CRAB AU GRATIN SPREAD

For a warm and winning appetizer, Suzanne Zick of Maiden, North Carolina serves this special cracker spread. It's rich tasting and easy to whip up with convenient canned crab.

Number Of Ingredients 13

2 tablespoons plus 1 teaspoon butter, divided
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon paprika
1/2 cup half-and-half cream
1/2 cup milk
1/4 cup white wine or chicken broth
1 can (6 ounces) crabmeat, drained, flaked and cartilage removed or 2/3 cup chopped imitation crabmeat
1 can (4 ounces) mushroom stems and pieces, drained and chopped
1-1/2 teaspoons minced chives
1/2 cup shredded cheddar cheese
1 tablespoon dry bread crumbs
Assorted crackers

Steps:

  • In a large saucepan, melt 2 tablespoons butter. Stir in the flour, salt and paprika until smooth. Gradually add the cream, milk and wine. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in the crab, mushrooms and chives; heat through. Stir in cheese just until melted., Transfer to a greased shallow 1-qt. baking dish. Melt remaining butter; toss with bread crumbs. Sprinkle over crab mixture. Bake, uncovered, at 400° for 10-15 minutes or until bubbly. Let stand for 5 minutes. Serve with crackers.

1 1/2 cup panko bread crumbs
1/4 cup shredded parmesan cheese
2 tablespoons chopped fresh parsley
1 tablespoon olive oil
1/2 cup chopped scallions
1/4 cup diced red bell pepper
1 tablespoon olive oil
1 teaspoon minced fresh garlic
1/4 cup dry sherry
one can artichoke hearts, drained and chopped, 14 ounces
1/2 cup heavy cream or half and half
8 ounces low-fat cream cheese, cubed,(neufchatel
1/2 cup shredded parmesan
1 tablespoon minced lemon zest
1 tablespoon fresh lemon juice
2 teaspoons dijon mustard
2 teaspoons minced tarragon
1 to 2 teaspoons tabasco sauce
1/2 teaspoon worcestershire
two cans pasteurized crabmeat, drained, 6.5 ounces each

Steps:

  • 1. preheat oven to 400°. Coat a 1 quart baking dish with nonstick spray. Set aside
  • 2. For the topping, mix Panko, 1/4 cup bread crumbs, parsley, and 1 tablespoon oil in a bowl. Set aside.
  • 3. For the gratin, sauté scallions and Bell pepper in 1 tablespoon oil in a sauté pan over medium-high heat until soft, two minutes. Add garlic; cook 30 seconds. Deglaze pan with Sherry, then reduce until nearly evaporated. Stir in artichokes and cream; simmer one minute.
  • 4. Add low-fat cream cheese, reduce heat to low and stir until melted. Off heat, stir in 1/2 cup Parmesan, zest, lemon juice, Dijon, tarragon, Tabasco, and Worcestershire.
  • 5. Gently stir in crabmeat. Transfer mixture to prepare dish, sprinkle with topping, and bake until gratin is Golden, 25 to 30 minutes. Serve hot with crostini. Makes 12 servings

I haven't tried this yet but am on a big seafood kick since our honeymoon on the east coast! I think this would make a great fondue and plan to adapt it in that way.

1 medium leek (white part only)
1 medium vidalia onion
1/2 cup drained canned artichoke heart
1/2 cup thawed frozen chopped spinach
1 lb brie cheese
2 tablespoons minced garlic
2 tablespoons olive oil
1/4 cup riesling wine or 1/4 cup other medium-dry white wine
2/3 cup heavy cream
3 tablespoons finely chopped fresh parsley leaves
2 tablespoons finely chopped fresh dill leaves
1 tablespoon finely chopped fresh tarragon leaf
1 lb fresh jumbo lump crab meat (which would be my only option here in Indiana!) or 1 lb imitation crabmeat (which would be my only option here in Indiana!)
2 tablespoons Dijon mustard
1 teaspoon Tabasco sauce, to taste
toasted thin slices baguette (for serving)

Steps:

