1 pound crab meat
3 tablespoons dry bread crumbs
2 teaspoons fresh parsley (chopped)
1 teaspoon Old Bay Seasoning
1 egg
2 tablespoons mayonnaise
1/2 teaspoon ground dry mustard

Steps:

  • Preheat oven broiler.
  • Combine crab meat, bread crumbs, Old Bay Seasoning, and parsley. Mix until well incorporated. But do not overmix. Crab meat should be lumpy.
  • In a separate bowl, beat together mayonnaise, mustard, and egg. Combine with other ingredients and mix well.
  • Form into patties and refrigerate for about half an hour. This will allow the crab cakes to firm up and prevent them from cracking or breaking up in the pan.
  • Put the patties into a lightly greased baking sheet. Broil for 10 to 15 minutes (or until lightly brown).

These crab cakes are my Grandma Zelda's recipe, and they have been in our family for generations. I've never had a better crab cake in my life, and I've tried dozens!

16 ounces fresh jumbo lump crab meat
1 large egg
1/2 cup regular mayonnaise
1/2 cup Italian bread crumbs
1 teaspoon Old Bay Seasoning
1/8 teaspoon fines herbs ((I like the one sold by Spice Island, see notes))
1/8 teaspoon garlic powder
1/2 teaspoon dijon mustard
1 teaspoon Worcestershire sauce
1-2 tablespoons unsalted butter

Steps:

  • Set the oven to low broil and place the oven rack near the top.
  • In a medium-sized bowl, carefully pick through the crab meat to remove any shells. Try not to break up the lumps. Be as thorough as possible.
  • In a separate bowl, whisk the egg and then add in the mayonnaise until combined.
  • Add the breadcrumbs and stir to combine. Add the Old Bay, fines herbs and garlic powder. Add the mustard and Worcestershire sauce, stir until well combined.
  • Gently stir the wet mixture into the crab meat, one spoonful at a time. This part takes some patience because you really want to avoid breaking up the lump meat as much as possible.
  • Carefully form 5-6 crab cakes.
  • Lightly grease the bottom of a baking sheet (cooking spray works well for this) and place the crab cakes on the sheet. Place a small piece of butter on top of each crab cake.
  • Broil on low for 12-15 minutes, keeping a close eye to make sure they don't burn. Don't flip them, just allow them to cook on one side the entire time (the lack of filler makes them very delicate). If the tops seem like they're going to burn, lower the oven rack. You're not cooking the meat but you want the filling to solidify and the egg to cook through.
  • If you want the tops a bit more golden, switch the broiler to the high setting for the last minute or so.
  • When the tops are golden brown, remove the pan from the oven and allow the crab cakes to cool slightly before serving.
  • I recommend serving them with Saltine crackers and dijon mustard. They also make a great sandwich.

1 egg yolk
1 tablespoon cider vinegar
1 tablespoon Dijon mustard
1 tablespoon diced red bell pepper
1 tablespoon diced yellow onion
3 tablespoons chopped fresh parsley
1 teaspoon Tabasco sauce
1/2 teaspoon paprika
1/2 teaspoon fresh thyme
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1/4 cup olive oil
1/4 cup sour cream
1 lb crabmeat
4 cups bread, crumbs
4 -5 tablespoons unsalted butter

Steps:

  • In a food processor, combine the egg yolk, vinegar, mustard, bell pepper, onion, 2 tspon parsley, tabasco, paprika, thyme, salt and pepper.
  • Slowly add the oil until the mixture emulsifies and forms a thin mayonnaise.
  • Transfer the mixture to a bowl and stir in the sour cream.
  • Stir in the crabmeat, gently to prevent from breaking the lumps.
  • Form 8 patties, 3 inches wide by 3/4 inch thick.
  • Put the bread crumps in a shallow plate and mix in the 3 tbsp of parsley.
  • Lightl dredge the patties on both sides in the bread crmbs.
  • Cover the crab cakes with plastic wrap and chill for at least one hour or longer.
  • Heat a skillet with butter over low to medium heat.
  • Add the crab cakes, fry for about 4 minutes perside or until golden brown.

