Cranberry chews is a delicious cookies recipe made using tart cranberries and sweet white chocolate.

Unsalted Butter - 100 grams
Sugar - 125 grams
Egg - 1
Vanilla Extract -1 tsp
Baking powder - 1 tsp
All Purpose Flour / Maida - 1 1/4 cup (150 grams)
Cranberry - 1 cup dried
White Chocolate - 1 cup chopped finely

Steps:

  • Preheat oven to 180 degree C.
  • Take butter, sugar, vanilla in a bowl and mix well.
  • Add in egg and mix well.
  • Add in baking powder and all purpose flour and mix well.
  • Add in chocolate chunks, cranberry and mix well.
  • Place dough in fridge for 30 mins.
  • Take small portion of dough and flatten it.
  • Arrange it in a baking tray and bake for 15 mins.
  • Remove and cool completely.
  • Serve.

1 teaspoon apple pie spice
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 sticks unsalted butter, at room temperature
3/4 cup packed light brown sugar
3/4 cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
2 1/2 cups rolled oats
1 1/4 cups dried cranberries
1 cup confectioners' sugar
1 tablespoon milk

Steps:

  • Whisk the flour, apple pie spice, baking powder, baking soda and salt in a medium bowl; set aside. Beat the butter, brown sugar and granulated sugar in a large bowl with a mixer on medium speed until light and fluffy, about 3 minutes. Reduce the mixer speed to low; beat in the eggs one at a time, then beat in the vanilla. Add the flour mixture and beat until just incorporated. Stir in the oats and cranberries with a wooden spoon. Cover with plastic wrap and refrigerate until firm, at least 1 hour or overnight.
  • Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Form the dough into 2-inch balls and arrange 2 inches apart on the prepared baking sheets; press with a spatula to flatten. Bake, switching the pans halfway through, until the cookies are golden but the centers are still soft, 15 to 20 minutes. Slide the cookies from the parchment onto racks to cool completely.
  • Make the glaze: Whisk the confectioners' sugar and milk in a medium bowl. Drizzle on the cookies; let set 5 minutes.

1/4 cup molasses
1 cup cranberries
1 egg
1/2 stick (4 tablespoons) butter, melted
1/2 teaspoon cinnamon (optional)
1 teaspoon baking powder
1/2 cup water, as needed

Steps:

  • Preheat oven to 350 degrees Fahrenheit and grease two cookie sheets.
  • Toss cranberries into a blender or food processor and chop. Mix all the dry ingredients in a large bowl then add the melted butter, chopped cranberries, egg, and, slowly, the water a little bit at a time.
  • Mix the dough and knead on a lightly floured surface, rolling the dough to about ¼-inch thick. Use cookie cutters to cut into desired shapes.
  • Place the treats on the baking sheet, leaving just a little room between each.
  • Pop the cookie sheets in the oven and bake for 30 minutes.
  • At the end of baking, turn off the oven and allow the treats to cool in the oven for about three or four hours to make treats crunchy.
  • Once the treats have completely cooled, serve or refrigerate.

And it even has orange marmalade, too. I'd really like to try this around Thanksgiving. Passive time includes the cooling period for the base. Prep time is a guess. ***Due to suggestions from 2 reviewers, I have changed the recipe to reserve only 1 c of crumb mixture for the topping (it previously asked for 1 1/2 c crumb mixture).***

1 cup packed brown sugar
1 teaspoon ground cinnamon

1 1/2 cups rolled oats
1 (16 ounce) can whole berry cranberry sauce
1/2 cup thick orange marmalade
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees farenheit. Grease a 10x 15-inch jelly-roll pan.
  • In a large bowl, combine 2 c flour, brown sugar, cinnamon, nutmeg, cloves and salt. Use a pastry blender or 2 knives to cut in butter until mixture resembles coarse crumbs (or you can do this in a food processor using pulses).
  • Stir in oats. Reserve 1 c mixture. Firmly press remainder over bottom of prepared pan. Bake 15 minutes. Cool 10 minutes before filling.
  • In a medium bowl, stir together cranberry sauce, marmalade and vanilla. Sift remaining 1/3 c flour over cranberry mixture 1 tablespoon at a time, blending well after each addition. Spread evenly over baked and cooled crust. Add nuts to reserved oat mixture; sprinkle over top of cranberry filling.
  • Bake about 30 minutes, or until lightly brown. Cool in pan on rack. Cut into 64 (about 1 1/2 x 2-inch) bars, cutting 8 strips both ways. Store in airtight container at room temperature for 1 week or freeze for longer storage.

4 ounce cream cheese softened

Steps:

  • Preheat oven to 350 degrees. Line a 9x13 inch pan with Reynolds Non-Stick Foil and set aside. Using a stand or hand mixer add the butter, brown sugar, and eggs. In a medium sized bowl add the flour, baking powder, and salt. Add the dry ingredients to the wet ingredients and mix until combined. Fold in the cranberries and chocolate chips. Spread in the bottom of the 9x13 inch pan.
  • Bake for 18-20 minutes or until golden brown. Remove from the oven and allow to completely cool.

Made a bunch of these cranberry chews at the weekend, and they were so good. I used half whole wheat flour, which I usually do when I bake. I also used 1/2 cup coconut oil and 1/2 cup butter, and these bars came out wonderfully delicious. I have been enjoying them for breakfast and snack. I froze most of the bars. A great recipe. 432

3 eggs
2 cups sugar
3/4 cup butter, softened
1 teaspoon vanilla
2 cups all-purpose flour * (see note below for gluten-free alternative)
12 oz fresh cranberries

Steps:

  • Preheat oven to 350 degrees. With a mixer, beat the eggs with the sugar until slightly thickened and light in color, about 5-7 minutes. The mixture should almost double in size. The eggs work as your leavening agent in this recipe, so do not skip this step. This mixture should form a ribbon when you lift the beaters out of the bowl.
  • Add the butter and vanilla; mix two more minutes. Stir in the flour until just combined. Add the cranberries and stir to mix throughout.
  • Spread in a buttered 9x13 pan. (This pan is my favorite!) Bake for 40-50 minutes, or until very lightly browned and a toothpick inserted near the center of the cake comes out clean. (I baked mine for 43 minutes.)
  • Let cool completely before cutting into small slices. I cut mine into fairly small pieces, about 1"x2", so that they could be easily eaten at a party. Enjoy!
