6 lasagna noodles
1 (15 ounce) can Italian-style tomato sauce
1 tablespoon italian seasoning
2 garlic cloves, crushed
8 ounces imitation crabmeat
1 cup 1% fat cottage cheese, drained
1 egg
1/4 cup parmesan cheese
1 tablespoon dried parsley flakes
1/4 teaspoon onion powder

Steps:

  • Cook noodles as directed on package.
  • Rinse in cold water; drain well.
  • For sauce combine tomato sauce, Italian seasoning, and garlic.
  • For filling combine crab, cottage cheese, Parmesan, egg parsley and onion powder.
  • Thoroughly combine filling ingredients with fork.
  • Spread 1/3 cup filling on each noodle.
  • Roll tightly; place seam-side down in a 9-inch square baking pan.
  • Pour sauce over rollups.
  • Bake covered at 375F for 30 minutes.
  • Garnish with additional grated cheese.

Unlike layered lasagne, which can lose its shape and become messy when served, these individual rolls are an elegant alternative that look as lovely on the plate as they taste. Crisp white wine and the nutty flavors of sherry come together beautifully in a creamy white sauce, adding a delicate accent that's perfect for the shellfish. Easily portioned, this dish is excellent for entertaining. Remember to do your prep early, as this recipe does take some time to assemble.

Number Of Ingredients 25

1 cup panko bread crumbs
1/2 cup (1 stick) unsalted butter, melted
1/3 cup grated Parmesan cheese (1 1/2 ounces)
2 tablespoons shallots, finely chopped
2 tablespoons chopped fresh flat-leaf parsley
1/2 teaspoon chopped fresh thyme leaves
Cooking spray
12 dried lasagna noodles
2 tablespoons unsalted butter
2 medium shallots, thinly sliced
1 red bell pepper, chopped
3 tablespoons all-purpose flour
2 1/2 teaspoons salt
2 teaspoons ground white pepper
1 cup bottled clam juice
1/2 cup dry white wine
2 tablespoons sherry
2 cups heavy cream
8 ounces Monterey jack cheese, grated (2 cups)
6 ounces fresh spinach leaves
1 pound shrimp, peeled and deveined
1 pound bay scallops
3/4 pound cod, haddock, or other white fish fillets, cut into 1-inch cubes
1/2 pound lump crab meat
1 tablespoon chopped fresh flat-leaf parsley

Steps:

  • To make the topping, put the bread crumbs, butter, Parmesan, shallots, parsley, and thyme in a medium bowl, and mix thoroughly. Set aside.
  • Preheat the oven to 375°F. Lightly coat a 9 x 13-inch casserole dish with cooking spray.
  • In a large pot of boiling salted water, cook the lasagna noodles according to the package instructions. Drain the noodles, rinse with cold water, and lay them flat on a baking sheet while you make the sauce.
  • In a small saucepan set over medium-high heat, melt the butter. Add the shallots and bell pepper, and sauté for about 3 minutes or until tender. Reduce the heat to medium and whisk in the flour, 1 1/2 teaspoons of the salt, and 1 teaspoon of the white pepper. Cook for 2 minutes, whisking constantly, until the flour is cooked through. Pour in the clam juice, wine, and sherry and cook, whisking constantly, until a light sauce forms, 2 to 3 minutes. Add the cream and cook, whisking frequently, until the sauce thickens, about 5 minutes. Remove the pan from heat. Add 1 cup of the cheese and the spinach, and cook until the spinach wilts. Set the sauce aside.
  • Rinse the seafood under cold running water. Drain thoroughly and pat dry with a paper towel to remove any excess liquid. In a large bowl, combine the shrimp, scallops, cod, and crab meat with the remaining 1 teaspoon salt and 1 teaspoon white pepper and the parsley. Add 1 cup of the sauce mixture and fold until well combined.
  • Spread a heaping 1/3 cup of the seafood mixture on each noodle, leaving a 1/2-inch border on the edges. Roll up each noodle.
  • Spread about 1/2 cup of the sauce on the bottom of the prepared casserole dish. Arrange the rolled lasagna noodles seam side down snugly in one layer over the sauce. Pour the remaining sauce over the rolls. Sprinkle the casserole with the remaining 1 cup cheese, and then top evenly with the crumb topping. Cover the dish with foil, and bake until the sauce is bubbling and the filling is just cooked through, about 30 minutes.
  • Preheat the broiler. Remove the foil from the dish, and broil casserole about 3 inches from the heat until the crumb topping is browned, 3 to 5 minutes. Let stand for 5 minutes before serving.

8 ounces imitation crabmeat
1 cup light ricotta cheese
3/4 cup parmesan cheese, grated
1 egg
1 tablespoon dried parsley flakes
1/2 teaspoon onion powder
6 lasagna noodles, cooked,rinsed & drained
1 (15 ounce) can pasta sauce (if you can find it use the shrimp/crab sauce)

Steps:

  • Combine all the ingredients except the lasagna noodles and the pasta sauce.
  • Mix well.
  • Spread 1/3 cup on each noodle and roll jelly roll style.
  • Place, seam side down in an 8" oven proof dish.
  • Pour the pasta sauce over the roll ups and bake, lightly covered, for 25 minutes in 350F oven OR Cover with wax paper and microwave on high for 7 minutes.

