1/4 teaspoon minced garlic
1/2 teaspoon salt
1 cup sour cream
2 tablespoons chopped onions
2 tablespoons chopped cilantro
1 dash granulated sugar
6 corn tortillas
oil or lard
1 1/2 cups crabmeat
6 tablespoons minced onions
shredded monterey jack cheese
pitted black olives
avocado, slices
sliced peeled tomatoes

Steps:

  • For Cilantro Cream Sauce:
  • Puree garlic with salt.
  • Combine sour cream, onion, cilantro and sugar.
  • Add garlic mixture and stir gently to blend well.
  • For Enchiladas:
  • Heat tortillas, 1 at a time, in oil until soft.
  • Place 1/4 cup crab meat in center of each tortilla, then sprinkle with 1 tablespoon onion.
  • Spread a little Salsa Con Tomatillos on top.
  • Roll enchiladas, and place, seam-side down, in shallow baking dish.
  • Cover with remaining Salsa Con Tomatillos. Sprinkle generously with cheese.
  • Bake at 400 degrees F about 10 minutes, or until hot and cheese melts.
  • Serve with dollop of Sour Cream Sauce, and garnish with olives, avocado and tomato slices.

4 poblano peppers
2 tablespoons butter
1/2 white onion, chopped
5 to 6 cloves garlic, pressed through garlic press
Salt and pepper
1 tablespoon all-purpose flour
1 cup chicken stock
1 to 2 cups heavy cream
1/2 lemon
2 tablespoons butter
Salt and pepper
Red pepper flakes
12 jumbo shrimp
8 ounces crab meat
2 tablespoons lemon juice
20 corn tortillas
Vegetable oil, for frying
Queso fresco or cojita cheese, for topping
Pickled Red Onions, recipe follows, for topping
Crema, for drizzling
Fresh cilantro leaves, for garnish
1 red onion, sliced
1 cup red wine vinegar
1/2 cup sugar
2 tablespoons salt

Steps:

  • For the poblano sauce: Roast the poblanos over a flame until black on all sides (this can also be done under a broiler). Place in a bowl, cover with a lid or plate and set aside for 15 minutes to steam.
  • Begin the base for the sauce by combining the butter, white onions and garlic in a saucepan. Salt well. Cook over medium heat until the onions are softened, 3 to 4 minutes. Sprinkle with the flour and whisk to combine. Stir in chicken stock, bring to a simmer, stirring, and cook for 1 to 2 minutes, until thickened. Remove from heat and add to a blender.
  • Peel the blackened skin off the poblanos--this is easier to do under cold running water. Then remove the stems and seeds. Add the flesh to the sauce base in the blender. Blend until smooth, 1 to 2 minutes. Return the poblano sauce to the saucepan and bring to a simmer. Add the cream, starting with 1 cup--add more if necessary. Simmer for 3 to 5 minutes. Season with salt and lemon juice
  • For the shrimp and crab: In a saucepan, melt the butter over medium heat. Add a pinch of salt and red pepper flakes. Add the shrimp and cook, tossing, until opaque.
  • Add the crab meat and cook for an additional 2 minutes, stirring well. Check that the shrimp are cooked through and then finish with squeeze of lemon. Set aside.
  • For the enchiladas: Fry the tortillas for 20 seconds in hot oil to make them pliable. Drain on paper towels. Lay out tortillas and fill with 1 to 2 tablespoons of the seafood filling. Plate 2 enchiladas per serving. Top with poblano sauce and then with queso fresco, Pickled Red Onions and crema. Garnish with cilantro.
  • Combine the red onions, vinegar, sugar and salt in a saucepan and boil for 30 minutes. Drain the onions. Refrigerate in an airtight container for up to 2 weeks.

1 medium onion, chopped (1/2 cup)
2 cloves garlic, finely chopped
3 tablespoons Gold Medal™ all-purpose flour
1 3/4 cups Progresso™ chicken broth (from 32-oz carton)
1 container (8 oz) sour cream
2 cups shredded Mexican cheese blend (8 oz)
1 can (4.5 oz) Old El Paso™ chopped green chiles, undrained
3 cans (6 oz each) crabmeat, drained, rinsed
1 package (8 oz) frozen cooked peeled shrimp, thawed (45 to 50 count)
1 package (11.5 oz) Old El Paso™ flour tortillas for burritos (8 tortillas)
1 ripe avocado, pitted, peeled and chopped
2 tablespoons fresh lime juice
1 small plum (Roma) tomato, chopped (1/3 cup)
3 tablespoons chopped fresh cilantro

Steps:

  • Heat oven to 350°F. In 2-quart saucepan, melt butter over medium-high heat. Cook onion and garlic in butter 3 to 4 minutes, stirring frequently, until softened. Stir in flour until all flour is blended with butter. Stir in broth and sour cream until smooth. Heat to boiling; cook about 2 minutes, stirring constantly, until sauce is thickened. Remove from heat. Stir in cheese until melted. Stir in chiles.
  • In medium bowl, mix 1 cup of cheese sauce, the crabmeat and shrimp. In 13x9-inch (3-quart) glass baking dish, spoon 1 cup of the cheese sauce over bottom. Spoon about 1/2 cup seafood mixture onto each tortilla. Roll up tortillas; place seam sides down on sauce in dish. Pour remaining sauce over enchiladas.
  • Cover baking dish with foil. Bake 30 to 35 minutes or until bubbly.
  • In medium bowl, toss remaining ingredients. Just before serving, spoon avocado mixture down center of enchiladas.