  • Preheat oven to 425°F and lightly oil an 11-inch gratin or other shallow baking dish (about 6-cup).
  • Trim and finely chop leek.
  • In a large bowl of water wash leek well and lift from water into a large sieve to drain.
  • Finely chop onion.
  • Rinse and finely chop artichoke hearts.
  • Squeeze dry and finely chop spinach.
  • Discard rind from Brie and cut into 1/4-inch pieces.
  • In a heavy skillet cook leek, onion, and garlic in oil over moderate heat, stirring, until pale golden and stir in artichoke hearts and spinach.
  • Add wine and cook, stirring, 3 minutes.
  • Add cream and simmer, stirring, 1 minute.
  • Add Brie, stirring until it just begins to melt.
  • Remove skillet from heat and stir herbs into mixture.
  • In a large bowl stir together crab meat, mustard, Tabasco, and salt and pepper to taste and stir in cheese mixture.
  • Spread mixture evenly in baking dish and bake in middle of oven 15 to 20 minutes, or until golden.
  • Serve dip hot with toasts.

I got this recipe from a friend in my recipe club. It was such a hit with my family that I served it for company with rave reviews. My usually finicky son could not get enough of it. Everyone wanted the recipe and there were no leftovers.

6 tablespoons butter
1 cup chopped onion
1/2 cup green onion
1/4 cup parsley
1/2 teaspoon garlic
1 lb crabmeat
1 tablespoon creole seasoning (I use Tony Chachere's, amount can be adjusted to personal taste)
2 tablespoons flour
hot sauce (I use Frank's)
1 cup clam broth or 1 cup clam juice
1 cup shredded medium cheddar
1/2 cup shredded mozzarella cheese

Steps:

  • Pre-heat oven to 350°F.
  • Melt 4 Tbsp butter in medium size saucepan; add onions, green onions and parsley.
  • Sauté until onion is clear.
  • Stir in garlic, crabmeat,Creole Seasoning (to taste), and hot sauce; reduce heat to low and continue cooking.
  • In a separate saucepan, melt remaining butter over medium heat, add 2 Tbsp flour and lightly brown, stirring occasionally.
  • Slowly add stock and continue cooking until mixture begins to thicken.
  • Add ½ of cheddar cheese, stir until melted.
  • Pour mixture into crab and carefully stir.
  • Turn into greased casserole and top with remaining cheddar and mozzarella.
  • Bake 20 to 30 minutes.
  • Serve hot as a main course or with toasted French bread or crackers for a great hot appetizer.

CREAMED CRAB WITH ARTICHOKES

1/2 cup butter
1/2 cup flour
1/4 cup onion, grated
1/2 cup green onion, chopped
2 tablespoons parsley, chopped
2 cups whipping cream
3/4 cup dry white wine
2 1/2 teaspoons salt
1/2 teaspoon white pepper
1/4 teaspoon Cayenne pepper
2 tablespoons lemon juice
2 pounds crab meat
1 14-ounce can artichoke hearts, drained and sliced
1/2 pound mushrooms, sliced

Steps:

  • Melt butter, stir in flour, and cook for 5 minutes on medium heat. Add onions and parsley and cook 2 to 3 minutes. Gradually stir in cream and heat well. Add wine, salt and peppers. Blend well and simmer stirring constantly. Remove from heat. When mixture is luke warm, add lemon juice.
  • Place meat in bottom of 18 X 28-inch baking dish. Spoon a third of the sauce over top. Layer artichokes over sauce, then cover with third of sauce. Add mushrooms, and top with remaining sauce. Bake in 350°F oven 30 to 40 minutes.

3 tablespoons olive oil
1 garlic clove, minced
1 lb frozen artichoke heart, thawed
2 tablespoons fresh parsley leaves, chopped
3/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/8 teaspoon red pepper flakes
1/2 cup chicken broth
1/4 cup marsala wine
2 tablespoons butter
1/3 cup plain breadcrumbs
1/3 cup parmesan cheese, grated

Steps:

  • Preheat the oven to 450 degrees F.
  • Warm the olive oil in a heavy bottom skillet over medium-high heat. Add the garlic and cook for 1 minute. Add the artichoke hearts, parsley, salt, pepper, and red pepper flakes and cook until the artichoke hearts are starting to brown at the edges, about 3 minutes. Add the chicken broth and wine and simmer for 3 minutes. Transfer the artichoke mixture to a 2-quart baking dish.
  • Melt the butter in the same skillet used to cook the artichokes. In a small bowl mix the melted butter with the bread crumbs. Stir in the Parmesan and top the artichokes with the bread crumbs. Bake until the top is golden, about 10 minutes.
