Even before they've licked the last bit of sugar off their fingers, folks are asking for more of this blue-ribbon candy. It took first place at the county fair, and everyone's sweet on these pretty squares.

Steps:
- Line an 8-in. square pan with foil and grease the foil with 1 teaspoon butter; set aside. In a large saucepan, combine the cranberry sauce, 1 cup sugar and lemon and orange gelatin. Bring to a boil over medium heat, stirring constantly. Remove from the heat; stir in walnuts. Pour into prepared pan. Cover and refrigerate overnight. , Using foil, lift candy out of pan. Discard foil; cut into 1-in. squares. Roll in remaining sugar. Store at room temperature between layers of waxed paper in an airtight container. Best when stored at least three days before serving.

Steps:
- Line an 8x8-inch pan with waxed paper; coat the paper with vegetable oil.
- Combine 1 cup sugar, jellied cranberry sauce, and raspberry Jell-O® mix in a saucepan over medium heat, stirring until sugar and gelatin have dissolved. Bring to a boil, reduce heat to low, and simmer 20 minutes, stirring often. Mix walnuts into candy.
- Pour candy into prepared pan and let set at room temperature overnight. Cut candy into squares and roll squares in sugar. Place sugared candies onto waxed paper to set.

CANDIED ALMOND CRANBERRY BARK
Steps:
- Line 2 baking sheets with waxed paper; set aside.
- Melt butter in skillet over medium heat until sizzling; add almonds and sugar. Continue cooking, stirring constantly, 4-6 minutes or until sugar melts and almonds are golden brown. Quickly spread onto 1 prepared baking sheet. Cool completely; coarsely chop.
- Melt candy coating in microwave according to package directions. Stir in chopped candied almonds, cranberries and orange zest. Immediately pour onto remaining prepared baking sheet; spread to 1/4-inch thickness.
- Let stand until firm. Cut or break into small pieces. Store in container with tight-fitting lid.

Steps:
- Beat sugar and cranberry sauce together in sauce pan.
- Melt and bring to a boil over moderate heat and add jello.
- Stir until dissolved.
- Add nuts.
- Pour into lightly oiled 9x5x3 pan.
- Refrigerate until firm.
- Cut into small 1 to 1 1/2 pieces and roll in granulated sugar.
- Let stand at room temperature to dry.
- After 24 hours sugar again.
- You may add 1 1/2 pkg Knox gelatin for stiffer candy.
CRANBERRY CLUSTERS
Steps:
- Combine the sugar and 1/2 cup of water in a saucepan over medium heat. Stir until the sugar is dissolved. Increase the heat to high and, without stirring, cook until the syrup is golden amber or until a candy thermometer reads between 250 to 265 degrees F (hard-ball stage), about 10 minutes (see Cook's Note*). Promptly remove the saucepan from the heat.
- Working quickly, drop 3 cranberries into the caramel. Use 2 forks to coat the cranberries completely in the syrup and pull together into a cluster. Place the cranberry cluster on a waxed paper lined baking tray. Repeat with the remaining cranberries. Reheat the syrup briefly over low heat if it starts to thicken. Let the clusters cool to harden.
- Melt the white chocolate in a stainless-steel bowl over barely simmering water. Stir constantly with a rubber spatula until the white chocolate is almost completely melted. Be careful that no moisture gets into the chocolate, or it will harden. Remove the bowl from the heat and allow the white chocolate to cool slightly.
- Dip the bottom of the cranberry cluster into the white chocolate and place on a parchment paper lined baking sheet to set for approximately 20 minutes. Place clusters in paper candy cups and store in an airtight container.

- Blend the ground almonds and dried cherries together in a small blender until they form a ball.
- Stop blending the moment the blender begins to stress.
- A 600w bullet type blender is enough to make this cranberry chocolate candy recipe.
- Melt the chocolate using a bain marine, melt 3/4 bring off the heat then stir in the remaining 1/4 for easy chocolate tempering.
- Roll the cranberry almond dough into about 12 bite sized balls.
- Dip the cranberry balls in the chocolate, spooning over to coat in a thick layer of dark chocolate.

- In a microwave, melt white chocolate at 70% power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Repeat with semisweet chocolate. - 1. Boil sugar and water over medium-high heat, stirring until sugar is dissolved. Continue boiling, stirring occasionally, until sugar is a light amber color. (It's hard crack or approx. 300* on candy thermometer - although I don't use the thermometer - I go solely by the color.) This may take 30-45 minutes. 2. Remove pan from burner. (I usually tilt the pan a bit, putting a rolled kitchen towel under one side. It makes the liquid deeper and doesn't cool off as quickly.) CAREFULLY Drop 4-6 cranberries into amber liquid. Gather together into a cluster and remove with 2 forks. Place on lightly greased rack to cool. (You will use several pairs of forks - they get coated with candy quickly and don't work as well.) Repeat until you're out of cranberries or the sugar is to cool and hardened to work well. You cannot reheat the sugar. 3. When cool, gently remove from cooling rack, trying not to break the candy so that the cranberry juice leaks out. 4. Dip the bottom of each cluster into the melted white chocolate. Let dry on parchment paper.

- 1. Line a small baking sheet with waxed paper.
- 2. Place chocolate chips in a 2 cup Pyrex measuring cup and microwave on 50% power for approx 25 seconds - then stir well. Continue doing this until the chocolate chips are almost completely melted - reducing the time as you go. Be careful to not let the chocolate burn.
- 3. Add the nuts and dried cranberries to the melted chocolate and mix well.
- 4. Drop tablespoon fulls of the chocolate mixture onto the waxed paper-covered cookie sheet.
- 5. Place in the fridge for at least 15 minutes. Enjoy.
- 6. I like to store mine in the freezer.

- Combine cranberry sauce and raspberry jello in saucepan.
- Cook over medium heat stirring constantly until mixture comes to a full rolling boil.
