A group of us in a foods class developed this recipe for the North Dakota's annual Beef Bash. We won the contest, and now my family requests this dip for all our special gatherings! -Jessica Klym, Killdeer, North Dakota

Steps:
- In a large skillet, cook the beef, 3 tablespoons onion, 2 tablespoons red pepper and 1 tablespoon green pepper over medium heat until meat is no longer pink; drain. Stir in the soup, salsa, 3 tablespoons ripe olives, 3 tablespoons pimiento-stuffed olives, chiles, jalapeno, oregano and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. , Transfer to a serving dish. Top with the cheese, sour cream and parsley; sprinkle with the remaining onion, peppers and olives. Serve with tortilla chips.

BEST EVER COWBOY BAKED BEANS
Cowboy Beans are a great side dish or main course...it makes the perfect dish for potlucks, cookouts, camping trips, or parties. This delicious recipe is made with a variety of beans, ground beef, and delicious bacon. Cooked over a grill in a skillet adds even more flavor, but isn't required.

Steps:
- In a large cast iron skillet, fry bacon until crisp. Drain and crumble.
- In the same cast iron skillet, cook the ground beef and onions until the meat is no longer pink, drain off excess liquid.
- Drain off all the beans except for one can of pork and beans, Combine the beans, cooked beef, bacon, and onions and remaining ingredients.
- Cook on grill until hot and beans are tender. Optional: Cook in oven on 350 until beans are cooked well if grill not available.

- Cook steak strips in large deep nonstick skillet or Dutch oven on medium-high heat 3 min. or just until no longer pink in centers. Transfer to plate.
- Add bacon to skillet; cook on medium heat 1 min. Stir in onions and peppers; cook 6 min. or until bacon is done and vegetables are crisp-tender. Add beans and barbecue sauce; mix well. Simmer on medium-low heat 5 min., stirring occasionally.

- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add onion and bell pepper and cook until onion is softened and translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute.
- Add in salsa, Greek seasoning, pepper, and salt. Cook and stir until well combined, 2 to 3 minutes. Stir in beans. Bring to a boil, reduce heat, and simmer to desired thickness, about 20 minutes. Add water if sauce becomes too thick.

SKILLET COWBOY RICE CASSEROLE
Steps:
- In a large skillet cook the onion and peppers in a few drizzles of olive oil. Season lightly with salt and black pepper.
- Cook for 3 minutes over medium high until beginning to brown then add the garlic. Cook for 1 minute or until fragrant.
- Add th ground beef and chorizo. Continue to cook until no pink remains in the meats. Drain any excess fat from the pan.
- Increase the temperature to high. Add the beef broth, rice, pintos, Rotel tomatoes, corn, Sazon, chili powder, cumin, garlic salt and lemon pepper. Bring to a boil stirring until combined.
- Cover and lower the heat to low. Simmer for 20-25 minutes until the rice is tender and most of the liquid is absorbed.
- Uncover and mix in the cilantro. Top with cheese. Remove from the heat and cover allowing the cheese to melt or melt under the broiler in the oven.
- Serve immediately.

COWBOY BEANS AND SAUSAGE SKILLET
I was wanting my baked bean recipe which is posted here and I didn't have any bacon, but I did have some leftover sausage. This is the result. If you like, you can finish this on the stovetop, just cover and turn heat to medium low and simmer for the same length of time as baking. Submitted to "Zaar" on August 1st, 2006.

HOMESTEAD COWBOY BEANS
I have an enormous family and all of the men go trail riding several times a year and these beans are one of the things they look forward to. My aunts and I put together their favorite combination several years ago, and have it ready at their camp, and they are some happy cowboys! You can mix different beans to your liking (lima, kidney, etc.), but the boys in our family like this mixture the best.

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 12 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.
