Number Of Ingredients 10

2 English cucumbers, sliced into 1-inch thick pieces
1 avocado, diced
1 cup frozen asparagus tips, thawed
1 hard boiled egg, diced
1/2 lemon, zested and juiced
3 tablespoons Thousand Island Dressing
1 tablespoon hot sauce
2 tablespoons fresh chopped parsley leaves
1 (8-ounce container) fresh crabmeat
Salt and freshly ground black pepper

Steps:

  • Using a melon baller, scoop out the center of each cucumber slice to form a small bowl. Finely chop the cucumber centers and put them into a large bowl.
  • Add all of the remaining ingredients and gently toss.
  • Spoon about a tablespoon of the crab mixture into each cucumber cup. Arrange them on a platter and serve.

This recipe is almost too easy and quick, but tastes fabulous and will be gobbled up by your guests with a nice cracker assortment. Go again, don't be scared - try it!

3 pkg surimi (fake crab in rolls)
1 pkg helluva good onion dip (red container)
Half tsp fresh black pepper
ALMOST READY - ONE MORE STEP

Steps:

  • 1. Chop up crab meat to nice consistency (not too fine) Use a nut chopper if you have one as works well.
  • 2. Fold in full container Onion Dip and the pepper.
  • 3. Leave overnight in fridge as flavour enhances. Serve with nice crunchy crackers - i.e. Mary's Crackers work nicely.
  • 4. When using place in nice serving dish and voila!
