Sweet and chunky describe this hearty chili that kids will love. For the adults, add a dash or two of hot sauce and warm up your winter, and your taste buds.

1-1/2 cups refrigerated fully cooked barbecued shredded pork
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup canned black beans, rinsed and drained
3/4 cup beef broth
3/4 cup chopped green pepper
1/2 teaspoon minced garlic

Steps:

  • In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes or until pepper is crisp-tender.

Cowpoke Beans image

This recipe was used by a chef I worked for and still enjoy feeding to my crew at home. This was served as a side dish for a Mardi Gras feast. You can also make this for vegetarian by omitting the bacon. A little of the favor is missing, but it still has a kick.

1 pound dry pinto beans
4 slices bacon, cooked and crumbled
½ teaspoon crushed red pepper flakes
1 clove garlic, chopped
2 tablespoons butter
2 cups chopped onion
1 ⅔ cups canned stewed tomatoes
¼ cup chopped fresh parsley
½ teaspoon ground cumin
½ teaspoon dried marjoram
1 ¼ tablespoons chili powder
1 teaspoon salt

Steps:

  • Soak pinto beans overnight with plenty of water to cover. Drain, remove to a large cooking pot, and cover with fresh water. Add the bacon, red chile flakes, and garlic. Bring to a boil, then reduce heat and simmer, covered, for about 3 hours.
  • Melt butter in a large skillet over medium-high heat. Saute onion in butter until tender. Add the tomatoes, parsley, cumin, marjoram, and salt. Simmer over low heat for about 45 minutes to blend the flavors.
  • When beans are tender, drain off any remaining water. Pour in the tomato mixture, and simmer for an additional 20 minutes, stirring occasionally. Serve hot.

1 pound ground beef
1 small onion, chopped
1 garlic clove, minced
1 can (10-1/2 ounces) condensed beef broth, undiluted
1 can (8 ounces) tomato sauce
1 can (6 ounces) tomato paste
1 can (16 ounces) hot chili beans, undrained
1 can (15 ounces) black beans, rinsed and drained
2 tablespoons sugar
1 tablespoon butter
1 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon dried oregano
1/8 teaspoon ground cumin
1/8 teaspoon crushed red pepper flakes
Dash cayenne pepper
2 cups frozen lima beans, thawed
Cherry tomatoes, fresh oregano and small chili peppers, optional

Steps:

  • In a large saucepan, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the broth, tomato sauce and paste until blended. Add the next 10 ingredients. Bring to a boil. Reduce heat; cover and simmer for 30 minutes., Add lima beans; cook 5-10 minutes longer or until beans are tender. Garnish with tomatoes, oregano and peppers if desired.

2 tablespoons red chili pepper flakes
1 tablespoon cumin powder
1 tablespoon chili powder
1 tablespoon coriander
2 tablespoons paprika
1 lb coarsely ground sirloin (It must be ground sirloin, not ground beef, I grind my sirloin on the food processer)
1 x-large onion, chopped
3 tablespoons minced garlic
2 (28 ounce) cans Mexican-style stewed tomatoes
1 1/2 cups canned red kidney beans, drained (or more if desired)
1 cup chopped black olives
1/2 cup black coffee
1/2-1 cup red wine
4 tablespoons chopped fresh cilantro
2 scallions, sliced
6 drops liquid smoke
hot sauce

Steps:

  • In a heavy-bottom stock pot, brown chili flakes, cumin, chili powder, coriander and paprika in olive oil, to release the flavor and aroma.
  • Add the ground sirloin, onions and garlic; brown.
  • Add all other ingredients.
  • Simmer for 2-3 hours.

6 jalapenos, chopped
2 large onions, chopped
1 garlic clove, chopped
1 (8 ounce) can tomato sauce
salt and pepper
2 lbs lean ground beef
1 teaspoon cumin seed
1 teaspoon oregano
1/4 cup cold water

Steps:

  • Saute jalapenos, beef, onion, garlic until meat loses its red color.
  • Add remaining ingredients and water.
  • Bring to boiling reduce heat, and simmer, covered utill you`ve finished a case of beer.
  • Prepare Roadrunners, let chili cool and feed to the roadrunners.
  • Lean back, take it easy and enjoy the rest of the beer!

Put the rind, beans, onions, grarlic and Ancho peppers into a large heavy kettle. Add in water and bring to a boil. Lower the flame, cover the kettle and let the beans cook gently about 1 1/2 hrs.
  • Add in salt and cook uncovered for 15 min. In a separate pan, fry diced bacon till slightly crisp. Add in tomatoes and remaining ingredients to bacon. Cook this mix over medium flame for about 10 min. Skim off excess fat. Add in bacon ant tomato mix to beans and continue cooking uncovered, over a low flame for 1 hour or possibly till beans are very tender.
  • Makes about 3 qts. They used to say a cowhand would work from sunrise to sunset "for a dollar a day and a plate of beans." Now, either he liked his work or possibly the beans were pretty good. And they tasted even better when the cook built a bean chili by adding bacon, tomatoes and warm peppers.
