BAKED SEAFOOD RAVIOLI

My family loves pasta and we also love seafood so I came up with this for a meat-less dinner during Lent. It kind of tastes like a high end seafood lasagne, but is a whole lot easier (and cheaper!). We love it and hope that you do too. I use the imitation krab meat because that's what's available in my little tiny town but I would imagine that it would be even better with the real stuff!

1 (24 ounce) bag ravioli, cheese filled (frozen)
2 cups alfredo sauce (I use Ragu)
2 tablespoons sherry wine (optional but makes it taste more like a newburg)
2 cups crabmeat, chopped
1 cup shrimp, chopped (I use 1 sm. bag of frozen salad shrimp)
1/4 cup roasted red pepper, chopped
1 teaspoon ground pepper
1/2 teaspoon salt (or to taste)
1 teaspoon Old Bay Seasoning
2 cups cheese, shredded (I use cheddar)

Steps:

  • Pre-heat oven to 350 degrees.
  • Spray a 9x13 casserole dish with non-stick cooking spray.
  • Cook Ravioli in salted boiling water as directed on bag. Drain well.
  • Combine alfredo sauce, crab, shrimp, pepper, sherry (if using), Old Bay, salt/pepper and 1 cup of the cheese.
  • Gently combine the cooked ravioli and the sauce mixture, trying to not break the ravioli. Carefully pour into the prepared casserole pan.
  • Cover loosely with foil and bake for 30 minutes.
  • Top with remaining cheese and bake uncovered for an additional 15 minutes or till the cheese is melted and the sauce is hot and bubbley.
  • Prep time does not include boiling the ravioli. Hope you enjoy!

Crab and Prawn Ravioli in Seafood Bisque image

This is a dish I learned to make at Leith's cooking school in London. It takes a little work, but is divine. You could make the pasta dough, filling and sauce ahead of time, but I recommend cooking the pasta as soon as possible after you've made it. If you must store it for a few hours, then separate the ravioli with plastic wrap or parchment paper to keep them from sticking together.

450 g strong 00 flour
4 large eggs
1 tablespoon oil
110 g cooked crabmeat
110 g cooked prawns, still in their shells
1 egg white
2 teaspoons finely chopped chives
2 teaspoons lemon juice
salt & freshly ground black pepper
55 g prawn shells
1 small onion, roughly chopped
1 garlic clove, crushed
3 tablespoons brandy
2 tomatoes, chopped
1 bay leaf
1 tablespoon tomato puree
1 star anise (optional)
1 liter fish stock
150 ml double cream
chives (to garnish)

Steps:

  • Make the pasta by mixing all the ingredients together in a food processor with the normal blade.
  • You can also do this by mixing the flour and eggs together by hand on a wooden board, but it just takes longer and the end result is the same.
  • Turn the dough out onto the counter.
  • Use your hands to shape it into a ball and draw together any crumbs.
  • Wrap in clingfilm and leave to relax in a cool place for an hour.
  • Meanwhile, make the filling.
  • Remove the prawns from their shells.
  • Put the crabmeat and prawns in the food processor and whiz until smooth.
  • Add the egg white, lemon juice salt and pepper and whiz again until just mixed.
  • Stir in the chives, cover and set aside.
  • Make the sauce.
  • Heat the oil in a heavy saucepan and fry all the shells and onion until they start to brown.
  • Add the garlic and cook for another 30 seconds.
  • Add the brandy, tomatoes, bay leaf, tomato puree and star anise.
  • Add the stock and simmer for 20 minutes.
  • Strain the sauce and reduce to 150 ml by boiling rapidly.
  • Add the cream, reduce to the consistency of single cream and season to taste.
  • Set the sauce aside and roll out your pasta dough as thinly as possible using a pasta maker.
  • You want a strip about 6 inches wide.
  • Place teaspoonfuls of the filling in even rows at intervals of 1 1/2 inches over half of the pasta.
  • Fold the other half over the mounds of filling.
  • Press together, firmed around each mound to make sure you have squeezed out all the air.
  • Cut between the rows, making sure the edges are sealed.
  • You can use a fork to decorate the edges.
  • Cook the ravioli in boiling water for 3-4 minutes until al dente.
  • Place on the serving dish, drizzle over the sauce and decorate with the chives.

2 ounces unsalted butter
1 garlic clove, chopped
1 tablespoon chopped shallot
16 ounces cooked lobster meat
4 ounces cooked snow crabmeat
2 ounces cognac
2 ounces ricotta cheese
salt
pepper
1 tablespoon chopped chives
1 egg white, slightly beaten
2 ounces unsalted butter
1 tablespoon chopped shallot
4 ounces whole chunk maryland crabmeat
2 ounces cognac
5 ounces tomato sauce
10 ounces heavy cream
salt
8 ounces durum flour
8 ounces semolina
1 egg
water, as needed
1 pinch salt

Steps:

