APPLE-CRANBERRY SALSA

Steps:

• Combine all ingredients, except for the cranberries and apples, in your food processor.
• Pulse until mostly chopped into small (1/4″-1/2″) pieces.
• Add the cranberries and again pulse until roughly chopped.
• Add the sliced Autumn Glory Apples and pulse until there are no pieces bigger than 1/4″ in diameter. Add more sugar if necessary.
• Serve with sliced apple, pita chips, or tortilla chips.

FRESH CRANBERRY APPLE SALSA

Steps:

• 1. Wash and prepare all produce. Dry off as much moisture as possible. In food processor bowl pulse cranberries, apple, bell peppers, red onion, and jalapeno to desired consistency. I like mine pretty small. Finely dice green onions and cilantro and grate ginger by hand to retain it's structure.
• 2. Mix all together in large bowl..adding remaining ingredients. Let marry, covered in fridge for a few hours. Serve over a block of creamed cheese with plain tortilla chips. I like to make apps with Tostito's Scoops, creamed cheese, and salsa on top. Yummm!
• 3. I have not made cranberry sauce since I started making this salsa. It's more to my family's liking. Try it on a turkey sandwich instead of cranberry sauce. I think you will love it as much as I do.

UNCLE BILL'S CRANBERRY SALSA

Steps:

• Rinse cranberries in cold water.
• In a food processor, add cranberries, apple, red pepper and onion and pulse until coarsely chopped.
• Transfer to a mixing bowl and set aside.
• In a separate mixing bowl, stir together sugar, apple juice, cilantro, Jalapeno pepper and lime zest; mix well to blend.
• Add this mixture to the cranberry mixture and mix well to blend.
• Spoon into jars with a cover and refrigerate.
• To prepare Tortillas:.
• Heat oven to 375°F.
• Using a tree-shaped cookie cutter, cut 6 trees from each tortilla, or cut the tortillas into wedges.
• Place cut tortilla on an ungreased cookie sheets.
• Bake in preheated 375 F oven for 8 minutes or until crisp.
• You may also place the cut tortillas on parchment paper and microwave on HIGH (full power) for 1 1/2 to 2 minutes or until nice and crisp.
• Store tortilla chips in a plastic bag.
• Serve cranberry salsa with tortilla chips.
• Frozen cranberries can also be used to make the salsa.
