EASY COWBOY CASSEROLE
An easy Cowboy Casserole Recipe loaded ground beef, tater tots, and cheese! Perfect for weeknight family dinners and feeding a crowd.

- Preheat the oven to 375° and have ready a greased 9x13" casserole dish.
- Add to ground beef, chili powder, cumin, salt, pepper, and garlic powder to a large sauté pan over medium-high heat. Break apart the meat, blending in the spices and cook for 8-10 minutes, stirring often.
- Use a slotted spoon to transfer the beef to a bowl and set aside. Turn off the heat and carefully, spoon out all but a thin layer of grease and discard. Resume medium-high heat setting, add the diced onion and sauté 3-4 minutes, until softened.
- Add the beef back into the pan, along with crushed tomatoes, beef broth, and corn. Bring to a simmer.
- In a small bowl, mix together cornstarch with 2 tablespoons of water, and stir into the beef mixture. Simmer 3-4 minutes until thickened. Turn off the heat and stir in sour cream and 1 cup of Cheddar cheese.
- Add half of the tater tots to the prepared casserole dish and pour over the beef mixture. Stir to combine. Top with the remaining tater tots and bake for 25 minutes, uncovered.
- Add the Cheddar cheese and bake for 10 minutes more. Allow to cool slightly, serve, and enjoy.

- Preheat oven to 375°. In a large skillet over medium heat, heat oil. Add onions and cook until soft and slightly translucent. Next, add beef. When it is no longer pink, drain some of the fat and push meat and onions to outer edge of skillet. Add, garlic, chili powder and cumin. Stir and cook until garlic is fragrant, about 2 minutes.
- Add corn, tomatoes, sour cream and 1 cup cheese. Cook, stirring regularly, until cheese is melted and sour cream is incorporated. Season with salt and pepper.
- Pour mixture into a 9x13 baking dish. Top with tater tots and sprinkle with remaining cheese. Bake 20-25 minutes, or until cheese is melted and tater tots are golden. Garnish with parsley and serve.

- Preheat oven to 350.
- In a large skillet, cook slices of bacon until crispy. Remove cooked bacon from pan, drain excess grease on paper towels and cool before crumbling. Set crumbled bacon aside.
- In the same pan with the bacon grease, add chopped onion, tiny diced potatoes, and chopped up green and red peppers. Heat all together for about 5 minutes on medium heat until onion is tender.
- Add water and cover pan.
- Heat vegetable mixture for 10-12 minutes, stirring occasionally until potatoes are soft and tender.
- Remove from heat and add drained black beans, green onion, cooked bacon and all of the spices. Mix well.
- In a separate mixing bowl, combine eggs and half and half. Whisk together well.
- Fold in half of each of the shredded cheese and pour entire mixture over the vegetables in the skillet.
- Use a spatula to evenly distribute the eggs and sprinkle top with remaining shredded cheese.
- Bake cowboy breakfast casserole for 30 minutes or until center is set.
- Let casserole stand for 10 minutes before serving.

- Cook bacon in a large skillet or Dutch oven over medium heat until evenly browned. Drain, and cut into bite size pieces. Set aside. Add hamburger and onion to the skillet, and cook until no longer pink, and the onion is tender. Drain.
- Stir bacon, baked beans and barbeque sauce into the ground beef, and bring to a boil. Reduce heat to medium low, and place biscuits in a single layer over the top of the mixture.
