CRAB BISQUE
If you have shells and just a little leftover crab from a cracked-crab feast, this delicious bisque is a natural. Chef Jordan Davis of Herringbone Restaurants in Southern California gave us the recipe. "Slow and low is the only trick to cooking it," he says.

- Put crab shells, bay leaves, and crab-poaching liquid in a medium pot. Bring to a simmer, covered, and simmer, stirring occasionally, until broth has a gentle but distinctive crab flavor, about 1 hour. Strain broth through a fine-mesh strainer. If using crab-poaching liquid, return to pot and boil, uncovered, until reduced to 2 cups, 10 to 15 minutes. Set aside.
- In another medium pot, heat oil over low heat. Add onion, celery, and bell pepper and cook, covered, stirring often, until very soft and translucent but not browned, about 15 minutes.
- Add wine and tomato paste to vegetables and cook over medium heat, uncovered, until wine has reduced by half, about 10 minutes. Add 2 cups cream and the crab broth and simmer over low heat 15 minutes, uncovered, to meld flavors and thicken a bit.
- Put six small, shallow soup bowls in a 200° oven to warm. Whip remaining 2 tbsp. cream into soft peaks.
- Strain soup through a fine-mesh strainer into a large bowl and stir in butter and salt. Ladle about 2/3 cup into each soup bowl. Top with a mound of crab, if using, a small spoonful of whipped cream, and a sprinkle of herbs.
- *Call your fish shop a few days ahead for crab shells, as they're not always available.

- Cook pasta according to package directions. , Meanwhile, in a small skillet, saute green pepper and onion in 1 teaspoon butter until tender; set aside., In a large bowl, combine crab, shrimp, egg, mozzarella cheese, mayonnaise, 2 tablespoons milk, 1 teaspoon seafood seasoning, pepper and green pepper mixture., Preheat oven to 350°. Drain and rinse pasta; stuff each shell with 1 rounded tablespoon of seafood mixture. Place in a greased 13x9-in. baking dish. , In a small saucepan, melt remaining butter over medium heat. Whisk in flour and coarsely ground pepper; gradually whisk in remaining milk. Bring to a boil; cook and stir 2 minutes or until thickened. Stir in Parmesan cheese., Pour over stuffed shells. Sprinkle with remaining seafood seasoning. Bake, uncovered, 30-35 minutes or until bubbly.

DEVILED CRAB WITH SHERRY SAUCE

- Preheat oven to 450°F.
- Remove crabmeat from shell, discarding cartilage, and cut meat into 1/2-inch pieces.
- Melt 2 tablespoons butter in a 1 1/2-quart heavy saucepan over moderately low heat, then add flour and cook, whisking, 2 minutes. Add milk in a slow stream, whisking, then add garlic and bring to a boil, whisking. Reduce heat and simmer, whisking, until béchamel is thickened, about 3 minutes. Remove from heat and discard garlic.
- Whisk together yolks, Sherry, mustard, nutmeg, cayenne, and salt in a bowl, then add hot béchamel in a slow stream, whisking. Pour mixture into saucepan and cook over very low heat, whisking constantly, until an instant-read thermometer registers 160°F, about 2 minutes. Remove from heat and gently stir in crabmeat and parsley. Divide mixture among 6 (4-ounce) ramekins.
- Melt remaining 2 tablespoons butter and cool slightly. Stir together melted butter, bread crumbs, and cheese with a fork, then sprinkle over crab. Put ramekins in a shallow baking pan and bake in upper third of oven until crab is bubbling and crumbs are golden brown, about 5 minutes.
CRAB WITH SHERRY IN SHELLS
An extremely easy and elegant way to serve crab. I put it into Scallop Shells I bought at a cooking store, but you can use ramekins also. Delicious and rich. I found this 35 years ago in Yankee Magazine!

CRAB STOCK

- 1. Place the crab bodies, shells, and tomalley (and optional shrimp shells or lobster carcasses) in a 6- to 8-quart stockpot and cover with the water. Bring to a boil, skimming the white foam from the surface of the stock. (Using a ladle and a circular motion, push the foam from the center to the outside of the pot, where it is easy to remove.) Reduce the heat so the stock cooks at a fast, steady simmer.
- 2. Add the onion, celery, tomatoes, garlic, bay leaves, peppercorns, and thyme, and let the stock simmer and cook down for about 1 hour. The liquid should just cover the crab shells as the stock cooks; if it doesn't, just add a little water.
- 3. Season the stock lightly with salt. Taste for a rich flavor; if it seems light, simmer for about 20 minutes longer.
- 4. Strain the stock through a fine-mesh strainer. If you are not going to be using it within the hour, chill it as quickly as possible. Cover the broth after it has completely cooled and keep refrigerated for up to 3 days, or freeze for up to 2 months.

- Gently fry the shallot and garlic in butter until softened. Pour in the sherry and bring to a simmer.
- Add the crab meat, reserving the shell. Warm through for 4-5 minutes then stir in the parsley.
- Spoon the mixture back into the crab shell. Sprinkle the top with breadcrumbs and grate over a little parmesan and add a grind of black pepper. Place a few dots of butter on top.
- Put under a hot grill for 1-2 minutes to crisp the bread and melt the cheese.
- Serve with toast.

- Boil water, 1 teaspoon of salt and oil in a large sauce pan or dutch oven. Gradually add shells when water is at a rapid boil. Boil for 1 minute less than package directions for "al dente". Shells will continue to cook when placed in the oven. To avoid mushy pasta, you want to initially under-cook.
- Remove and drain on a paper towel lined baking sheet. Dampen 2 paper towels and place them on top of shells to keep them moist. Set aside.
- Melt butter in medium saucepan. Add chopped onion and mushrooms. Saute for 5 minutes. Remove mushroom mixture and set aside.
- In the same saucepan add flour and whisk into the remaining butter to make a roux (paste). Blend until smooth and bubbly. Whisk in milk, half and half, white pepper and salt. Simmer for an additional 5 minutes, whisking occasionally.
