After searching for yet another way to use garden zucchini, I found a recipe for a crab stuffing that after many tries I think I have perfected!

4 zucchini, ends trimmed
1 tablespoon butter
½ onion, finely chopped
1 clove garlic, finely chopped
½ green bell pepper, finely chopped
1 pound crabmeat
1 teaspoon ground paprika
salt and ground black pepper to taste
1 cup Italian seasoned bread crumbs
¼ cup mayonnaise, or as needed
¼ cup dry white wine
3 tablespoons butter, melted
½ cup shredded Parmesan cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Slice the zucchini in half the long way, and scoop out the seeds and flesh, leaving a 1/2-inch thick shell all around. Discard flesh, or save for another use. Bring a pot of lightly salted water to a boil, and immerse the zucchini boats in the boiling water for 2 minutes. Remove from the water, drain, and place into a 9x12-inch baking dish. With a paper towel, blot away any excess water from the inside of the zucchini.
  • Melt 1 tablespoon of butter in a skillet over medium heat; cook and stir the onion, garlic, and green pepper until the onion is translucent, about 5 minutes. Gently stir in the crabmeat, and cook about 5 more minutes, until the crabmeat is hot. Keep the crabmeat in lump pieces as much as possible. Season the crab mixture with paprika, salt, and black pepper.
  • Place the crab mixture into a mixing bowl, and lightly stir in bread crumbs, mayonnaise, and white wine. Add a bit more mayonnaise to help the mixture hold together, if needed. Spoon the filling into the prepared zucchini shells, and brush each zucchini with about 3/4 tablespoon of melted butter. Top each stuffed zucchini with 2 tablespoons of Parmesan cheese.
  • Bake in the preheated oven until the cheese melts and the filling is hot, about 15 minutes.

1-1/2 pounds lean ground beef (90% lean)
1 large onion, chopped
1 large green pepper, chopped
1 jalapeno pepper, minced
1-1/4 cups soft bread crumbs
1 large egg, beaten
1 tablespoon dried parsley flakes
1 teaspoon dried basil
1 teaspoon Italian seasoning
1 teaspoon salt
1/8 teaspoon pepper
2 cans (8 ounces each) tomato sauce, divided
2 medium tomatoes, coarsely chopped
4 medium zucchini
2 cups shredded mozzarella cheese

Steps:

  • In a large bowl, combine first 11 ingredients and 1 can of the tomato sauce; mix well. Stir in tomatoes. Halve zucchini lengthwise; scoop out seeds. Fill with meat mixture; place in two 13x9-in. baking dishes. Spoon remaining tomato sauce over each. , Bake, uncovered, at 375° until the zucchini is tender, about 45 minutes. Sprinkle with cheese during the last few minutes of baking.

This a delicious way to use up all that summer squash! I will often make this recipe on Sunday and then have an easy, nutritious lunch ready for the week.

2 tablespoons butter
2 tablespoons extra-virgin olive oil
1 onion, chopped
3 cloves garlic, minced
2 large zucchini, trimmed and halved lengthwise
1 cup Italian-seasoned bread crumbs
1 ½ tablespoons dried parsley
½ teaspoon salt
¼ teaspoon freshly ground black pepper
1 pound imitation crabmeat
2 ½ teaspoons lemon juice
½ teaspoon ground mustard
2 tablespoons grated Parmesan cheese, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat butter and olive oil in a large skillet over medium heat. Add onion and garlic; cook and stir until onion is soft but not browned, about 5 minutes.
  • Scoop flesh from the zucchini halves using a spoon, leaving a 1/4-inch layer intact. Chop zucchini flesh and stir into the skillet. Cook until soft, 3 to 5 minutes. Stir in bread crumbs, parsley, salt, and pepper. Reduce heat to low.
  • Flake crabmeat into the skillet, leaving some larger chunks. Add lemon juice and ground mustard. Cook until crabmeat is heated through, 2 to 3 minutes. Remove from heat.
  • Divide crabmeat mixture evenly among the zucchini halves. Sprinkle Parmesan cheese on top.
  • Bake in the preheated oven until zucchini is soft, 20 to 30 minutes.

2 zucchini, sliced vertically, ends removed
3 Tablespoons olive oil
8 Tablespoons crab cake mixture *

Steps:

  • Preheat the oven to 350°.
  • After slicing the zucchini, use a spoon to scoop out the flesh and seeds. Set aside for use in another dish, such as Zucchini Scrambled Eggs.
  • Brush 1 Tablespoon of olive oil over the tops and insides of the zucchini boats. Place the remaining 2 Tablespoons of olive oil in the bottom of the baking dish.
  • Add the zucchini boats to the baking dish. If needed, slice a bit of the bottom off of each zucchini so it lies flat in the pan.
  • Scoop 2 Tablespoons of crab cake mixture into each zucchini boat.
  • Bake for about 20 minutes., or until the zucchini boat is soft.

Crab Salad-Stuffed Zucchini image

Number Of Ingredients 10

2 medium zucchini, halved lengthwise
Kosher salt
1/2 pound jumbo lump crabmeat, picked through
3 tablespoons fresh lemon juice
3 tablespoons extra-virgin olive oil
1/4 cup mayonnaise
1 tablespoon Creole-style mustard
1/2 teaspoon Worcestershire sauce
1/8 teaspoon cayenne pepper
Paprika, celery leaves and scallions, for topping

Steps:

  • Fill a large pot with about 1 inch of water and fit with a steamer basket; bring to a boil. Meanwhile, scoop out the seeds from the zucchini, leaving a 1/4-inch-thick shell. Season the zucchini with salt, then arrange in the steamer basket; cover and steam until crisp-tender, 5 minutes.
  • Combine the crabmeat, 1 tablespoon lemon juice, 2 tablespoons olive oil and 1/4 teaspoon salt in a medium bowl. In another bowl, combine the mayonnaise, mustard, 1 tablespoon lemon juice, the Worcestershire sauce, cayenne and 1/4 teaspoon salt.
  • Blot the zucchini dry with paper towels and brush with the remaining 1 tablespoon each olive oil and lemon juice. Fill with the crab mixture and top with the spicy mayonnaise. Sprinkle with paprika, celery leaves and scallions.

  • Preheat oven to 400F. Line a baking pan with foil. Slice the zucchini in half the long way, and scoop out the flesh using a melon baller leaving about 1/2-inch thick skins. Reserve the flesh and set aside. Drizzle the zucchini flesh side with 1 tsp olive oil and season with 1/2 tsp salt and 1/2 tsp pepper. Place on the foil, hulled side down. Bake for 10 minutes.
  • While the zucchini is baking in a skillet add 2 tsp olive oil and heat over medium. Coarsely chop the zucchini flesh. Place the shallots in the pan with the zucchini flesh. Stir and cook for 5 minutes or until it begins to soften. Add in the garlic, remaining salt and pepper.
  • Cook for 2-3 minutes until the zucchini is mixture is soft but not mushy. Add in the lemon juice and crab meat. Gently stir and cook for 30 seconds just to heat the crab.
  • When the zucchini is done baking, remove from the oven and set aside leaving the oven on. Transfer the crab mixture to a bowl. Add in 1/3 cup of panko and 1 cup of gruyere. Gently combine. The mixture will be loose but will clump slightly if pressed together.
