Crabmeat and Corn Soup image

A very tasty chowder-type recipe. Delicious any time.

¼ cup butter
¼ cup all-purpose flour
2 cups whole milk
2 cups half-and-half
1 ¾ cups whole kernel corn
1 cup chopped green onions
1 pound fresh crab meat
½ teaspoon ground white pepper
½ teaspoon seasoning salt
1 tablespoon soy sauce
¼ cup chopped parsley

Steps:

  • In a heavy-bottomed pot, melt butter, add flour, and stir gently until blended; do not burn or let it darken. Add milk gradually, stirring all the while, then add half and half, stirring gently while blending. Add corn and green onions, and cook for a few minutes until tender.
  • Add crabmeat, pepper, salt, and soy sauce and simmer until very hot and small bubbles form around the edge; do not let boil. Adjust seasonings to taste. Garnish with sprinkles of chopped fresh parsley when serving and serve hot.
  • Variations: You may use 4 cobs of fresh corn instead of frozen or canned. Cut the kernels off the cob, scrape cob for juices, and then add to soup. Cook until corn is tender. Canned crabmeat or imitation crab may be used instead of fresh crabmeat. Use one 7 1/2-ounce can crabmeat (drained) and 8 ounces imitation crab (cut into small pieces). Combine the two and cook as noted above.

This soup is like a chowder and is delicious. I am a soup lover and have developed or modified over 150 soup recipes to make them taste much better.

1/4 cup butter
1/4 cup all-purpose flour
2 cups whole milk, homogenized
2 cups half-and-half cream
2 cups corn, fresh,frozen or canned kernel
1 cup finely chopped green onions or 1 cup finely chopped scallion
1 lb fresh crabmeat
1/2 teaspoon white pepper
1/2 teaspoon seasoning salt
1 tablespoon soy sauce, regular
1/4 cup chopped fresh parsley

Steps:

  • In a heavy bottom cooking pot, melt butter on medium heat.
  • Add flour and stir gently until blended; DO NOT LET THE MIXTURE DARKEN.
  • Add milk gradually stirring continously until it starts to simmer.
  • Add half and half, stir gently until well blended.
  • Add corn and green onions, and cook for 3 to 4 minutes or until corn is just tender, stirring occasionally.
  • Add crabmeat, pepper, salt and soy sauce and simmer until very hot and small bubles start to form around the edge of the pot; stir frequently; BUT DO NOT BOIL.
  • Adjust seasonings to taste.
  • Garnish with sprinkles of chopped fresh parsley and serve immediately.
  • If using fresh corn, use 4 large cobs.
  • Cut kernels off cobs, scrape cobs for any milk and add to soup.
  • Canned crabmeat or imitation crabmeat may be used instead of fresh crabmeat.
  • Use 7 1/2 ounces of canned crabmeat (drained) and 8 ounces of imitation crabmeat cut into smaller pieces.

CANTONESE-STYLE SWEETCORN AND CRABMEAT SOUP



Cantonese-style sweetcorn and crabmeat soup image

This classic soup can be found in many restaurants and almost every book of Cantonese specialities. This recipe comes from The Cook's Companion.

2 sweetcorn cobs, grated*
vegetable oil
2 tbsp finely chopped spring onion
1 tsp freshly minced ginger
250g picked crab meat (2 medium blue swimmer crabs)
salt
1 tbsp rice wine, or mirin or dry sherry
600ml chicken stock
2 tbsp light soy sauce
1 tbsp cornflour
2 tbsp water
2 tsp sesame oil
1 egg, whisked with a pinch of salt and
1 tsp vegetable oil
1 tbsp black or red Chinese vinegar
* To grate corn: I bought a gadget in the US for doing this. It is like a fork with curved prongs and you drag it through the kernels. It splits them and then the gadget is turned over, becoming a rake that tears the broken kernels and the milky juices from the cob. Alternatively, stand the cob on its end on a large, flat plate. Using a sharp knife and working down the cob, slice halfway through the kernels, then with the back of the knife, or a soup spoon, rake down the cob, "grating" the remainder of the kernels as you go, until you have extracted as much of the corn and milky juice as possible. The grated corn will look rather like scrambled eggs.

Steps:

  • Grate corn from the cobs to make about 2 cups. Heat 2 tbsp oil in a wok or heavy-based saucepan. Sear spring onion and ginger for 30 seconds. Add crab meat, then sprinkle with salt and rice wine and stir lightly. Pour in corn, stock and soy sauce, stirring until soup comes to a boil. Reduce heat and simmer for 2 minutes. Mix cornflour, water and sesame oil and stir until quite smooth, then add a little hot soup and stir to blend. Tip mixture back into soup, swirling it in evenly. Turn off heat and trail the egg mixture over surface, stirring slowly to break up strands. Add vinegar and taste for salt. Adjust with soy sauce or serve soy sauce and additional vinegar alongside so guests can make their own adjustments. Serve immediately.

