4 cups oyster crackers
1/4 cup butter
1/4 cup olive oil
1 teaspoon garlic salt
1/4 teaspoon pepper
1 dash cayenne pepper
2 dashes italian seasoning

Steps:

  • melt butter.
  • add olive oil.
  • add remaining ingredients.
  • simmer 1 minute.
  • Add crackers and stir to coat for30 seconds.
  • serve.

Another one I'm saving from Southern Living. I LOVE fried oysters. Raw or fried are the only way I eat 'em. So yummy.

1 quart fresh oyster, rinsed and drained
1 large egg, beaten
36 saltines, crushed to crumbs (1 sleeve)
1 cup ketchup
1 tablespoon horseradish
hot sauce
canola oil

Steps:

  • Dip oysters in egg then dredge in cracker crumbs.
  • Let sit in fridge for 2 hours.
  • Stir together ketchup, horseradish, and hot sauce (to taste) and chill.
  • Fry oysters in 1" oil at 350F 3-4 minute until golden.
  • Serve immediately with sauce.

PARMESAN OYSTER CRACKERS

2 cloves garlic
Kosher salt and freshly ground black pepper
1/2 stick unsalted butter
2 tablespoons extra-virgin olive oil
2 cups oyster crackers
1 handful flat-leaf parsley, finely chopped
1/4 cup grated Parmigiano-Reggiano

Steps:

  • Preheat oven to 250 degrees F.
  • Chop garlic cloves then sprinkle with some salt and smash to make a paste. Set a large nonstick pan over medium heat. Add butter, oil and garlic and swirl pan. Add oyster crackers and chopped flat-leaf parsley and toss to coat. Spread out on a sheet tray, season with salt and pepper and sprinkle with shredded Parmigiano. Pop into the oven and bake for 25 to 30 minutes until golden and crispy.

24 shucked medium to large oysters
3 large eggs
2 sleeves saltine crackers (8 ounces), pulsed to coarse meal (no bigger than 1/8") in a food processor
Corn or vegetable oil (for frying)
Kosher salt

Steps:

  • Drain oysters. Beat eggs in a medium bowl to blend. Add oysters and turn to coat completely. Pour half of saltine crumbs into a 13x9x2" baking dish. Working in batches, lift oysters with a slotted spoon, allowing excess egg to drain back into bowl, and transfer to baking dish. Scatter remaining crumbs over oysters and toss to coat. Cover dish and chill for 2-3 hours. Line a plate with paper towels. Pour oil into a medium heavy skillet to a depth of 1/2". Prop deep-fry thermometer in skillet so bulb is submerged. Heat oil over medium heat to 375°F. Working in batches, fry oysters, turning once, until coating is crisp and deep golden brown, about 1 minute per batch. Transfer to paper towels; season with salt.

2 dozen shucked large raw oysters, drained
2 eggs, beaten
3 cups cracker crumbs
3/4 to 1 teaspoon salt
1/4 teaspoon pepper
Snipped parsley or paprika
Lemon wedges

Steps:

  • Heat the butter and oil in a skillet. Roll the oysters in the egg and crackers crumbs and sprinkle with salt and pepper. Saute the oysters, turning once, until golden brown. Sprinkle the parsley or paprika on top and garnish with lemon.

3 dozen small fresh oysters, shucked
2 eggs
1/3 cup all-purpose flour
1 cup finely ground saltine crackers
6 tablespoons butter
3 tablespoons vegetable oil

Steps:

  • Drain oysters; blot oysters dry on paper towels.
  • In a small bowl, beat the eggs slightly.
  • Place flour and cracker crumbs on separate sheets of waxed paper.
  • Lightly coat oysters in flour; shake off the excess; dip into egg, then in crumbs, pressing crumbs to adhere.
  • Place on a sheet of waxed paper.
  • Heat 2 tablespoons butter and 1 tablespoon oil in a large skillet over med-high heat until butter is melted.
  • Add 1/3 of the oysters; saute 2 minutes or until golden brown.
  • Turn oysters and saute another 2 minutes.
  • Remove to a baking sheet lined with paper towels; keep warm in low oven.
  • Wipe skillet clean; fry remaining oysters in 2 batches; serve warm.