1 green onion, finely chopped
2 tablespoons canola oil
2 tablespoons plus 1/2 cup butter, divided
1/2 cup chicken broth
1 bottle (8 ounces) clam juice
1 pound bay scallops
1 pound uncooked small shrimp, peeled and deveined
1 package (8 ounces) imitation crabmeat, chopped
1/4 teaspoon white pepper, divided
1/2 cup all-purpose flour
1-1/2 cups 2% milk
1/2 teaspoon salt
1 cup heavy whipping cream
1/2 cup shredded Parmesan cheese, divided
9 lasagna noodles, cooked and drained

Steps:

  • In a large skillet, saute onion in oil and 2 tablespoons butter until tender. Stir in broth and clam juice; bring to a boil. Add scallops, shrimp, crab and 1/8 teaspoon pepper; return to a boil. Reduce heat; simmer, uncovered, for 4-5 minutes or until shrimp turn pink and scallops are firm and opaque, stirring gently. Drain, reserving cooking liquid; set seafood mixture aside., In a large saucepan, melt the remaining butter; stir in flour until smooth. Combine milk and reserved cooking liquid; gradually add to the saucepan. Add salt and remaining pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. , Remove from the heat; stir in cream and 1/4 cup cheese. Stir 3/4 cup white sauce into the seafood mixture., Preheat oven to 350°. Spread 1/2 cup white sauce in a greased 13x9-in. baking dish. Top with three noodles; spread with half of the seafood mixture and 1-1/4 cups sauce. Repeat layers. Top with remaining noodles, sauce and cheese. , Bake, uncovered, at for 35-40 minutes or until golden brown. Let stand for 15 minutes before cutting.

1/4 cup butter or margarine
1 medium onion, finely chopped (1/2 cup)
2 cloves garlic, finely chopped
2 cups half-and-half
1 cup Progresso™ chicken broth (from 32-oz carton)
1/3 cup dry sherry or chicken broth
1/2 teaspoon salt
1/4 teaspoon pepper
1 egg, slightly beaten
1/2 cup grated Parmesan cheese
1 container (15 oz) ricotta cheese
1/4 cup chopped fresh parsley
2 packages (8 oz each) frozen salad-style imitation crabmeat, thawed, drained and chopped
2 packages (4 oz each) frozen cooked salad shrimp, thawed, drained
3 cups shredded mozzarella cheese (12 oz)
1 tablespoon chopped fresh parsley, if desired

Steps:

  • Heat oven to 350°F. Cook noodles as directed on package.
  • Meanwhile, in 3-quart saucepan, melt butter over medium heat. Add onion and garlic; cook 2 to 3 minutes, stirring occasionally, until onion is crisp-tender. Stir in flour; cook and stir until bubbly. Gradually stir in half-and-half, broth, sherry, salt and pepper. Heat to boiling, stirring constantly. Boil and stir 1 minute. Remove from heat and set aside.
  • In medium bowl, mix egg, Parmesan cheese, ricotta cheese and 1/4 cup parsley; set aside.
  • Drain noodles. In ungreased 13x9-inch (3-quart) glass baking dish, spread 3/4 cup of the sauce. Top with 3 noodles. Spread half of the crabmeat and half of the shrimp over noodles; spread with 3/4 cup of the sauce. Sprinkle with 1 cup of the mozzarella cheese; top with 3 noodles. Spread ricotta mixture over noodles; spread with 3/4 cup of the sauce. Sprinkle with 1 cup of the mozzarella cheese; top with 3 noodles. Spread with remaining crabmeat, shrimp and sauce. Sprinkle with remaining 1 cup mozzarella cheese.
  • Bake 40 to 45 minutes or until cheese is light golden brown. Let stand 15 minutes before cutting. Sprinkle with 1 tablespoon parsley.

8 uncooked lasagna noodles
1/4 c butter
1/4 c flour
2 1/2 c half & half
2 Tbsp fresh parsley
1 egg, beaten
1 shallot, finely chopped
1/2 lb raw shrimp, peeled and deveined and coarsely chopped
8 oz frozen lump crab meat thawed or imitation crab meat, coarsely chopped
1 container (15 oz.) ricotta cheese
1/4 tsp paprika
1/2 c fresh grated parmesan (more for garnishing)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Cook and drain noodles according to package directions. Rinse with cold water.
  • 3. Melt butter in a 2-quart saucepan over medium heat. Add flour, stir with a wire whisk to make a roux. Add half & half, and parmesan cheese, stirring frequently until mixture is smooth and thickened. Remove from heat and salt to taste.
  • 4. Mix 1/2 cup sauce and remaining ingredients, except noodles and paprika.
  • 5. Spread about 1/2 cup of shrimp mixture to edges of noodle.Roll up noodle. Place seam side down on a greased 9x13 baking dish. Repeat with remaining ingredients.
  • 6. Pour remaining sauce over noodles. Sprinkle with paprika. Bake uncovered about 25-30 minutes until heated through.
  • 7. Garnish with a bit more shredded parmesan and/or fresh chopped parsley if desired.
