Crab Canapes image

An absolutely delicious appetizer. To freeze: Freeze canapes uncovered until solid. Wrap well and return to freezer. Reheat at 400 degrees F (205 degrees ) until heated through.

6 ounces imitation crabmeat
1 tablespoon thinly sliced green onion
1 cup shredded Swiss cheese
½ cup mayonnaise
¼ teaspoon curry powder
½ teaspoon salt
1 teaspoon lemon juice
1 (8 ounce) can refrigerated dinner roll dough

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Lightly grease a baking sheet.
  • In a medium bowl, combine the crabmeat, green onions, cheese, mayonnaise, curry powder, salt and lemon juice. Mix well.
  • Separate each refrigerator roll into three layers, making 36 pieces total. Place the pieces on the prepared baking sheet. Spoon a small amount of the crabmeat mixture onto each pieces of dough.
  • Bake at 400 degrees F (205 degrees C) for 12 minutes, until puffed and brown. Serve hot.

3/4 cup chopped imitation crabmeat

2 packages (1.9 ounces each) frozen miniature phyllo tart shells

Steps:

  • In a small bowl, beat cream cheese and horseradish until smooth. Stir in crab and onion. Spoon 2-3 teaspoonfuls into each tart shell; sprinkle with paprika. , Place on a baking sheet. Bake at 350° for 16-18 minutes or until tops begin to brown.

1 cup processed cheese sauce
½ teaspoon garlic salt
½ teaspoon seasoning salt
1 (6 ounce) can crabmeat
6 English muffins, split in half

Steps:

  • In a medium mixing bowl, blend butter, cheese, garlic salt, seasoning salt, and crab meat. Spread mixture on split muffins. Freeze until ready to use. When ready, thaw for 10 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut muffins into 6 pie shaped slices and place on cookie sheet.
  • Bake at 400 degrees F (200 degrees C) for 12 minutes.

CRAB SALAD CANAPES

1 orange bell pepper
4 tablespoons unsalted butter, room temperature
2 teaspoons whole-grain mustard
2 teaspoons Dijon mustard
1/2 baguette or ficelle, cut into 1/4-inch-thick pieces
1/4 pound jumbo lump crabmeat, picked clean
1/2 celery stalk, strings removed, cut into 1/8-inch-thick slices
1/2 small carrot, peeled and cut into 1/2-inch-long matchsticks
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
Salt and freshly ground black pepper, to taste
2 teaspoons extra-virgin olive oil
1 tablespoon white-wine vinegar
1 tablespoon fresh marjoram leaves, for garnish

Steps:

  • Heat a grill to hot, or turn on the broiler. Cook bell pepper until it is completely charred, turning so all sides cook evenly, 8 to 10 minutes. Transfer warm pepper to a small bowl, cover with plastic wrap, and set aside until cool.
  • Using your hands, rub off charred skin. Slice pepper in half, and remove seeds and stem. Cut pepper into diamond shapes that are slightly larger than a piece of baguette.
  • Using a wooden spoon, mix together butter and two mustards in a small bowl until well combined. Spread a generous dollop of mustard butter on each slice of bread.
  • Place remaining ingredients except marjoram in a medium bowl, and toss to combine. Place a pepper diamond on each piece of bread, and top with a mound of crab salad. Garnish each canape with several marjoram leaves, and serve.

CRAB, LIME & CHILLI TOASTS

1 small baguette , cut into 12 slices
2 tbsp olive oil
140g white crabmeat
1 red chilli , deseeded and finely chopped
1 tbsp coriander , chopped
zest and juice 1 lime

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the baguette slices onto a baking tray, drizzle over half the oil, add some seasoning, then bake for 5 mins until golden at the edges.
  • Meanwhile, mix the crab, chilli, coriander, lime zest and juice with the remaining oil and some seasoning, then spoon on top of the toast just before you serve.

2 tablespoons unsalted butter
2 tablespoons all-purpose flour
3/4 cup milk
3/4 teaspoon coarse salt
Freshly ground black pepper
6 extra-thin slices white sandwich bread
4 ounces fresh crab meat
1 tablespoon very finely chopped red pepper
2 teaspoons very finely sliced chives, plus more for garnish

Steps:

  • Preheat oven to 375 degrees.
  • Melt butter in a small saucepan over low heat. Whisk in flour and cook until foamy, about 1 minute. Add milk slowly, whisking constantly. Slowly bring mixture to a boil, continue whisking, and cook until very thick, about 3 to 4 minutes. Season with salt and black pepper; let cool. When cool, gently fold in crab, red pepper, and chives.
  • Using a 1 1/4-inch round cutter, cut 6 rounds from each slice of bread. Mound 1 level teaspoon crab mixture onto each bread round. Place canapes on a baking sheet, and bake until bread is crisp on the bottom and crab is hot, about 10 minutes. Garnish with additional chives, and serve warm.

Add more Cheez Whiz, butter and english muffins for folks who don't want as much of the crab taste.)

1/2 cup butter
1 (5 ounce) jar Cheese Whiz
1/2 teaspoon garlic salt
1/2 teaspoon Lawry's Seasoned Salt
1 (6 1/2 ounce) can crabmeat, drained
6 English muffins, split

Steps:

  • Soften butter and cheese at room temperature.
  • Blend cheese, butter and salts, add crabmeat.
  • Spread mixture on split muffins.
  • Cut muffins into 6 pie shaped slices and place on cookie sheet.
  • Broil 2 minutes or until bubbly or bake at 400 degrees for 12 minutes.
  • If desired, freeze until ready to use. (Note: If you are planning to freeze your canapies immediately, do not cut them until they are frozen. Just lay out the halves on a cookie sheet and freeze. Then, while they are still frozen, take an electric knife and cut the english muffin halves into canapies. Once you have cut them all, place in zip-top bags for long-term storage. By slicing them while frozen, they are easier to cut, and you won't lose any crabmeat spread this way! Place the canapies on a baking sheet in the freezer and then place in Zip-Loc bags when frozen).
  • Then, place on a baking sheet and thaw for 10 minutes before baking/broiling.

CRAB-MEAT PARMESAN CANAPES

1 cup fresh lump crab meat, picked over

4 scallions, chopped fine
1 teaspoon fresh lemon juice, or to taste

Steps:

  • Preheat oven to 400°F.
  • Toast bread on a baking sheet in oven until golden, about 5 minutes. In a bowl stir together remaining ingredients with salt and pepper to taste. Toasts and crab-meat mixture may be made 1 day in advance.
  • Reduce oven to 375°F. Spread crab-meat mixture on toasts and arrange on baking sheet. Canapés may be assembled 30 minutes in advance. Bake canapés in middle of oven until puffed, about 10 minutes.

  • In medium bowl, combine ingredients--cheese through garlic salt. Place English muffin halves on baking sheet. Spread about 3 tablespoons cheese crab mixture on each half, dividing evenly as possible. Cut into quarter triangles. At this point you may freeze the canapes. Once they are frozen, you can remove them from the tray and store in a zip top bag or freezer safe container.
  • To prepare, heat broiler on LOW. Place frozen canapes on baking sheet. Place under broiler for 5-7 minutes, checking after 5 minutes to make sure they do not burn. Heat until warmed through and cheese mixture is bubbly. If you would like them to be a little golden on top, switch broiler to HIGH and broil an additional 1-2 minutes. Serve immediately.
