan (bundt or angle food) with cooking spray; flour lightly. In large bowl, place cranberries, pecans and raisins; sprinkle with 1 cup flour, tossing lightly to coat. In an extra-large mixing bowl, with mixer at medium speed, cram margarine/butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Into a medium bowl, sift 3 remaining cups flour, the baking powder, cinnamon, ginger, nutmeg and salt. At low speed, alternating with the brandy, add the dry ingredients to batter in three batches; fold in cranberry mixture. Pour the batter into the pan and smooth top. Bake about 3 hours, until pick inserted near center comes out clean. Remove pan to wire rack to cool completely. Meanwhile, for frosting, in large bowl, with mixer at medium speed, cream butter and sugar until light and fluffy. Beat in liqueur and vanilla. Using a metal spatula, frost cooled cake; then garnish with sugared frozen cranberries and lemon leaves if desired.

  • To prep for the cake, wrap the outside bottom of a 9" springform pan with aluminum foil and preheat the oven to 350˚F.
  • Combine the flour, baking powder, baking soda, cinnamon, and salt and set aside. Then put a sauce pan over medium heat and add the butter and sugar stirring frequently until it comes to a boil. Once it comes to a boil, remove from the heat and pour into the bottom of the pan. Spread the cranberries and nuts evenly over the top of the sugar mixture.
  • Next cream the softened butter and white sugar together until fluffy. Add each egg, one at a time, then stir in the vanilla. Add the dry ingredient mixture alternately with the sour cream mixing just until moistened between each addition. Then spread the cake batter over the cranberries in the pan.
  • Bake on the middle rack for 1 hour, or until a toothpick comes out clean when inserted in the middle of the cake. Once done, allow the cake to rest for 15 minutes, then turn the cake over onto a serving platter and release it from the pan.
