DOUGHNUT HOLE CRABS
No one would be crabby (har har) if you showed up to a summer party with these too-easy, too-adorable treats.

Steps:
- To make crab claws: Slice a small V out of the face of each gummy fish.
- To make crab feet: Slice the red licorice lace into six 1/2-inch pieces.
- Put the red melting candy and vegetable shortening in a medium microwave-safe bowl. Microwave in 30-second intervals, stirring in between each, until completely melted.
- Using a wooden skewer, dip the glazed doughnut hole into the bowl of melted candy to thoroughly coat; transfer to a piece of parchment paper. Let set and then dip again and return to the parchment paper. Place 2 small candy eyeballs on top of the doughnut hole while the melted candy is still wet. Let set, about 5 minutes.
- Use the wooden skewer to poke 3 holes into each side of the doughnut hole where the back feet would go; insert the licorice lace pieces into the holes. Use the skewer to make holes on each side of the front of the doughnut hole where claws would go. Dip the tails of the gummy fish in the melted candy and insert them into the holes. Let set, about 5 minutes.

- In a bowl, blend the mayo, onions, celery, lemon juice, salt and white pepper with a whisk. Blend well. Then add the crabmeat and blend well again. After mixing, fill the rolls with 1/2 cup filling and serve.
COCONUT CRUSTED CRAB CAKES
Steps:
- Lime Dipping Sauce, recipe follows
- Put the crabmeat in a large bowl and add the mayonnaise, scallions, bell pepper, ginger, salt, and pepper and gently combine using a rubber spatula. Add the 1/2 cup coconut and 1/2 cup panko and gently fold in. Divide the mixture into 8 mounds and form into patties about 3-inches in diameter and 3/4-inch thick. Put the patties on a large plate, cover with plastic wrap, and refrigerate 30 minutes or longer.
- When you are ready to fry the crab cakes, combine the 1 cup of coconut and 1 cup of panko in a shallow container. Lightly dredge the patties in the crumbs, shaking off any excess. Put 2 large nonstick skillets with over medium high heat. Add about 3 tablespoons of oil to each pan. When the pans are hot, place 4 patties in each pan. Turn the heat down to medium and fry the cakes until golden and heated through, turning once with a spatula to brown both sides, about 4 minutes per side.
- Transfer the crab cakes to plates, serving 2 to each person, accompanied by ramekins of sweet chili sauce and lime wedges.
- Whisk together all ingredients in a small bowl.
