4 sheets phyllo pastry
1/4 cup (1/2 stick) butter, melted
8 ounces flaked crabmeat
1/2 cup finely chopped red onion
1/3 cup mayonnaise
1/4 cup chopped fresh chives
1 tablespoon fresh lime juice
1/4 cup whipping cream
2 tablespoons Dijon mustard
2 tablespoons sour cream
1/2 English hothouse cucumber, cut into matchstick-size strips
1 tablespoon chopped fresh dill
1 tablespoon olive oil
8 teaspoons mango chutney

Steps:

  • Preheat oven to 400°F. Place 1 phyllo sheet on work surface; cover remaining phyllo. Brush phyllo sheet with melted butter. Top with second phyllo sheet and brush with butter. Repeat layering 1 more time. Top with fourth phyllo sheet. Cut phyllo stack into 12 squares. Arrange squares on large baking sheet. Bake until golden, about 6 minutes. Cool completely.
  • Mix crabmeat and next 4 ingredients in large bowl. Season to taste with salt and pepper. Set aside.
  • Mix cream, mustard and sour cream in small bowl to blend. Season with salt and pepper. (Can be made 1 day ahead. Store phyllo squares in airtight container. Cover crab mixture and mustard sauce separately and refrigerate.)
  • Mix cucumber, dill and olive oil in medium bowl. Season with salt and pepper. Let stand 30 minutes.
  • Place 1 phyllo square in center of each of 4 plates. Top each with 1/4 cup crab mixture, then 1/4 cup cucumber. Drizzle 1 teaspoon chutney over each. Repeat layering with phyllo square, crab mixture, cucumber and chutney. Top each with third phyllo square. Drizzle mustard sauce around stacks.

1 lb crabmeat, shredded (fresh or frozen)
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon whole grain mustard
3 tablespoons finely-minced carrots
2 tablespoons fresh lime juice
2/3 cup minced green onion
1/2 large baked potato, peeled, and mashed lightly
1 teaspoon chopped cilantro
1 teaspoon soy sauce
1/2 cup breadcrumbs
3 tablespoons oil
1 garlic clove, minced
2 shallots, minced
1 tablespoon butter
1/2 cup white wine
1/2 cup clam juice
1 cup whipping cream
1 tablespoon Dijon mustard
1 teaspoon lemon juice
1 tablespoon whole grain mustard

Steps:

  • Heat the oven to 425 degrees.
  • Combine the crab meat, mayonnaise, Dijon mustard, whole-grain mustard, carrot, lime juice, green onions, potato, cilantro, soy sauce and bread crumbs.
  • Form into patties about 3 inches in diameter.
  • Heat the oil in a skillet over medium heat and cook half the patties until they're golden brown on one side, 4 to 5 minutes.
  • Remove them to a baking sheet.
  • Cook the remaining patties and add them to the baking sheet.
  • Bake the crab cakes until they're heated through, about 3 minutes.
  • Serve with Mustard Sauce.
  • Can be served with vegetables and potatoes as an entree or on a small bed of mango and papaya as an appetizer.
  • For the Mustard Sauce:
  • Cook the garlic and shallots in the butter over medium heat until softened, about 2 minutes.
  • Add the wine and clam juice and continue cooking until the liquid is reduced by half, about 10 minutes.
  • Add the cream and continue to cook until the sauce is again reduced by half, 10 minutes.
  • Add the Dijon mustard and lemon juice.
  • Cook for 1 minute and strain.
  • Stir in the whole-grain mustard and serve.
  • Makes about 3/4 cup.

Cucumber Tartar Sauce:
1 cup 1/8-inch cubes peeled and seeded cucumber
1/2 teaspoon salt
1/2 cup mayonnaise
1 scallion, white and green parts, finely chopped
2 tablespoons nonpareil capers, rinsed
1 teaspoon anchovy paste
Crab Cakes:
1/2 cup plus 1/3 cup dried bread crumbs
1/4 cup mayonnaise
1 large egg, beaten
1 tablespoon Dijon mustard
1 scallion, white and green parts, finely chopped
1/2 teaspoon Worcestershire sauce
1/2 teaspoon Delmarva Seasoning, or store-bought Old Bay Seasoning
1 pound fresh lump crabmeat, picked over for cartilage
vegetable oil for deep-frying

Steps:

