This Cowboy Chicken is packed with wholesome veggies, beans, corn, and loads of flavor! Top it off with delicious cheese and this one dish meal was made to please!

2 lbs chicken breast (boneless, skinless)
1 cup black beans (drained and rinsed)
1 cup black eyed peas (drained and rinsed)
1 cup canned fire roasted tomatoes (drained)
1/2 cup corn kernals (canned or frozen)
1/2 cup bell pepper (diced)
1/4 cup sweet onion (diced)
1/4 cup diced jarred jalapeños (optional)
3 cloves fresh garlic (pressed)
2 tbsp italian dressing mix (divided)
1 tbsp extra virgin olive oil
1 cup colby jack cheese (shredded)
2 tbsp fresh lime juice (about 1 lime)
1 tbsp cilantro (optional)

Steps:

  • Lay the chicken breast flat in a casserole dish, then sprinkle 1 tbsp of the italian dressing seasoning over the top.
  • In a bowl, mix the black beans, black eyed peas, fire roasted tomatoes, corn, onion, bell pepper, garlic, oil, lime juice, and the remaining 1 tbsp dressing mix until combined.
  • Spread the bean mixture over the seasoned chicken. Bake uncovered on the middle rack at 375˚F for 45-55 minutes or until the chicken is cooked through (internal temp 165˚F)
  • 5 minutes before the baking is finished, remove the dish and cover the top evenly with cheese and return to the oven to cook until done.
  • Garnish with cilantro and serve over rice or with your favorite side dishes. Enjoy!

2 pounds cubed venison stew meat
1 medium yellow onion, diced
2 tablespoons chopped garlic
Salt and pepper
1 tablespoon ground chili powder
1 tablespoon brown sugar
1 bunch cilantro, leaves chopped
1/2 cup reduced chicken stock
5 cups shredded colby-jack cheese
12 corn tortillas
4 tablespoons canola oil
Red Enchilada Sauce, recipe follows
1 red bell pepper
2 cups canola oil
1 1/2 onions, chopped
6 cloves garlic, chopped
Ten 6-inch corn tortillas
3/4 cup chili powder
1/2 tablespoon ground cumin
1 tablespoon cocoa powder
2 tablespoons black pepper
2 tablespoons salt
1/2 cup semisweet chocolate
5 cups chicken stock
2 cups brewed coffee
1/2 cup orange juice concentrate

Steps:

  • Heat oil in a large heavy skillet until almost smoking. Carefully add venison meat, chopped onion and chopped garlic, season with salt and pepper and brown the meat, stirring occasionally. Add chili powder, brown sugar and cilantro. Deglaze this with the chicken stock. Removed from heat and allow to cool. Stir in 3 cups of the shredded cheese.
  • Preheat oven to 375 degrees F.
  • Soften 12 corn tortillas in a microwave oven, wrapped in a damp cloth for 10 to 20 seconds on high, until soft and pliable. Spoon 2 to 3 tablespoons of venison mix into center of tortilla and roll. Place rolled enchiladas into a lightly oiled baking dish, seam side down. Smother with enchilada sauce and sprinkle remaining colby-jack cheese, to taste. Cover and bake for 20 minutes.
  • Flame-roast bell pepper until skin is blistered, place in a bowl and wrap with plastic. Allow to cool, then peel, seed, and chop. In a heavy bottom skillet, heat canola oil. Saute onion, bell pepper, and garlic until onions are lightly caramelized. Add tortillas torn into pieces. Add chili powder, cumin, cocoa powder, pepper and salt to release oils in the spices, about 1 minute using care not to burn the spices.
  • Add chicken stock, coffee and orange juice concentrate. Add chocolate, chopped into pieces. Bring to a boil and simmer for about 45 minutes. Remove from heat, carefully blend smooth in a processor or blender in batches (sauce should be smooth but still thick). When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth. Adjust the consistency with additional chicken stock if necessary.

3 (10 ounce) cans Rotel Tomatoes
2 (10 ounce) cans cream of mushroom soup
2 (10 ounce) cans cream of chicken soup
2 (16 ounce) jars Cheese Whiz
1 (26 ounce) package fajita-size flour tortillas
1 large white onion
3 green bell peppers
3 celery ribs
1 lb ground beef
salt and pepper

Steps:

  • Brown ground meat with onions, bell peppers, celery, and salt and pepper.
  • Mix cheese with ground meat.
  • Spoon mixture into tortillas and place in foil lined pan.
  • Heat soup and Rotel together; pour on top of tortillas.
  • Bake in oven for 15 to 20 minutes or until top is browned.

1/2 lb. (8 oz.) VELVEETA, cut into 1/2-inch cubes
1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, undrained
4 cups shredded cooked chicken breasts
4 green onions, cut into thin slices
6 flour tortillas (10 inch)

Steps:

  • Combine VELVEETA and RO*TEL in large microwaveable bowl. Microwave on HIGH 5 to 6 min. or until VELVEETA is completely melted and mixture is well blended, stirring every 3 min. Stir in chicken and onions.
  • Heat large heavy nonstick skillet on medium heat. Spoon about 1/2 cup chicken mixture onto half of 1 tortilla; fold in half. Add to skillet; cook 1 min. on each side or until quesadilla is golden brown on both sides. Remove quesadilla from skillet. Repeat with remaining tortillas and filling.
  • Cut into wedges to serve.

10 whole (to 14) Corn Tortillas
1/2 c. Canola Oil

TO ASSEMBLE:
3 c. Grated Sharp Cheddar Cheese
1/2 c. Chopped Black Olives
1 c. Chopped Green Onions
1/2 c. Chopped Cilantro

Steps:

  • Step #1 - The SauceIn a large saucepan over medium heat, add oil and flour and whisk together to make a paste, cooking for one minute. Pour in the red sauce, chicken broth, cilantro, salt and pepper. Bring to a boil. Reduce heat and simmer 30-45 minutes.Step #2 - The MeatBrown the meat with onions in a skillet. Drain off fat. Stir in 2 cans diced green chilies and seasoned salt. Set aside.Step #3 - TortillasHeat canola oil in a small skillet over medium heat. One by one, using tongs, fry tortillas in oil until soft, not crisp - about 30 seconds per side. Remove to a paper-towel lined plate. Repeat until all tortillas have been fried.Step #4 - AssemblyPreheat oven to 350 degrees. Pour ½ cup red sauce in bottom of baking pan. Spread to even out. Dip each tortilla into red sauce, then remove to work surface. Spoon meat, a little grated cheese, a little black olives, and green onions in the center of tortilla. Roll up and place, seam down, in baking pan. Repeat until pan is filled. Pour extra red sauce over enchiladas. Top with remaining cheddar cheese.Bake for 20 minutes or until bubbly.
