20 oz pineapple juice
1 Cup Brown Sugar

Steps:

  • Place ham in slow cooker.
  • Pour juice over top and pack ham with brown sugar.
  • Cook on low for 6-8 hours

  • Combine first 4 ingredients, mix in hash browns. Spread into a 9x13 pan. Bake at 400 for 45 to 60 minutes. I divided the potatoes into 3 small 7x7 disposable foil pans and froze them. I wrapped them with plastic wrap and then foil.

  • Spread about 1 1/2 cups of brown sugar on the bottom of the slow cooker crock. Place the ham flat side down into the slow cooker - you might have to trim it a little to make it fit. Use your hands to rub the remaining brown sugar onto the ham. Cover, and cook on Low for 8 hours.

This recipe is from "Forking Fantastic"; a hilarious cookbook by Zora O'Neill and Tamara Reynolds. Also known as Ham with Bourbon and Brown Sugar Glaze, it's quite addictive, hence the name!!!! Great, EASY way to class up a store-bought ham for the holidays. I have added 1/4 to 1/2 tsp. of cayenne pepper to the glaze with yummy results - gives it a sweet-spicy crust - mmmmmmmm :)

10 lbs cooked ham, preferably bone-in shank portion
2 cups Bourbon
2 cups orange juice
3 cups dark brown sugar, equivalent to one pound
1/3 cup Dijon mustard
1/2 cup molasses
salt (optional)

Steps:

  • Preheat the oven to 400°. Rinse the ham and slice off the tough outer skin, taking care not to remove too much of the fat along with it. Score the ham, cutting long crisscrossing lines at least ¼ inch deep and 1 inch apart all over. Place the ham in a heavy nonreactive (glass or stainless steel) roasting pan or baking dish and slowly pour ½ cup bourbon over the meat, letting it sink in as much as possible. Place the ham, uncovered, in the oven.
  • In a saucepan, boil the orange juice until reduced by half. Remove from the heat and stir in the brown sugar, mustard, molasses and the remaining 1½ cups of bourbon.
  • After the ham has baked for about 45 minutes, remove it from the oven and cover with the glaze, making sure you get into all the crevices that have now opened up; pour the remaining glaze into the pan. Return the ham to the oven and bake for at least 1½ hours longer, brushing it with glaze very 30 minutes or so (if the top of the ham begins to burn, cover it with aluminum foil). When the glaze is well-browned, remove the ham from the oven, place it on a serving platter and cover loosely with foil.
  • Taste the juices from the roasting pan and season with salt if needed. Pour some of the sauce over the ham and place the rest in a serving bowl. Serve immediately, carving the ham at the table.

1½ pounds boneless, skinless chicken breasts
salt and pepper (to taste)
¾ cup cream cheese (softened)
¾ cup shredded cheddar cheese (divided)
5 slices thick cut bacon (cooked and crumbled, divided)
1 ounce dry ranch dressing mix (1 package)
4 green onions (thinly sliced)

Steps:

  • Preheat oven to 400 degrees.
  • Spray bottom of 9x13" baking pan with non-stick cooking spray.
  • Pound chicken breasts until they about about 1/4" thick (you want them to all be the same thickness so that they finish cooking at the same time).
  • Place chicken in a single layer in the baking pan and season with salt and pepper (sometimes I also season the chicken with a little bit of onion powder and garlic powder as well).
  • In a medium bowl, mix together the cream cheese, half of the shredded cheddar cheese, half of the bacon crumbles, and the dry Ranch dressing mix.
  • Spread the cream cheese mixture evenly over all the chicken breasts in the pan.
  • Top the chicken with the remaining shredded cheddar cheese.
  • Cook in oven for 20-25 minutes or until chicken is fully cooked (internal temperature of 165 degrees).
  • Remove chicken from oven and top with remaining bacon crumbles and green onion.

These Crock Pot Ham and Swiss Sliders are made in your casserole crock pot and super easy to make! You will love this crowd pleasing recipe!

12 Hawaiian rolls (kept together and not broke apart)
1/2 lb thinly sliced deli ham
8 slices Swiss cheese
1/2 cup Butter (melted)
1 teaspoon dijon mustard
1 teaspoon poppy seeds
1/2 teaspoon dried minced onions
1/2 teaspoon Worcestershire Sauce
1/4 teaspoon salt
1/4 teaspoon Pepper

Steps:

  • Place all the rolls on a large cutting board and take a large knife to slice all your rolls in half at the same time (do not break them apart) and gently remove the tops as one big piece.
  • Layer ham slices on the bottom halves of the rolls that are still all connected.
  • Layer Swiss cheese slices across the top of the ham.
  • As one piece, place the top halves of your rolls back on top of the bottom part of the sliders.
  • Pick up the cutting board and gently slide the sliders as one large loaf off the cutting board and into a casserole crock pot.
  • In a small bowl or coffee cup, mix together remaining ingredients.
  • Brush the tops of the sliders with the butter mixture liberally with a basting brush.
  • Cover and cook on high for 1.5 to 2 hours, turning your insert halfway through if your slow cooker doesn't cook evenly.
  • If desired and your insert is broiler safe, place your rolls on the lower rack in your oven with your broiler on high for 30-60 seconds to crisp up the tops. (Watch continually and do not walk away. You can go from perfection to burnt very quickly in a broiler.)
  • Cut the sliders apart and serve
