CRANBERRY QUICK BREAD

This Cranberry Quick Bread is incredibly moist bursting with cranberries and citrus flavor! This Cranberry Bread is quick to prepare and a delicious holiday breakfast or brunch!

1 ½ cups cranberries (fresh or frozen, roughly chopped)
1 teaspoon all-purpose flour
1 ½ cups all-purpose flour
½ cup sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¼ cup honey
2 eggs
½ cup orange juice
1 tablespoon orange zest
2 tablespoon butter (unsalted and melted)

Steps:

  • Preheat your oven to 350 F. Spray a 8.5 x 4.5-inch loaf pan with nonstick cooking spray.
  • Sprinkle a teaspoon of flour over the cranberries and mix; set aside. This will prevent the cranberries from sinking to the bottom of the bread. If using frozen cranberries, no need to thaw them out.
  • In a large bowl, combine the flour, sugar, baking powder, baking soda, salt together.
  • In a separate bowl, whisk together the honey, eggs, orange juice, orange zest and melted butter. Stir into dry ingredients, do not over mix.
  • Fold in the prepared cranberries then pour the batter into the prepared loaf pan.
  • Bake the bread for about 45 minutes to 1 hour. To test if the bread is done, insert a toothpick into the center of the bread and if it comes out clean, the bread is done, otherwise continue baking. Allow the bread to cool completely in the pan.
  • Slice and serve.

4 tablespoons unsalted butter, melted, plus more for pan
2 cups all-purpose flour (spooned and leveled), plus more for pan
1 cup packed light-brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 large egg, lightly beaten
3/4 cup whole milk
1 bag (12 ounces) cranberries
1 tablespoon turbinado sugar, for topping (optional)

Steps:

  • Preheat oven to 350 degrees; butter and flour a 9-by-5-inch loaf pan (8-cup capacity), and set aside. In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, and salt; set aside. In a medium bowl, combine butter, egg, and milk. Add wet mixture to dry mixture, and whisk to combine; fold in cranberries.
  • Pour batter into prepared pan; sprinkle top with turbinado sugar, if desired. Bake until a toothpick inserted in center of loaf comes out clean, about 1 hour and 15 minutes. Transfer pan to a wire rack; let bread cool 30 minutes. Invert onto rack, then immediately turn right side up to cool completely.

BREAD
3 c all purpose flour
1 tsp salt
2 tsp baking powder
2 c granulated sugar
zest of two large oranges
1 1/2 c buttermilk
1 c canola or vegetable oil
4 eggs slightly beaten
2 Tbsp fresh orange juice
1 tsp vanilla
12 oz bag of dried cranberries and blueberries
1 c fresh cranberries
1 c sliced almonds
GLAZE
2 c powdered sugar
3 Tbsp fresh orange juice
2 tsp orange zest
sliced almonds for garnish

Steps:

  • 1. Preheat oven to 350º. Spray TWO 8 1/2 x 4 1/2 loaf pan with cooking spray and set aside.
  • 2. In a large bowl, whisk together the flour, salt, and baking powder. In a small bowl, combine sugar and orange zest. Rub together with your fingers until fragrant. Whisk into the flour mixture. Set aside.
  • 3. In a separate medium bowl, combine the buttermilk, oil, eggs, orange juice, and vanilla.
  • 4. Slowly add the wet ingredients to the dry ingredients. Stir until just combined. Fold in the cranberries and blueberries. Pour batter into prepared loaf pan.
  • 5. Bake for 70-75 minutes, or until toothpick comes out clean. If your loaf starts to get too brown drape a piece of foil over the top to finish baking. I did this during the last 10 minutes of the baking time.
  • 6. Remove bread from oven and place on a cooling rack and cool for 15 minutes. Loosen the sides of the bread with a knife. Carefully remove loaf from pan. Let cool completely on wire rack.
  • 7. The bread on the left is the one by TwoPeasinaPod, the one on the right is my adapted version.
  • 8. Once the breads cooled I sliced them and places them in large french fries paper containers with wax paper liner and then glazed them. Then I placed in plastic bags with ties and gave them as Christmas gifts.

Fold in the blueberries, nuts and lemon zest. , Transfer to a greased 8x4-in. loaf pan. Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean. This is a recipe from one of my mother's old cookbooks. If you don't have buttermilk, sour milk will do, or you can mix 1 T vinegar with milk to make 1 cup.

1 cup cranberries
1 cup blueberries
3/4 cup sugar
1 cup brown sugar
1/2 cup butter, softened
2 eggs
1 cup buttermilk
3 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt

Steps:

  • Preheat oven to 375°F.
  • Grease two standard size loaf pans.
  • Mix cranberries, blueberries and granulated sugar together in saucepan, cooking over medium heat and stirring until sugar is dissloved.
  • Remove from heat and set fruit aside to cool.
  • Mix brown sugar and butter in mixing bowl and beat until blended. Add eggs and beat well.
  • Stir in buttermilk.
  • Mix flour, baking soda, baking powder and salt in a bowl and stir until well mixed.
  • Add to butter mixture and stir until just blended.
  • Stir in fruit and sugar mixture.
  • Spoon batter into greased loaf pans.
  • Bake for 1 hour and ten minutes or until a toothpick comes out clean when inserted into center.
  • Remove and cool.

1 large egg, room temperature
1 cup 2% milk
1/2 cup orange juice
3 tablespoons canola oil
2 to 3 teaspoons grated orange zest
2 cups coarsely chopped fresh or frozen cranberries
1 large apple, peeled and chopped

Steps:

  • In a large bowl, combine the flour, sugars, baking powder, salt, cinnamon and nutmeg. Whisk the egg, milk, orange juice, oil and orange zest; stir into dry ingredients just until blended. Fold in the cranberries and apple., Pour into 2 greased 8x4-in. loaf pans. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Freeze option: Securely wrap cooled loaves in foil and freeze. To use, thaw at room temperature.

2 Tbsp all purpose flour
2 c. blueberries (fresh)
1 c. butter (softened)
8 oz cream cheese (softened)
1 1/2 c. sugar
1 1/2 tsp vanilla extract
4 eggs
2 c. all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt

Steps:

  • Preheat oven to 350 degrees F.
  • In a mixing bowl toss blueberries with 2 Tbsp flour. Set aside.
  • In a large mixing bowl cream together butter, cream cheese, sugar and vanilla. Add eggs, one at a time, beating well after each addition.
  • In another bowl combine the rest of the flour, baking powder and salt. Slowly mix into wet batter until combined. Fold in blueberries.
  • Pour batter into two greased 9'' x 5'' loaf pans and baked for approximately 45 minutes or until a toothpick inserted into the middle of the loaves comes out clean.
  • Let rest on wire rack for 10 minutes. Run a knife along the outside of the pan and then flip bread out and let cool completely on wire rack.

Steps:
