Steps:

  • Combine first 4 ingredients, mix in hash browns. Spread into a 9x13 pan. Bake at 400 for 45 to 60 minutes. I divided the potatoes into 3 small 7x7 disposable foil pans and froze them. I wrapped them with plastic wrap and then foil.

12 small-medium Yukon potatoes
1/2 cup olive oil
2 sprigs fresh thyme, plus 1/2 tablespoon chopped fresh thyme leaves
Coarse salt and freshly cracked black pepper
1 clove garlic, sliced

Steps:

  • Using the rolling pin or a heavy pan, gently smack the potatoes, 1 potato at a time, until the skin begins to split, exposing the interior of the raw potato.
  • Over low heat, add the olive oil to a medium-sized heavy-bottomed saucepan, then add the potatoes and thyme sprigs and season generously with salt and pepper. Place the lid on the pan and allow to cook, undisturbed, shaking the pan every 5 minutes or so, until the bottoms of the potatoes are browned, about 10 to 12 minutes. (Check occasionally to make sure the potatoes aren't browning too quickly and adjust heat accordingly.) Turn the potatoes to their second side, replace the lid, and continue cooking undisturbed a further 5 to 8 minutes.
  • Remove the lid and cook a further 2 to 3 minutes, for the condensation to evaporate.
  • Remove the thyme sprigs and add the sliced garlic and chopped fresh thyme and cook until the garlic is caramelized and chewy, about 2 minutes. Serve hot.

16 oz shredded hash browns, (thawed)
8 oz sour cream
½ lb bacon
2 cups cheddar cheese, (shredded)
½ envelope dry Ranch dressing mix

Steps:

  • Preheat oven to 400° F.
  • Spray a casserole dish with nonstick spray.
  • Cook bacon until crisp. Drain on paper towel lined plate. Chop bacon into bits.
  • Shred cheddar cheese.
  • In a large mixing bowl combine thawed hashbrowns, bacon bits, ½ the shredded cheddar cheese, sour cream and Ranch dressing mix.
  • Spread potato mixture evenly in prepared casserole dish.
  • Top potato mixture with remaining cheese and cover casserole with foil.
  • Bake covered for 45 minutes.
  • Remove foil and continue baking for another 10-15 minutes or until casserole is hot, bubbly and the edges are lightly browned.
  • Let casserole sit for 10 minutes before serving.

Steps:

  • Preheat oven to 400 degrees F.
  • Put prepared potatoes in an 8 x 8 in. glass dish. Put butter cubes on top of potatoes. Sprinkle bacon bit on top. Cover with aluminum foil and bake in preheated oven for 1 hour or until potatoes are fork tender.
  • Take potatoes out of oven and top with ranch dressing and cheese. Stir. Put back in oven until cheese is melted about 5 minutes.

4.3 ounces bacon crumbles (like these)

Steps:

  • Put 1 3/4 pounds baby potatoes in a pot and cover with water. Add 2 bay leaves, 2 garlic cloves and a big pinch of salt; bring to a boil. Reduce to a simmer and cook until the potatoes are tender, 20 to 25 minutes. Drain, discarding the bay leaves and garlic. a small thinky sliced red onion
3 tbsp roughly chopped parsley

Steps:

  • Boil the new potatoes for 15-20 minutes then drain and return to the pan. Lightly bash each potato with a masher or fork so they are cracked but still whole. Return to the heat and pour in the white wine. Boil fiercely for 2-3 minutes until most of the wine has evaporated. Stir in the olive oil, small thinly sliced red onion and roughly chopped parsley. Season and toss together.