  • For the Lobster Ravioli: In a large saute pan, add the butter and melt. Add the garlic and shallots and saute until golden brown. Add lobster, crab, and chives and saute 2 to 3 minutes. Add Cognac and reduce for 2 minutes. Remove from heat and cool for 30 minutes, until room temperature. Chop lobster mixture into small chunks. In a large bowl, combine lobster mixture and ricotta and mix well. Season with salt and pepper.
  • Lay out the first piece of pasta dough on the table and place 1/4-ounce mounds of stuffing 2 inches apart. Using a pastry brush, brush egg white around each bit of stuffing, making the dough damp not wet. Take the second piece and cover the bottom piece with the stuffing. Press around each ravioli being careful not to squeeze the stuffing out. Using a round ravioli cutter, cut each ravioli round and put on a sheet pan sprinkled with semolina. Gently place ravioli in boiling water and cook for 8 to 10 minutes, or until al dente.
  • For the sauce: Using a 12-inch saute pan at medium heat, add butter, shallots, and saute until shallots are translucent. Add the crabmeat and saute for about 2 to 3 minutes. Remove the saute pan from the burner and add Cognac then place pan back on the heat to cook off the alcohol. (Please beware: the Cognac will create a large flame.) Once the flame stops, add the tomato sauce and cream with salt and cook until it reduces half way and becomes creamy. Add the cooked ravioli to the sauce and let cook together for about 1 minute before serving. Garnish with chives.
  • Pasta Dough: Add all the ingredients into a large mixing bowl until all ingredients are blended. Place mixture on countertop and knead until the texture is smooth and well mixed. Separate the pasta dough into 2 equal pieces and put one piece aside. Flour the first piece, just enough to prevent sticking and roll out with a rolling pin to about 1/8th-inch thick. Repeat procedure with second piece making it as close to the shape as the first. CAN USE WON-TON WRAPPERS.

1/2 lb shrimp, cold, peeled and deveined
1 large egg white, cold
1 1/2 teaspoons fresh parsley leaves, chopped
1 1/2 teaspoons fresh basil leaves, chopped
1 teaspoon fresh lemon juice
1 teaspoon garlic, minced
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1/4 cup heavy cream, cold
6 ounces crabmeat
1/4 cup parmesan cheese, grated
2 tablespoons shallots, chopped
1 large egg, beaten with
2 teaspoons water, for egg wash
4 sheets fresh pasta, measuring about 9 by 15 inches

Steps:

  • Combine shrimp, egg white, parsley, basil, lemon juice, garlic, salt & pepper in a food processor and pulse. Scrape sides and pulse again. With machine running, add cream through the top in a steady stream. Transfer to a bowl & fold in crabmeat, cheese & shallots.
  • Place 1 pasta sheet on work surface. Scoop heaping tablespoons of crabmeat filling evenly down the sheet, abt 4 inches apart in 2 rows of 4. Using a pastry brush, lightly coat the areas around filling with egg wash. Place another pasta sheet on top & press down around the mounds of filling to squeeze out the air pockets & seal. With a 4-inch round cutter or knift, cut into individual ravioli.
  • Bring a large pot of salted water to boil. Add ravioli & cook until tender, 4 to 5 minutes. Remove with slotted spoon & divide into 4 plates. Drizzle the sauce on top and arrange the asparagus on the side. Garnish each portion with cheese & basil & serve immediately.

1/4 cup peeled garlic clove
1 tablespoon extra virgin olive oil
1/2 lb cooked deveined, peeled, chopped shrimp
1/3 cup fresh goat cheese
1 large egg yolk
1 cup whipping cream
1 shallot, chopped
1/4 cup fresh packed basil leaves
24 wonton wrappers

Steps:

  • Preheat oven to 350. Toss garlic with olive oil and place in oven dish, cover and roast for 15 minutes. Let cool and chop.
  • Mix shrimp, goat cheese, egg you and garlic in bowl.
  • Bring cream and shallot to boil in small pan. Reduce heat and simmer until about 3/4 cup about 8 minutes. Cool.
  • Add sauce to blender and add basil and blend until finely chopped. Season with s & P.
  • Place half of wonton wrappers on work surface. Add one teaspoon shrimp mixture to each. Brush edges with water and fold over to form triangles. Repeat with remaining wontons.
  • Cook ravioli in large pot of boiling salted water about 3 minutes.
  • Serve in bowls with warm sauce. Garnish with shredded basil.

2 tablespoons butter
1 shallot, minced
1/2 cup dry white wine
2 pinches saffron threads
2 cups whipping cream
cayenne pepper, to taste
salt and pepper
fresh chives, for garnish

Steps:

  • Make the pasta according to directions --
  • While waiting for the water to boil, make the sauce:
  • Add butter to a saute pan over medium-low heat. Add the shallot and cook for 2-3 minutes or until translucent.
  • Add the wine, stirring until the wine evaporates, about 3 minutes.
  • Add the cream and saffron, lower heat and simmer.
  • Cook until the sauce has reduced by half, about 10 minutes. Season with salt and pepper and remove from heat.
  • Add the cooked ravioli to the saute pan and stir to coat.
  • Add the ravioli to a plate and spoon with more sauce. Garnish with a little cayenne pepper if you like some heat and some chives.
