Steps:
- Coat each zucchini slice with egg, then press into cracker crumbs, coating both sides. Shake off excess and place the breaded zucchini onto a plate while breading the rest; do not stack.
- Heat olive oil in a large skillet over medium heat. Pan fry zucchini until crust browns and zucchini softens, about 3 minutes on each side. Season with salt and pepper.

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and spray with cooking spray.
- Stir bread crumbs and Parmesan cheese together in a shallow bowl. Whisk eggs in a separate shallow bowl.
- Working in batches, dip zucchini strips into egg mixture, shake to remove any excess, and roll strips in bread crumb mixture to coat. Transfer coated zucchini strips to the prepared baking sheet.
- Bake zucchini fries in the preheated oven, turning once, until golden and crisp, 20 to 24 minutes.

An excellent snack or appetizer at any time or at a party. I have been making this recipe for over 30 years. Enjoyed by all that love zucchini.

Steps:
- Wash and trim zucchini, (DO NOT PEEL).
- Cut zucchini into about 2 1/2" long by 1/2" thick strips.
- In a medium-size mixing bowl, beat eggs and milk until fluffy.
- In a plastic bag, add flour, seasoning salt and shake well.
- In a separate plastic bag, add finely crushed saltine crackers.
- Dip zucchini strips in egg mixture.
- Drop into flour mixture and shake well to coat.
- Dip again into egg mixture.
- Drop into crushed crackers and shake well to coat.
- Heat olive oil to 325 F to 350 F in a medium-size frying pan or use a deep fryer.
- Drop coated zucchini (a few at a time) in the hot oil and cook until lightly browned, about 2 minutes, turning once, (DO NOT OVERCOOK).
- Zucchini should be crunchy.
- Serve immediately with Bearnaise Sauce as a dip.
- SAUCE FOR DIPPING: Prepare contents of Bearnaise sauce according to package directions or make your own.
- NOTE: Instead of using plastic bags, place the flour mixture in a mixing bowl, and the crumbs in a separate bowl. This will not be quite as messy.
- Also, Panko crumbs would be excellent or cornflake crumbs.

RITZ ZUCCHINI CHEDDAR CASSEROLE
This ritz cracker zucchini cheddar casserole is truly addicting! You can use yellow squash and or zucchini. I have made it for gatherings and people who don't usually like zucchini, love it!

- 1. In a large frying pan, saute, in butter, zucchini and onion till soft and transparent. Add salt and pepper to taste. Set aside.
- 2. I a large bowl, mix crushed crackers and cheddar cheese. Place 1/2 of cracker/cheddar mixture into sauteed zucchini and onions. (reserving the other 1/2 as the topping.)
- 3. In a separate medium bowl, whisk the eggs and milk well. Pour this into the zucchini mixture and blend well. I use the same big frying pan to mix all these steps.
- 4. Place zucchini mixture into a 2 quart baking dish. Top with remaining cracker/cheddar mixture.
- 5. Bake in a preheated oven at 400 degrees for about 20-25 minutes, until golden brown on top.

FRIED ZUCCHINI CHIPS RECIPE
You can never have too many zucchini recipes! Especially during the summer when you have too much zucchini! These buttery, lightly salted pan fried zucchini crisps are absolutely addictive!

- Begin by slicing a zucchini into thin slices.
- Line the slices up in a single layer on a cutting board and lightly sprinkle with salt. This will pull the extra moisture out while you prepare the other ingredients.
- In a gallon size bag crush the saltine crackers into crumbs that are not fine crumbs but small crumbs.
- Crack a couple eggs into a small bowl and whisk them well.
- Heat a frying pan to medium low to medium heat.
- While the pan is heating pat the zucchini dry with a paper towel pressing down on the slices to squeeze out extra moisture.
- Add the butter and olive oil to the pan.
- Dip the sliced zucchini in the egg mixture first then the cracker crumbs.
- Add in a single layer to the frying pan and cook until golden brown on the bottom.
- Flip them over and cook the other side.
- Remove the crispy chips from the frying pan and place them on a plated lined with paper towels!
- TIP - For a little something extra sprinkle the hot tops with a little parmesan cheese!
- Carefully wipe out the frying pan, add more butter and olive oil to your frying pan and repeat.
