SAUTEED CRAPPIE WITH BUTTER SAUCE



Sauteed Crappie with Butter Sauce image

8 3 ounce crappie fillets (skin removed)
1 cup all-purpose flour
1 tablespoon salt
1/2 teaspoon white pepper
1 tablespoon garlic powder
5 tablespoons butter (chilled)
2 tablespoons olive oil
1/4 cup dry white wine
1 lemon (juice only)
1/3 cup fresh basil leaves
8 slices tomato (about 1/4-inch thick)
1 avocado sliced into 8 thin slices

Steps:

  • Combine flour, salt, white pepper and garlic powder in a small bowl. Dust fish with flour mixture.
  • Heat 2 tablespoons of the butter and the olive oil in a large skillet over medium heat. Add fish and brown on one side, about 3 - 4 minutes. Flip fish over and cook for 2 more minutes. Remove fish and keep warm.
  • Add wine and lemon juice and stir to loosen bits stuck to pan. Reduce liquid to just a few tablespoons. Stir in basil and remaining chilled butter, stirring until butter is melted. Remove from heat.
  • For each serving, arrange 1 slice of tomato on a plate. Top with 1 piece of fish and then avocado slices. Place tomato over avocado, then fish and then 2 mores slices avocado. Drizzle butter sauce over and serve.

2- 9 ″ deep pie crusts (baked 3 minutes and cooled)
1 pound lump crab meat
4 eggs
2 tablespoon flour
1 cup mayonnaise
1 cup whole milk
8 ounce shredded Swiss cheese
8 ounce shredded Cheddar cheese
2 teaspoons Old Bay seasoning
1 tablespoon finely chopped onion
1 tablespoon finely chopped green pepper
(Note: You can use backfin, it is fine. Lump is the most expensive and not necessary.)

Steps:

  • Preheat oven to 350ºF Bake your crust for 3 minutes. We used Pillsbury pie dough and it worked out great. We did spray the pie pans with Pam spray to keep the crust from sticking. Combine eggs, flour, mayonnaise and milk, mix well. Add cheese, 1 teaspoon Old Bay, onion and pepper and mix well. Fold in crab meat and try not to separate the lumps of crab meat too much. Pour into 2 separate pie crusts, sprinkle with additional Old Bay Seasoning. Bake at 350ºF for 50 minutes or until knife comes out clean. (Check at about 40 minutes to avoid burning, since ovens vary.)

This recipe was passed on to me by a co-worker. My husband fishes so much so we are always trying new ways to cook our fillets. This is approximately the amounts I use, but it's easy to adjust and so quick to make.

7 crappie fillets, fresh caught or thawed from freezer
1/2 c ranch dressing (bottled kind)
2 Tbsp garlic salt
sour cream & chedder cheese potato chips

Steps:

  • 1. Spray 9 x 12 baking dish with Pam or other sprays
  • 2. Layer fillets in dish, (can add more than 7 if cooking for more than a couple). Coat each fillet good with the Ranch Dressing. Again may take more than 1/2 cup of the dressing if more fillets added.
  • 3. Sprinkle the garlic salt over the fillets.
  • 4. Crush as many of the potato chips needed to completely cover the fillets..just need a light layer over them
  • 5. Top with shredded cheddar cheese. I have found to keep the cheese from getting too cooked I will bake the recipe first then add cheese just last few minutes of baking time. Bake at 325 for approximately 15 min or until fish is tender.

1/2 cup chopped onion
1/4 cup chopped celery
1 teaspoon salt
1/4 teaspoon cayenne
1 1/2 cups milk
1 lb lump crabmeat, picked over for shells and cartilage
3 tablespoons chopped parsley
3 tablespoons chopped green onions
1/2 cup dried fine breadcrumbs
2 teaspoons rustic dry rub seasonings
4 ounces grated white cheddar cheese (about 1 cup)

Steps:

  • Preheat oven to 400ºF.
  • Combine the butter and flour in a skillet over medium heat.
  • Stir for 3 to 4 minutes, or until well blended.
  • Add the onions, celery, salt, and cayenne.
  • Cook, stirring for 3 to 4 minutes, or until slightly soft.
  • Add the milk.
  • Stir for 3 to 4 minutes, or until the sauce thickens slightly.
  • Add the crabmeat, parsley, and green onions.
  • Stir and cook for about 1 minute.
  • Remove from the heat.
  • Pour the mixture into a 9-inch glass pie dish or 6 small ramekins.
  • Combine the bread crumbs and the rub.
  • Sprinkle over the top of the crabmeat mixture.
  • Sprinkle the cheese over the bread crumbs.
  • Bake for about 20 minutes or until bubbly and brown.
  • Remove from the oven and let stand for 2 minutes before serving.

When spring is in the air, fried crappie is what all of the fishermen around here are talking about. This year I left the deep-fryer in the cabinet and used my air fryer for a healthier alternative. Serve with malt vinegar, tartar sauce, cocktail sauce, hot pepper sauce, or the condiments of your choice.

1 pound fresh crappie fillets
2 tablespoons salt
½ cup yellow cornmeal
¼ cup all-purpose flour
1 teaspoon seasoned salt (such as LAWRY'S®)
1 teaspoon paprika
½ teaspoon ground black pepper
¼ teaspoon cayenne pepper
cooking spray

Steps:

  • Place crappie fillets in a bowl. Add salt and water to cover. Cover and let sit to draw out all the blood, about 30 minutes. Rinse fillets thoroughly to remove salt. Pat dry with paper towels.
  • Preheat the air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions.
  • Add cornmeal, flour, seasoned salt, paprika, pepper, and cayenne to a gallon-sized zip-top bag. Seal and shake until evenly combined. Drop 2 fillets into the bag, seal, and shake to coat. Transfer to a plate. Repeat with remaining fillets.
  • Spray the tops of the fillets with nonstick cooking spray. Place a layer of fillets in the air fryer basket, sprayed-side down, making sure none are overlapping. Spray the tops with cooking spray. Cook for 4 minutes. Carefully flip and spray any chalky spots. Cook until crispy, about 4 minutes more. Repeat with remaining fillets.
