CANNED CHUNKY TOMATO AND VEGETABLE SAUCE



Canned Chunky Tomato and Vegetable Sauce image

I wanted a thick tomato sauce with lots of summer vegetables but without jalapenos or hot spices. I needed something with simple flavours for a pasta sauce or as a base for other dishes. Since I didn't find one, I made up my own and here it is.Note that in my method you don't process the jars after filling so it is relatively quick to do.

3 kg roma tomatoes (ripe, firm with thin skins if possible)
5 small zucchini
2 green peppers
2 red peppers
2 garlic cloves
chopped flat leaf parsley
1 teaspoon basil (or more to taste)
1 teaspoon oregano (or more to taste)
1/2 teaspoon black pepper
2 tablespoons kosher salt (or salt with large crystals)

Steps:

  • Place 9 x 370ml jars with a wide neck in the dishwasher and wash at 65-70 C (around 149 F). Don't wash the lids in the dishwasher if they are new, just wash with hot soapy water.
  • Meanwhile, wash all the tomatoes and peppers and scrape the zucchini lightly leaving some colour.
  • Peel and chop the onion and peel and mince the garlic.
  • Chop the tomatoes, peppers and zucchini into small chunks depending how chunky you want your sauce.
  • Throw everything into a large stock pot and bring to the boil stirring every now and then so that you don't get any pieces stuck on the bottom. Once the tomatoes start to cook, the juices are released and you don't need to stir.
  • Add the salt and remaining spices and allow mixture to boil over medium heat for about one hour.
  • When the mixture has thickened to your liking turn off the heat but leave the sauce on the hotplate. It must not cool down.
  • Dry the washed jars and their lids. The jars should still be slightly warm from the dishwasher.
  • Fill each jar to just under the brim and seal carefully. Immediately turn jar upside down.
  • Repeat until all the jars are filled.
  • When the jars have cooled turn the right way up and store.
  • This makes a mild sweet sauce which is very nice with pasta especially as a sauce in vegetarian lasagna.
  • Edited: Since discussing canning techniques on the forum I felt I should mention that this method is appropriate for tomatoes in Greece which have a high acidic content. They do not spoil even without processing in a water bath. Traditionally Greeks make tomato sauce with tomatoes and salt, nothing else. Furthermore I don't remove the peel or seeds from the tomatoes as they are sweet and do not detract from the flavour. If your tomatoes are different then please process them so that they do not spoil and peel if you know that the skin will be bitter.

Number Of Ingredients 7

1 tablespoon extra virgin olive oil
2 teaspoons minced fresh garlic (about 2 cloves)
2 roma tomatoes, diced into 1/2 inch cubes (plum)
1 teaspoon chopped fresh oregano leaves (or 1/2 teaspoon dried)
1/2 teaspoon salt
1 pinch fresh ground black pepper
1 tablespoon tomato paste

Steps:

  • Cook the garlic in the olive oil in a nonstick pan, over medium heat for 1 to 2 minutes, until the garlic's just starting to be translucent.
  • Add the remainder of the ingredients except for the tomato paste, reduce heat slightly and cook, stirring frequently, until the tomato juices evaporate (about 10 minutes).
  • Remove from heat and stir in tomato paste.

10 Minute Tomato Sauce from America's Test Kitchen image

Fresh tasting pasta sauce using canned crushed tomatoes as described on America's Test Kitchens. Use either Muir Glenn or Tuttoroso crushed tomatoes because they use a lower processing temperature in the canning process and therefore are fresher tasting than other brands. Recipe Notes: According to the chefs, grating the onions instead of chopping allows them to carmelize more quickly. The butter is used because saturated fats helps the onions stay sweet. Olive oil contains unsaturated fats that react with an enzyme in the onion that can result in a bitter taste. Using crushed tomatoes is preferable to other forms. The chefs apparently expended a great deal of effort in developing this simple recipe so it is suggested that it be followed closely in order to acheive a fresh tasting sauce from canned tomatoes.

1/4 cup onion, grated
2 tablespoons butter
1/4 teaspoon dried oregano
1/2 teaspoon salt
2 garlic cloves, crushed
1 (28 ounce) can crushed tomatoes
1/4 teaspoon sugar
1 tablespoon olive oil
2 tablespoons fresh basil, chopped

Steps:

  • Melt butter in saucepan over medium heat. Add 1/4 cup grated onion. Saute 2 minutes. Add oregano and 1/2 tsp salt. Cook with stirring 3 minutes until onions begin to brown. Add crushed garlic. Cook 30 seconds. Add crushed tomatoes and sugar. Turn heat to high and cook with stirring until simmering. Turn heat to medium low. Simmer 10 minutes. Remove from heat. Stir in olive oil and basil. Season with salt and pepper to taste. Serve over pasta.

A few years ago I came upon a sauce that was so good but........... I altered it quite a bit to fit our family. This is now the best sauce I have ever had and if you follow the measurements, it will come out the same every single time. I use Tuttoroso brand in the puree, paste, and sauce because that is the one my friend's mother always used. She was from Italy and made the best sauce in the world. Hubby loves it and comments on it whenever we have it which is once a week. It freezes well and is great with meatballs even thought there is a lot of meat in the sauce. Serve it with garlic bread and you will be sooooo happy.

1 lb italian sweet sausage
1 lb hamburger (I use chuck (80% I think it is)
2 fresh garlic cloves (minced)
1/2 medium onion (chopped)
2 (28 ounce) cans tomato puree (see note above on the brand I use)
2 (6 ounce) cans tomato paste
2 (8 ounce) cans tomato sauce
2 1/2 cups water
3 1/2 teaspoons basil
2 1/2 teaspoons parsley
2 teaspoons brown sugar (could use white if you want to)
1 teaspoon salt
1/8 teaspoon black pepper
1/4 cup parmesan cheese

Steps:

  • In a heavy pot, brown sausage and hamburg, breaking it up into smaller pieces.
  • Add chopped onions and minced garlic and cook till meat is done; add tomato paste and stir until it is mixed in well.
  • Add tomato puree, sauce, and water (when measuring the water, put it into the puree can to rinse it all out and then add to meat mixture).
  • Add basil, brown sugar, salt, parsley, and black pepper and mix well.
  • Add the Parmesan cheese (yes, to the the sauce) and mix it in well.
  • Simmer on low for 2-4 hours stirring occasionally so it won't burn; if you think it needs some thinning down, add about 1/8 cup water at a time; don't add too much because you want it thick so it will stick to your pasta.
  • Cook your spaghetti and enjoy! Eat what you want and freeze the rest in containers that will hold the amount you will eat at a sitting.

1 tablespoon olive oil
2 teaspoons garlic
2 roma tomatoes (1/2 pound)
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon kosher salt
1 pinch ground black pepper
1 tablespoon tomato paste

Steps:

  • Heat the olive oil in nonstick pan over medium heat. Don't allow to smoke. Add the garlic and cook, stirring constantly, until it turns light brown (about 1 - 2 minutes). Do not allow garlic to burn, as it will make the sauce bitter.
  • Add the remaining ingredients except tomato paste, and stir well. Reduce the heat and summer the sauce until all of the liquid evaporates (about 10 minutes). Stir in the tomato paste and cook for an additional 2 minutes.
  • Remove from heat and cool completely before using.
