CRANBERRIES IN THE SUN
Entered for safe-keeping. From Mr. Ken Jernigan, Titusville, Florida, as submitted to BH&G. What imagination to combine rice, mandarin oranges, and whipping cream, and then top it off with a cranberry sauce!

Steps:
- Drain mandarin oranges, reserving 1 tablespoon liquid.
- Whip cream; fold in rice, orange peel, and mandarin oranges. Chill.
- In small saucepan, break up cranberry sauce; stir in sugar, cornstarch, lemon juice, and reserved mandarin orange syrup. Cook and stir until mixture is thickened and bubbly.
- Cool sauce to room temperature.
- Spoon mounds of rice mixture on lettuce leaves.
- Halve orange slices and arrange around mounds.
- Spoon cranberry sauce on top.
