LEMON CHIFFON PIE WITH GLAZED CRANBERRIES



Lemon Chiffon Pie with Glazed Cranberries image

Yield Makes 8 to 10 servings

Number Of Ingredients 17

Crust
Nonstick vegetable oil spray
2 cups shortbread cookie crumbs
3 1/2 tablespoons unsalted butter, melted
Filling
1/4 cup water
1 1/2 teaspoons unflavored gelatin
4 large eggs, separated
2/3 cup sugar
1/3 cup fresh lemon juice
1 teaspoon grated lemon peel
1/2 cup chilled whipping cream
Topping
1/2 cup sugar
1/3 cup water
2 cups fresh or frozen whole cranberries (about 8 ounces)
1/2 cup currant jelly

Steps:

  • For crust:
  • Preheat oven to 350°F. Spray 9-inch deep-dish glass pie dish with nonstick spray. Mix cookie crumbs and melted butter in small bowl. Press crumb mixture over bottom and up sides of prepared dish. Bake until golden brown, about 20 minutes. Cool on rack.
  • For filling:
  • Place 1/4 cup water in small bowl; sprinkle gelatin over. Let stand until gelatin softens, about 10 minutes. Whisk egg yolks, 1/3 cup sugar, lemon juice, and lemon peel in top of double boiler to blend. Cook over barely simmering water until custard thickens, whisking frequently, about 6 minutes. Transfer to large bowl. Add gelatin to hot custard; whisk to dissolve. Place over bowl of ice water; stir until cool and thickened but not set, about 12 minutes.
  • Using electric mixer, beat egg whites in another large bowl until soft peaks form. Gradually add 1/3 cup sugar; beat until stiff but not dry. Fold egg white mixture into custard in 2 additions. Using electric mixer, beat cream in medium bowl until peaks form. Fold into lemon mixture. Transfer filling to cooled crust. Cover with plastic and chill overnight. (Can be made 2 days ahead. Keep chilled.)
  • For topping:
  • Stir sugar and 1/3 cup water in medium saucepan over medium-low heat until sugar dissolves. Increase heat to medium-high; bring to boil. Add cranberries; cook until half have popped, about 5 minutes. Add jelly; stir until melted. Cool to room temperature. Gently spoon topping over pie. Chill at least 30 minutes to set. (Can be made 4 hours ahead; keep refrigerated.)

1 (9 inch) prepared graham cracker crust
3 cups raspberries
⅔ cup water
1 (.25 ounce) package unflavored gelatin
¼ cup cold water
3 egg yolks, beaten
⅔ cup white sugar
3 egg whites
¼ teaspoon cream of tartar
⅓ cup white sugar
½ cup heavy whipping cream
¼ cup fresh raspberries

Steps:

  • In a medium saucepan, combine 3 cups raspberries and 2/3 cup water. Simmer over low heat until raspberries are soft. Press mixture through a sieve or strainer to remove seeds and obtain raspberry pulp.
  • Place gelatin and 1/4 cup cold water in a small bowl. Set aside and allow gelatin to soften.
  • In a medium saucepan, whisk together raspberry pulp, egg yolks, and 2/3 cup sugar. Bring to a full boil, stirring constantly. Remove from heat.
  • Add gelatin to raspberry mixture and stir until dissolved. Place pan in a cold water bath to cool completely.
  • In a large glass or metal mixing bowl, beat egg whites until foamy. Add cream of tartar. Add 1/3 cup sugar a little at a time, beating constantly until whites are stiff and glossy.
  • In a separate mixing bowl, whip cream until stiff. Gently fold together with cooled raspberry mixture and meringue. Spoon mixture into graham cracker crust. Chill at least 2 hours before serving. Garnish with whole raspberries.

1 cup all-purpose flour
2 tablespoons sugar
1/2 cup cold butter
1/2 cup finely chopped walnuts
FILLING:
1 package (3 ounces) cranberry or strawberry gelatin
1/2 cup boiling water
1 cup whole-berry cranberry sauce
3/4 cup cranberry juice
1 tablespoon grated orange zest
1 cup heavy whipping cream, whipped

Steps:

  • In a bowl, combine the flour and sugar. Cut in butter until crumbly. Stir in walnuts. Press onto the bottom and up the sides of a greased 10-in. pie plate. , Bake at 375° for 14-16 minutes or until set and edges are lightly browned. cool on a wire rack., For filling, in a bowl, dissolve gelatin in water. Stir in cranberry sauce, cranberry juice and orange zest. Cover and refrigerate until slightly thickened, about 1 hour. Fold in whipped cream. pour into crust. Refrigerate for at least 3 hours.

1-1/2 cups reduced-calorie reduced-sugar cranberry juice
1 package (.6 ounce) sugar-free raspberry gelatin
1 can (14 ounces) jellied cranberry sauce
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed, divided
1 graham cracker crust (10 inches)
10 fresh raspberries

Steps:

  • In a microwave-safe bowl, heat cranberry juice on high for 2-3 minutes or until boiling; add gelatin and stir until dissolved. Cover and refrigerate for 45-60 minutes or until slightly thickened. , In a large bowl, beat cranberry sauce for 1-2 minutes or until smooth. Gradually beat in gelatin mixture. Cover and refrigerate for 45 minutes or until thickened., Refrigerate 10 tablespoons whipped topping for garnish. Stir half of the remaining whipped topping into cranberry mixture; fold in remaining whipped topping. Spread filling evenly into crust. Cover and refrigerate for 8 hours or overnight. , Cut into slices; top each with 1 tablespoon whipped topping and a raspberry.

12ounces frozen raspberries (2 cups)
3tablespoons powdered pectin (Sure-Jell)
1 1/2cups sugar
Pinch table salt
1cup fresh raspberries
1 (9-inch) pie shell, baked and cooled (see related recipe)
Chiffon Layer
3tablespoons gelatin, raspberry flavored
3tablespoons boiling water
3ounces cream cheese, softened
1cup heavy cream, chilled
Whipped Cream Topping
1 1/4cups heavy cream, chilled
2tablespoons sugar

Steps:

  • 1. For the fruit layer: Cook frozen berries in medium saucepan over medium-high heat, stirring occasionally, until berries begin to give up their juice, about 3 minutes. Stir in pectin and bring to full boil, stirring constantly. Stir in sugar and salt and return to full boil. Cook, stirring constantly, until slightly thickened, about 2 minutes. Pour through fine-mesh strainer into medium bowl, pressing on solids to extract as much puree as possible. Scrape puree off underside of strainer into bowl. 2. Transfer 1/3 cup raspberry puree to small bowl and cool to room temperature. Gently fold fresh raspberries into remaining puree. Spread fruit mixture evenly over bottom of pie shell and set aside. 3. For the chiffon layer: Dissolve gelatin in boiling water in large bowl. Add cream cheese and reserved 1/3 cup raspberry puree and beat with electric mixer on high speed, scraping down sides of bowl once or twice, until smooth, about 2 minutes. Add 1 cup cream and beat on medium-low until incorporated, about 30 seconds. Scrape down bowl. Beat on high speed until cream holds stiff peaks, 1 to 2 minutes. Spread evenly over fruit in pie shell. Cover pie with plastic wrap. Refrigerate until set, at least 3 hours or up to 2 days. 4. For the whipped cream topping: When ready to serve, beat 1 1/4 cups cream and sugar to stiff peaks. Spread or pipe over chilled filling. Serve.
