EASY CRAB CAKES RECIPE
Steps:
- Preheat oven broiler.
- Combine crab meat, bread crumbs, Old Bay Seasoning, and parsley. Mix until well incorporated. But do not overmix. Crab meat should be lumpy.
- In a separate bowl, beat together mayonnaise, mustard, and egg. Combine with other ingredients and mix well.
- Form into patties and refrigerate for about half an hour. This will allow the crab cakes to firm up and prevent them from cracking or breaking up in the pan.
- Put the patties into a lightly greased baking sheet. Broil for 10 to 15 minutes (or until lightly brown).

CRAB AND BREADFRUIT CAKES
From Diamond Head Grill's Executive Chef David Reardon and Executive Sous Chef Todd Constantino. Delicious with avocado salsa, wasabi, or honey mustard. You could make smaller crab cakes for appetisers, if you wish.

Steps:
- In a small bowl, combine crab meat and steamed breadfruit; set to the side.
- In a hot saute pan, heat 1 teaspoon olive oil; add shallots, red and yellow pepper and saute for a few minutes or until tender.
- Cool, then add to crab mixture.
- Add remaining ingredients (except olive oil) and fold together.
- Divide into six cakes.
- Heat remaining olive oil in saute pan and cook crab cakes until golden brown on each side.
- Place on a plate of salad greens and serve with the condiments of your choice.

Breadfruit is used as a vegetable when mature but not ripe. Ripe breadfruit is also used for dessert dishes like this one. Like potatoes and bananas, the breadfruit is rich in starch, only some of which is converted into sugars upon ripening. Nutritionally, breadfruit is an excellent staple, rich in proteins, with a range of amino acids.

- In a large mixing bowl, blend together the dry ingredients.
- Add oil, and stir well.
- Beat in eggs and vanilla and continue beating with electric mixer.
- Beat in breadfruit until smooth.
- Remove fibrous breadfruit from beater.
- Stir in nuts.
- Bake in 3 long pans for 45 minutes.