FILLING:
1 cup crab meat, I used Louis Kemp Imitation Crab
1 cup sour cream
1/2 cup minced green onions
1/2 cup chopped cilantro, optional
1 teaspoon cumin powder
1 teaspoon dried oregono
1/2 cup shredded Mexican-blend cheese
TOMATILLO SAUCE:
1 pound tomatillos
2 garlic cloves
1 jalapeno
1 cup chicken or vegetable broth
ENCHILADAS
6 corn tortillas
1/2 cup Mexican-blend cheese
1 avocado, sliced
1 medium tomato, chopped

Steps:

  • Make the tomatillo sauce: Take the paper-like coverings off the tomatillos and clean them. Heat a grill or griddle pan to medium high. Grill the tomatillos, garlic cloves and jalapeno until they have char marks and are slightly soft from being cooked. Remove them and let them cool. If you want your sauce to not be quite as spicy, remove the seeds from the jalapeno. Place the tomatillos, garlic and jalapeno into a blender with the chicken broth. Blend on high until a nice sauce. Make the crab enchilada filling: Mix all of the ingredients except the crab in a medium size bowl. Gently stir in the crab, trying not to break it up too much. Make the enchiladas: Spray a casserole dish with non-stick spray. Put about 1/4 cup of the tomatillo sauce in the bottom of the dish. Take a corn tortilla and quickly dip it into the tomatillo sauce. Then add about 4 tablespoons of filling and roll it up and place seam side down in a casserole dish. Do this with all 6 tortillas. Top with more of the tomatillo sauce and the remaining shredded Mexican-blend cheese. Bake at 350°F for about 30 minutes or until heated through and the cheese is melted. Remove from oven and top with slices of avocado and chopped tomatoes. Serve with additional sour cream, if you'd like.

1 red onion, chopped
2 stalks celery, chopped
1 pound lump crabmeat
2 teaspoons chopped fresh oregano
1/2 teaspoon freshly ground black pepper
3 cups Herbed Pumpkin Seed Mole, recipe on Key Ingredient
Twelve 5-to 6-inch corn tortillas
1 cup crumbled cotija cheese
3 green onions, chopped
1 ripe avocado, pitted and sliced - optional

Steps:

  • Preheat the oven to 375°F. Heat the oil in a large skillet over high heat. Add the onions and celery and cook until slightly limp, about 2 minutes. Add the crab, oregano, and pepper and toss until the crabmeat is heated through, just another couple of minutes. Remove from the heat. Spread 1/2 cup mole verde onto the bottom of a 9-by-13-by-2-inch baking dish. Stack the tortillas on a microwave-safe plate and cover with a wet paper towel. Microwave on high for 30 to 60 seconds, until softened. Spread the tortillas out onto a couple of large baking sheets or cutting boards. Spoon some of the crab mixture in a line down the center of each tortilla. Roll them up, placing them seam-side down on the mole verde in the baking dish. Repeat until all of the tortillas are placed in the dish. Pour the remaining mole sauce over the enchiladas and sprinkle with the cheese. Top with the green onions. Bake until heated through and the cheese melts, about 15 minutes. To serve, transfer 2 enchiladas each onto 6 plates and top each with a couple of avocado slices.

1 1/2 cups chicken broth, divided
2 small california avocados, peeled and coarsely chopped
2 (8 ounce) packages cream cheese, softened and cubed
3 jalapeno peppers, unseeded and cut in half
1/2 cup loosely packed fresh cilantro leaves
2 cloves garlic
3/4 teaspoon salt, divided
1 lb lump crabmeat, drained
1 medium red bell pepper, chopped
1/2 cup chopped fresh cilantro
1 bunch green onion, chopped
8 8-inch flour tortillas
3 cups shredded monterey jack pepper cheese (12 ounces)

Steps:

  • Process 1 cup broth, next 5 ingredients, and ½ teaspoon salt in a blender or food processor until smooth, stopping to scrape down sides.
  • Remove 1 cup sauce, and stir in crabmeat, next 3 ingredients, and remaining ¼ teaspoon salt.
  • Set aside.
  • Stir together remaining 2 cups sauce and remaining 1/2 cup chicken broth.
  • Cover and chill up to 4 hours, if desired.
  • Spoon crabmeat mixture evenly down center of tortillas.
  • Sprinkle evenly with 2 cups cheese, and roll up.
  • Place seam side down in a lightly greased 13- x 9-inch baking dish.
  • Cover and chill up to 4 hours, if desired.
  • Pour sauce mixture over top, and sprinkle with remaining 1 cup cheese.
  • Bake at 350° for 20 minutes.
  • Serve immediately.