1 chicken bouillon cube
1 120g can crab meat, drained
1 398 ml can creamed style corn
¼ cup cornstarch dissolved in ¼ cup water
1 egg, lightly beaten
2 green onions , chopped
salt and white pepper to taste
Sesame oil

Steps:

  • Bring water and bouillon cube to a boil. Add crab meat and corn. Simmer for 2 minutes. Season to taste.
  • Slowly add the cornstarch mixture, stirring until the soup thickens.
  • Remove from heat, immediately pour in beaten egg in a steady stream to form flower patterns on the surface.
  • Drizzle with sesame oil and sprinkle with green onions.
  • Serve immediately and enjoy!

2 Tbsp. (30 mL) corn flour
2 Tbsp. (30 mL) water
1 eggs, beaten

  • In a large pot, combine water, crabmeat and corn and bring to a boil.Simmer for 2 minutes, and season to taste.In a bowl, whisk corn flour into water to dissolve.Add to soup over low heat, and stir to thicken.Remove from heat, stir in beaten egg, and serve.

1 tablespoon vegetable oil
1 cup sweet corn kernels
2 cups fish stock
salt and pepper to taste
1 egg, beaten
1 (6 ounce) can crabmeat, drained and flaked

Steps:

  • Heat the oil in a saucepan over medium-high heat. Add the corn, and fry for about 30 seconds. Pour in the fish stock, and season with salt and pepper. Simmer over medium-low heat for a few minutes. Drizzle in the egg while slowly stirring the soup to create a white swirl.
  • To serve, divide the crabmeat into 4 bowls, and ladle the hot soup over it.

A firm favourite from the Chinese restaurant that you can make at home in minutes. This is the cheats version, so easy and tasty. This recipe uses crab sticks, not whole crab, and a few crab claws. Makes a great starter to your Chinese meal. If you don't have crab claws, a few peeled prawns also work well with this dish.

  • Boil the stock and add all the other ingredients EXCEPT for the egg.
  • Let cook for five minutes, stir in the egg.
  • Serve.

3 tablespoons unsalted butter
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1/4 cup all-purpose flour
4 cups homemade fish stock or bottled clam juice
1/2 cup diced potato
1 cup fresh corn kernels
1 teaspoon chopped fresh thyme
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 cup coarsely chopped white crabmeat
1 cup heavy cream
2 tablespoons chopped fresh parsley

Steps:

  • Melt the butter in a large saucepan over medium heat and saute the onion and celery until softened. Stir in the flour and cook for 3 minutes, stirring frequently. Gradually add the stock, whisking until you have a smooth liquid. Add the potatoes, corn, thyme, salt and pepper. Cover and bring to a boil. Then reduce the heat and simmer for 15 minutes or until the vegetables are tender, stirring occasionally.
  • Stir in the crabmeat and heavy cream and heat the soup gently but thoroughly. Do not let it boil or the soup may curdle. Sprinkle with the chopped parsley and serve immediately.

2 tablespoons butter
2 all-purpose potatoes, peeled and diced
2 ribs celery, chopped
1 medium yellow onion, chopped
1 small red bell pepper, seeded and diced
1 bay leaf, fresh or dried
Salt and freshly ground black pepper
1 tablespoon Old Bay seasoning blend, found near seafood department or, on spice aisle in your market
3 tablespoons all-purpose flour
2 cups vegetable or chicken stock or broth
1 quart whole milk
3 cups corn kernels, scraped fresh from the cob, or frozen kernels
8 ounces cooked lump crab meat, fresh is available in plastic tubs at many fish counters
4 small bread boules, 6 inches, hollowed out, preferably sour dough, optional
Oyster crackers
Hot cayenne pepper sauce
Sliced scallions

Steps:

  • Heat a deep pot over moderate heat. Add oil and butter. As you chop your veggies, add them to the pot: potatoes, celery, onion, and red bell pepper. Add bay leaf to the pot. Season vegetables with salt and pepper and Old Bay seasoning. Saute veggies 5 minutes, then sprinkle in flour. Cook flour 2 minutes, stirring constantly. Stir in broth and combine. Stir in milk and combine. Bring soup up to a bubble. Add corn and crab meat and simmer soup 5 minutes. Adjust the soup seasonings. Remove bay leaf. Ladle soup into bread bowls or soup bowls and top with oyster crackers, hot sauce and sliced scallions.
