THE BEST CRAB CAKES

The Best Crab Cakes image

When we set out to make the "best" crab cakes, opinions in the test kitchen were strong and varied. But we could all agree on plenty of fresh, high-quality crabmeat with very little filler. After some tinkering, we created these decadent cakes-generously sized and highly seasoned-with plenty of lemon juice, fresh herbs and spices. The jumbo lump crabmeat is front and center, so splurge on the best and freshest you can find.

Categories     appetizer

Time 1h10m

Yield 8 crab cakes

Number Of Ingredients 15

2 pounds fresh jumbo lump crabmeat, picked over for shells and cartilage
1 1/2 cups panko
1/2 cup mayonnaise
1/4 cup chopped chives
1 tablespoon Dijon mustard
2 teaspoons seafood seasoning, such as Old Bay
Kosher salt and freshly ground black pepper
Juice and zest of 1 lemon, plus more lemon wedges for serving
3 tablespoons unsalted butter
3 tablespoons olive oil
1 cup mayonnaise
1/2 cup chopped dill pickles (about 2 whole pickles)
1 tablespoon capers, chopped
1 tablespoon minced chives
Juice and zest of 1 lemon

Steps:

  • Preheat the oven to 400 degrees F.
  • For the crab cakes: Gently fold together the crabmeat, breadcrumbs, mayonnaise, chives, Dijon mustard, seafood seasoning, 1 teaspoon kosher salt, 1 teaspoon freshly ground pepper and the juice and zest of one lemon in a large bowl. Refrigerate the crab mixture for 15 minutes to firm up; this allows the breadcrumbs to absorb some of the liquid, helping the crab cakes bind together.
  • Meanwhile, make the tartar sauce: Combine the mayonnaise, dill pickles, capers, chives, zest and juice of 1 lemon in a medium bowl and mix until combined. Season to taste with salt and pepper. Cover and refrigerate until ready to use.
  • Scoop heaping half cups of the crab mixture and pat into 2 1/2-inch wide patties. Lightly press them together so they do not fall apart while cooking. You should have 8 patties.
  • Heat 3 tablespoons unsalted butter and 3 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the crab cakes to the pan and cook until golden, about 2 minutes, then flip using a flat metal spatula. Continue to cook until lightly golden, about 1 1/2 minutes then transfer the pan to the oven. Cook until the crab cakes are completely heated through, about 10 minutes.
  • Serve the crab cakes with the tartar sauce and lemon wedges.

Categories     Dinner     Featured     Recipes

Time 35m

Number Of Ingredients 7

1 pound crab meat
3 tablespoons dry bread crumbs
2 teaspoons fresh parsley (chopped)
1 teaspoon Old Bay Seasoning
1 egg
2 tablespoons mayonnaise
1/2 teaspoon ground dry mustard

Steps:

  • Preheat oven broiler.
  • Combine crab meat, bread crumbs, Old Bay Seasoning, and parsley. Mix until well incorporated. But do not overmix. Crab meat should be lumpy.
  • In a separate bowl, beat together mayonnaise, mustard, and egg. Combine with other ingredients and mix well.
  • Form into patties and refrigerate for about half an hour. This will allow the crab cakes to firm up and prevent them from cracking or breaking up in the pan.
  • Put the patties into a lightly greased baking sheet. Broil for 10 to 15 minutes (or until lightly brown).

MARYLAND CRAB CAKES RECIPE (LITTLE FILLER)

Maryland Crab Cakes Recipe (Little Filler) image

For the best texture, use lump crab meat, little filler, and bake the cakes in a very hot oven. Serve with lemon wedges, a garnish of chopped parsley, and/or cocktail sauce or tartar sauce. For more success tips and to learn which crab meat to use, see blog post above.

Provided by Sally

Categories     Dinner

Time 55m

Number Of Ingredients 11

1 large egg
1/4 cup (60g) mayonnaise
1 Tablespoon chopped fresh parsley (or 2 teaspoons dried)
2 teaspoons dijon mustard
2 teaspoons worcestershire sauce
1 teaspoon Old Bay seasoning (up to 1 and 1/2 teaspoons for a spicier kick)
1 teaspoon fresh lemon juice, plus more for serving
1/8 teaspoon salt
1 pound fresh lump crab meat*
2/3 cup (41g) Saltine cracker crumbs (about 14 crackers)
optional: 2 Tablespoons (30g) melted salted or unsalted butter

Steps:

  • Whisk the egg, mayonnaise, parsley, dijon mustard, worcestershire sauce, Old Bay, lemon juice, and salt together in a large bowl. Place the crab meat on top, followed by the cracker crumbs. With a rubber spatula or large spoon, very gently and carefully fold together. You don't want to break up that crab meat!
  • Cover tightly and refrigerate for at least 30 minutes and up to 1 day.
  • Preheat oven to 450°F (232°C). Generously grease a rimmed baking sheet with butter or nonstick spray or line with a silicone baking mat.
  • Using a 1/2 cup measuring cup, portion the crab cake mixture into 6 mounds on the baking sheet. (Don't flatten!) Use your hands or a spoon to compact each individual mound so there aren't any lumps sticking out or falling apart. For extra flavor, brush each with melted butter. This is optional but recommended!
  • Bake for 12-14 minutes or until lightly browned around the edges and on top. Drizzle each with fresh lemon juice and serve warm.
  • Cover leftover crab cakes tightly and refrigerate for up to 5 days or freeze for up to 3 months.

  • Remoulade Sauce. Of course, it’s no secret that a classic tartar sauce is served with crab cakes, but don’t be afraid to spice it up with a remoulade!
  • Avocado Ranch Dip. Here’s another sauce to serve with crab cakes, but this one is a little bit different. This avocado ranch dip is very quick and easy to whip up.
  • Corn Salsa. This corn salsa is wickedly simple to make and is full of fresh veggies. Everything can be thrown together in just one bowl! It contains chopped peppers, tomatoes, red onion, jalapeño, and cilantro all mixed in with the corn.
  • Potatoes and Green Beans. You can never go wrong with potatoes and green beans to complement any main dish! They are very easy to prepare and can even roast in the oven on the same baking sheet.
  • Garlic Aioli. Aioli is incredible and people often forget how simple it is to make. It has a mayonnaise base with just a few other common kitchen ingredients added to it.
  • Rice Pilaf. Just like potatoes and green beans, rice pilaf is also a perfect side dish for any meal. The key trick to a delicious rice pilaf is to toast the rice in butter or oil before adding the chicken broth to cook it in.
  • Roasted Potatoes. Surprise, another potato dish! These are a little bit different than the one mentioned above. These potatoes are diced up into bite-sized pieces and coated in olive oil and a whole lot of warm spices.
  • Grilled Vegetable Salad. There’s just something about grilled vegetables that make them even more delicious. The smoky char from the grill elevates the flavors beautifully.
  • Coleslaw. Coleslaw is such a classic side dish. The crunch of the cabbage and the creaminess of the dressing is the perfect addition to a crab cake meal.
  • Grilled Asparagus. As stated in the aforementioned grilled vegetable salad recipe, asparagus is an amazing vegetable to throw on the grill. All you have to do for this one is season it with olive oil, salt, and pepper, and then top with grated parmesan cheese and squeeze out the juice of a freshly grilled lemon.