1 tbsp. capers, drained and chopped
1 clove garlic, chopped
1/4 tsp. paprika
Juice of 1 lemon
1/2 tsp. kosher salt
1/4 tsp. ground black pepper

Steps:

  • For the crab cakes: In a medium bowl, beat the egg. Stir in the mayonnaise, dijon mustard, lemon zest, parsley and Old Bay seasoning and mix well to combine. Add the crab meat and panko and mix gently but thoroughly to combine. Form 8 crab cakes by pressing them into shape with 1/3-cup measuring cup. Place on a greased sheet tray and refrigerate for 30 minutes.
  • For the spicy remoulade: In a small bowl, whisk to combine the mayonnaise, hot sauce, parsley, capers, garlic, paprika, lemon juice, salt and pepper. Refrigerate until ready to use.
  • Place an oven rack 8 inches from the broiler element. Heat the broiler over high heat. Brush the tops of the crab cakes with melted butter. Broil until golden on top and heated through, 4 to 5 minutes. Serve immediately with lemon wedges and spicy remoulade.

1 tablespoon fresh parsley
1 garlic clove, minced
2 eggs, lightly beaten

Steps:

  • Combine lemon dill sauce ingredients and chill.
  • Saute the scallions, garlic, and parsley in a tablespoon of melted butter over medium heat until wilted.
  • In a large mixing bowl, combine the eggs, worcestershire sauce, dijon mustard, salt, pepper, 1/2 cup cracker crumbs, grated parmesan, and mayonnaise. Fold in the crabmeat. Shape into 8 crab cakes and coat in remaining cracker crumbs. Place crab cakes on a buttered baking pan. Melt butter and mix with lemon juice. Drizzle 1/2 of lemon butter over crab cakes.
  • Bake for 20 minutes at 350 degrees. Drizzle remaining lemon butter over crab cakes and broil for 2 minutes until slightly browned.
  • Serve with Lemon Dill Sauce.

½ pound lump crabmeat
½ an egg (2 tablespoons of an egg, beaten)
1 tablespoon half and half or heavy cream
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
8 saltine crackers
pinch of salt
4 teaspoons butter

Steps:

  • Place an oven rack 5 inches beneath the broiler. Set the broiler to high.
  • Prepare a baking sheet by lightly misting with olive oil or other nonstick spray.
  • Drain the crabmeat, and dab it gently with a paper towel.
  • Place the crab, egg, half and half, Worcestershire sauce, and Dijon mustard in a mixing bowl, and fold gently with a spatula, being careful not to break up the crabmeat.
  • Crush the crackers to a coarse crumb.
  • Add the cracker crumbs to the crabmeat mixture, and add a pinch of salt.
  • Fold until well combined.
  • Form four crab cakes, and place each on baking sheet.
  • Top each crab cake with 1 teaspoon of butter.
  • Broil the crab cakes for 3 minutes on the highest rack.
  • Move the crab cakes to the lowest rack to prevent burning, and finish broiling another 3 minutes.
  • Turn off the broiler, and let the crab cakes sit in the oven 1 more minute.
  • Remove the crab cakes from the oven, and serve topped with optional lemon slices and fresh parsley.

3 cups fresh breadcrumbs made from crustless French bread
2 large egg yolks, beaten to blend
1/4 cup vegetable oil
Chive and Caper Sauce
40 small basil sprigs

Steps:

  • Mix first 7 ingredients in medium bowl. Add crabmeat; toss. Fold in 1 cup breadcrumbs. Season with pepper. Mix in yolks.
  • Place 2 cups breadcrumbs on plate. Using 1 tablespoon crab mixture for each, form 1-inch-diameter patties. Coat each crab cake with breadcrumbs. Cover; chill at least 1 hour. (Can be made 1 day ahead. Keep refrigerated.)
  • Position rack 6 inches below broiler and preheat broiler. Brush 2 baking sheets with oil. Arrange crab cakes on baking sheets, spacing evenly. Broil until golden brown and cooked through, about 3 minutes per side. (Can be cooked 30 minutes before serving. Keep warm in 300°F. oven.)
  • Transfer crab cakes to platter. Top each with dollop of sauce and basil sprig.