  • To make the sauce:
  • In a medium bowl, toss the cucumber with the salt. Let stand about 1 hour. Transfer to a sieve and rinse well under cold running water. Pat the cucumber dry.
  • In a small bowl, mix the drained cucumber, mayonnaise, scallion, capers, and anchovy paste. Cover and refrigerate for at least 1 hour. (The tartar sauce can be prepared up to 3 days ahead.)
  • To make the crab cakes:
  • Mix the 1/2 cup bread crumbs, the mayonnaise, egg, mustard, scallion, Worcestershire sauce, and Delmarva or Old Bay seasoning. Mix in the crabmeat with wet hands, form into 6 cakes about 3 inches wide. Place the remaining 1/2 cup bread crumbs in a deep plate. Coat the crab cakes in the crumbs and set aside.
  • Line a baking sheet with paper towels. Into a large deep skillet (preferably cast iron), pour vegetable oil to a depth of 1/2 inch, and heat over high heat until very hot but not smoking. Carefully add the crab cakes and cook, turning once, until golden brown, about 3 minutes. Using a slotted spatula, transfer to the paper towels to drain. Serve hot, with the tartar sauce on the side.
  • To make Delmarva Seasoning: Mix 2 teaspoons salt, 1 teaspoon ground celery seed, 1 teaspoon dry mustard, 1 teaspoon sweet paprika, 1 teaspoon ground black pepper, 1 teaspoon ground bay leaf, 1/4 teaspoon ground cloves, 1/4 teaspoon ground allspice, 1/4 teaspoon ground ginger, 1/4 teaspoon freshly grated nutmeg, 1/4 teaspoon ground cardamom, and 1/4 teaspoon ground cinnamon. Will keep indefinitely in a tightly covered container in a cool, dark place. Makes about 3 tablespoons.

  • Place the mustard in a mixing bowl or the bowl of an electric mixer. Add the mayo and beat for 1 minute Add the Worcestershire sauce, steak sauce, cream, milk and a pinch of salt. Beat until the mixture is well-blended and creamy. If you'd like a little more mustard flavor, whisk in about 1/2 tsp more dry mustard until well-blended. 6 slices white bread, crusts removed
1 pound lump crabmeat, picked over for shells
1/2 cup mayonnaise
1 large egg yolk
1 stalk celery, finely chopped
1/4 cup finely chopped dill pickles
1 tablespoon unsalted butter, for frying
1 tablespoon olive oil, for frying
2 tablespoons unsalted butter
1 tablespoon all-purpose flour
2 teaspoons curry powder
1 teaspoon paprika
1/2 cup low-sodium chicken broth
1 cup milk
3 tablespoons whole-grain mustard
2 teaspoons yellow mustard seeds
Kosher salt and freshly ground pepper

Steps:

  • Prepare the crab cakes: Pulse the bread in a food processor to make coarse crumbs; spread out the crumbs on a sheet pan. In a large bowl, mix the crab, mayonnaise, egg yolk, celery and pickles. Form into 8 oval-shaped cakes. Dredge each crab cake in the breadcrumbs, coating them all over; place on a plate and refrigerate at least 1 hour.
  • Make the sauce: In a small saucepan, melt 1 tablespoon butter. Stir in the flour, curry powder and paprika; cook until the flour and spices lose their raw smell, 1 to 2 minutes. Add the chicken broth and milk. Bring to a simmer and cook, stirring, until thickened, 5 minutes. Stir in the mustard and mustard seeds; simmer to develop the flavors, about 5 more minutes. Whisk in the remaining 1 tablespoon butter; add 1/2 teaspoon salt, and pepper to taste. Keep warm until ready to serve.
  • Fry the crab cakes: Melt the 1 tablespoon butter with 1 tablespoon olive oil in a large skillet. Add the crab cakes; cook until browned on the bottom, 2 to 3 minutes. Turn and cook until evenly browned on all sides. Serve with the mustard sauce.

3 tablespoons dry mustard
1/2 teaspoon turbinado sugar (see Cooks' Note)
1 cup safflower or canola oil
1 small clove garlic, peeled and minced
1/2 small shallot, peeled and minced
2 large egg yolks
Juice of 1 large lemon
1 tablespoon Dijon mustard
1 teaspoon kosher salt
1/2 teaspoon cayenne pepper
5 pounds stone crab claws, cracked

Steps:

  • In a small bowl, whisk together the dry mustard, sugar, and 2 tablespoons warm water; let stand 5 minutes. In a small sauté pan over moderate heat, warm 2 tablespoons of the oil. Add the garlic and shallot and sauté, stirring occasionally, for 1 minute.
  • In a large bowl using a balloon whisk, whip the egg yolks for 1 minute to lighten them. Whisk in the lemon juice, Dijon mustard, salt, and cayenne pepper. Add the dry-mustard mixture, along with the garlic and shallots, and stir until blended. Gradually drizzle in the remaining 3/4 cup plus 2 tablespoons oil, whisking to combine. Cover and chill at least 20 minutes before serving. DO AHEAD: The mustard sauce can be prepared ahead and stored, covered in the refrigerator, up to 24 hours.
  • To Serve
  • Serve the mustard sauce in small bowls or ramekins, alongside the stone crab claws.
